Pudding Poke Cake 1 package two layer size cake mix (yellow or chocolate) 2 packages (4 serving size each) jello instant pudding (use chocolate pudding with yellow cake or vanilla pudding with chocolate cake) 1 cup confectioner's sugar 4 cups cold milk
Prepare cake mix as directed on package, baking in a 13x9-inch pan. Remove from oven, immediately poke holes down through cake with handle of a wooden spoon. Holes should be at 1-inch intervals. AFTER THE HOLES ARE MADE: Combine pudding with confectioner's sugar in a large bowl, gradually stir in milk. Beat at low speed of electric mixer for no more than 1 minute (Do not overbeat) Quickly, before pudding thickens, pour about 1/2 of the thin mixture evenly over warm cake and into holes to make stripes. Allow remaining pudding mixture to thicken slightly; spoon over top of cake, swirling to "frost" the cake. Chill at least 1 hour.
