In %post% I install any of a number of homegrown/non-RH RPM's in my production builds. You could build an RPM to put stuff in /etc/yum/repos.d and install that during %post%. That way you have version control and can deterministically update the file.

I've not managed a GUI install, and I didn't see anything about repos
when I did atext install on my first test machine.
The next test machine was a kickstart install, and I've not seen any way
of specifying repos there, except by a home-grown script in %post.
