If the customer has SQL Enterprise you could use Transparent Data 
Encryption<http://msdn.microsoft.com/en-us/library/bb934049.aspx> (TDE) which 
protects the database itself.  Another option is AD RMS, while it does not 
encrypt documents in the document library itself, if the documents are 
downloaded by an unauthorized account the documents would  remain protected.

There may be 3rd party add-ons which encrypt the content in the Document 
Library itself but then the content would not be searchable by anyone either.

Have you used document encryption for libraries within SP 2007.3
Just met a client who wants documents in sub-site to be extra secure.
They are using SP 2007, Enterprise Edition

Any procs/cons/ suggestions etc will be welcome
