On the iText  http://itextpdf.sourceforge.net/howtosign.html How to sign a
PDF using iText and iTextSharp  there are numerous examples in which the
PdfPKCS7 class is used to externally build a signature container. Let these
samples guide you. Other samples use BouncyCastle classes to build a
signature container which also might be ok for you.

I don't have any samples of my own as I use yet other proprietary classes
for signature container creation. Maybe other people on the list do.
