iText doesn't convert from Word to PDF, so that won't help you.  

The Adobe Designer application in your Acrobat package can convert Word->PDF 
with form fields intact, however.

I have several user made forms that have user fields, specifically merge
fields in MS word.  These fields coincide with my system, which will
populate the fields from a database.  If I read the .doc file to convert to
.pdf will it retain the merge fields or convert it to a normal string?

I would like to go from .doc (with merge fields) to a .pdf (with merge
fields).

I do have adobe acrobat but would like to automate as much as I can.
