I got a contribution from Antonio Iacono (http://opensignature.sourceforge.net/english.php) about certified PDFs and it's available in the CVS. The create a certified document just call PdfSignatureAppearance.setCertified(true) and sign the PDF as usual. The created certified PDF doesn't allow any changes.
