Maybe the issue is that more then the one file you found to change the eth name?

could you post again the output from:
cat /etc/network/interfaces

  we are using Ubuntu 12.04 ltsp server.   We use only use it for running 
desktops . [ we do not need educational software ].   Most pc's booted fine, 
some needed one adjustment to /var/lib/tftpboot/ltsp/i386/lts.conf [ to correct 
video issues]
[d0:27:88:31:03:d4]
  X_MODE_0 = 1440x900

to install:
get alternate precise 12.04 install cd.
press F4 at install prompt
choose ltsp server.
