The Recipe 
How about a super sandwich recipe for the Spring and Summer too? Oh, did
I tell you I love asparagus? Let's do it! 
Grilled Asparagus and Mushroom Cheese Melt 
4 slices farm bread
2 ounces smooth Dijon mustard
1 lb. grilled asparagus
2 grilled portabella mushrooms
4 ounces cheddar cheese, sliced
olive oil
balsamic vinegar
salt and pepper 
Clean the portabella mushrooms with a towel and rub with olive oil and
baslmic vinegar. Season lightly with either my dry rub seasoning, or
just salt and pepper and grill. Keep an eye on them and remove them off
the direct heat when close to done done. 
After trimming the asparagus where you want them, drizzle and toss them
in olive oil. Season with salt and pepper. They won't take long so keep
turning them and remove when done. 
Spread each slice of bread to the edge with a little over a half ounce
of the mustard. 
Top one slice with the grilled asparagus, grilled mushroom, and sliced
cheddar. Close the sandwich and lightly brush the outside of each slice
with olive oil. 
Place the sandwich in a hot skillet and grill each side for 2 to 4
minutes, or until the bread is golden brown—just long enough to grill
the bread, but not melt the cheese. Cut in half diagonally and serve.
