Hey Guys, I was able to solve it by using
Form.Element.setValue("greeting", transport.responseText);

I actually discovered this at
http://jehiah.cz/archive/form-element-setvaluewhich had an add on
called
prototypeUtils.js <http://jehiah.com/download/prototypeUtils.js>
