URL: https://github.com/apache/paimon/pull/10520
### Purpose
Rollback during commit conflict recovery needs the writer's table UUID and
commitUser so a catalog can identify the lock owner while checking
fromSnapshot. Replace Catalog and RESTApi rollbackTo with the five-argument
API, extend RollbackTableRequest, and forward the writer context through
DelegateCatalog and CatalogEnvironment.
Ordinary rollback keeps its original table identifier and omits the optional
lock fields. The previous Java rollback overloads and DTO constructor are
removed, and repository implementations and callers are migrated. This is the
rollback API prerequisite for #10491.
### Tests
JDK 8: 70 targeted tests passed, including owner/UUID forwarding for
snapshot and tag rollback, runtime branch routing, empty catalog contexts,
ordinary REST rollback, compaction conflict recovery, and the existing unlocked
commit failure path. Checkstyle, Spotless, enforcer, and RAT checks passed
without fast-build.
