not about the Great American-Jewish Songbook, but re: Hanuka tunes, I too 
find most of the traditionals musically tedious.  so one thing we've done 
with Metropolitan Klezmer is take "Oy Hanuka" (Oh, Hanuka) and liven up the 
melody quite naturally, I think, by putting it into odd meter.  the 
instrumentation lends itself to a 7/8 feel too.  this works instrumentally; 
it can work with vocals, too.
