Hello Matt, I agree, trying to bite off too much is difficult in an OSS project -- we just don't have the capacity to stay focus on it (full time).
As a result, I am using a agile approach to keep the cycle short and to generate faster turnarounds into the hands of the users. Perhaps in the future, when there are more active members, we can look into developing more formal planning process and organization. (I am not a PM by profession, so I am sure there are more experienced people who can do a better job than me.)
