There is no misprint in the manual. The way you used \set is also possible, but because the line in question appears after the closing bracket on the line before LilyPond does not include it in the variable you named (organPart). If you enclose the entire variable in curly brackets (which will make it into a single music expression) then what you have written should work. (I can't say for sure because the code you pasted can't be compiled without the bits left out - posting a minimal working example would help make sure.)
