Hi Mark,

I've used ExifUtils for this. It certainly allows you to set camera
make and model, focal length, exposure and ISO and much more.
www.hugsan.com/EXIFutils/
(for windows linux or osx)
Mind you, it's a command line utility so may not be ideal for some.
