Hi Charles, if you don't want wait for a forthcoming version of iText you can have PDF signatures created immediately with our seĆrius signing server. You can download at https://sourceforge.net/project/showfiles.php?group_id=179267 .
Timestamp isn't included yet, but may be added easily ...
