Anne,
When you get the message to convert you need to say yes as the 7.5 file was 
created with an earlier version of it so you need to have it convert it to it’s 
7.5 version

I have 8 in C:  I converted 2 files that I work on often to 8 in C:

and left the rest in the 7.5 data file on S:

      I have many family files in 7.5
      I seem to have no option to open a family file in 7.5.

      If you don't opt to convert the file to Legacy 8 is there no alternative.
