to summerize the things a bit: iText shows "0" or wrong Resolution for some Images. Other Tools like ImageMagicks' identify -verbose, Acrobat, WinExplorer, ExifTool show all the same Resolution (The Examples delivered show all 240dpi (x and y)). Images where iText shows the correct solution don't have a EFIX:yresolution, EFIX:xresolution tag. That could be reproduced by deleting this Tags from images. (i used "Opanda PowerExif to "Remove Exif")
