Wow, that's creative! It did not work for me. I think the difference is
that with knitr, it is the knitr script that is called before LaTeX is
called. So I get an error from knitr:

  Error: Failed to parse the inline R code: mean(x\foo draws) (Reason: 
<text>:1:7: unexpected '\\'
  1: mean(x\
            ^)

Perhaps I need to modify the chain, and inject a script before knitr is
called that can do something similar to your approach.
