adding \blank to before and after the color block does the trick:

     [before={\blank\startcolor[red]},
     after={\stopcolor\blank}]

It my the first idea that came to mind.
just use the color key:

\defineenumeration
  [test]
  [text={Test:},
   headstyle=bold,
   number=no,
   color=red,
   style=normal,
   title=no]
