Caramel-Apple Frensh Toast

4 slices challah bread 1-1/2 inches thick
3 eggs
1/2 c. milk
2 tbsp sugar
1/4 tsp salt
1/4 c. butter
3 Golden Delicious apples, peeled and cut into eight wedges each
1/2 c. brown sugar
1/4 c. cream
1/8 tsp pumpkin pie spice

        Heat oven to dg200. With biscuit cutter, cut 3- to 4-inch circles
from each piece of bread, discard remainder. Beat eggs with milk,
sugar and salt until combined. Soak bread in mixture 3 to 4 minutes,
turning once.

        Heat 2 tablespoons butter in a large nonstick skillet over medium
heat. Cook bread 2 minutes per side until golden. Add remaining butter
to skillet. Saute apples over medium heat 5-7 minutes until tender.
Add brown sugar, cream and spice. Continue cooking 6-8 minutes until
thickened.

        Arrange French Toast on serving dishes. Top with Caramel Apples.
Serve with vanilla ice cream.

        Makes 4 servings.
