The page metadata are stored in a stream referenced from the page dictionary
in question in its /Metadata entry. Thus:
PdfReader reader = new PdfReader(...);
PdfDictionary pageDict = reader.getPageNRelease(1);
PRStream stream = (PRStream) pageDict.getAsStream(PdfName.METADATA);
byte[] xmpBytes= PdfReader.getStreamBytes(stream);
reader.close();
