Alright, I finally figured it out.
Here, for what it is worth, is a reverse check for SMTP

command_name check_reverse_smtp
command_line $USER1$/negate
"/usr/lib/nagios/plugins/check_smtp -H $HOSTADDRESS$"
}
define service{
use local-service
host_name mail.yourDomain.com
service_description SMTP_reverse_check
check_command check_reverse_smtp
}
Of course, it goes without saying, but your mileage may vary according
to how your cfg files are laid out.
