It work, I added "utf8" to the options of the mount command in the file
   /opt/ltsp/i386/usr/sbin/ltspfs_mount

   mount -t ${TYPE} -o ${OPTIONS},utf8 ${DEV} ${MOUNTPOINT}

Don't know if there is a better way?

You'll probably want to modify the ltspfs_mount and ltspfs_umount
scripts.
