Banana Carrying Cake with Orange Cream Cheese Icing Keys: Picnics Desserts Tropical Fruits Citrus Yield: 8 Servings Ingredients: 1 cup Mashed ripe bananas (about 2) 3/4 cup Buttermilk or plain yogurt 1/3 cup Packed brown sugar 1/3 cup Melted butter 3 x Eggs, beaten 1 tbl Grated orange rind 2 cup All-purpose flour 1 tsp Each baking powder and baking soda 1/4 tsp Salt ----------------- ICING ---------------- 4 oz Cream cheese, softened 2 tbl Butter, softened 1 cup Icing sugar,sifted 2 tbl Orange juice concentrate Method: Grease 8 inch square cake pan and set aside. In large bowl, beat together bananas, buttermilk, sugar, butter, eggs and orange rind until blended. Combine flour, baking powder, baking soda and salt. Add to banana mixture; mix just until combined. Spread in prepared pan. Bake in 350 F oven for 40 to 45 minutes or until cake tester inserted in center comes out clean. Let cool in pan on rack. ICING: In bowl, beat together cream cheese and butter until soft; gradually beat in icing sugar and orange juice concentrate. Spread over cake. (Make ahead: Pack in airtight container and refrigerate for up to 1 day.) Makes 8 servings.
