That makes more sense.
You are probably using a font that doesn't have the Greek letters,
or you are using the wrong encoding.
You need to construct your font like this:
BaseFont bf = BaseFont.createFont("c:/windows/fonts/arial.ttf",
"Cp1253", BaseFont.EMBEDDED);
font = new Font(bf, 12);
Cp1253 is the Codepage for Greek.
