In screen shot 1 and 3 (counting from the top) some characters are missing.
Why? Because they are not present in the font that is defined for the 
fields.

In your case: the special characters with the umlauts aren't present in 
Helvetica;
they are only present in the replacing font (probably Arial).
That's why they only appear when you click the field.

Depending on your requirement, you need to use one of the strategies 
explained in
section 8.3.3 (the result of these different strategies are shown in 
screen shots 2, 4 and 5).
