[CAKE-RECIPE] Hi and Help please...

Hi, I'm new and already have my 1st question. I need someone to dig way 
back (1950-1960s) and tell me what type of frosting was typically used 
on spice cake. I have this memory of my mom making what I remember as 
spice cake cupcakes with a tan frosting (carmel or maple)??? It could 
have even been ready-made, not sure. I would deeply appretiate your 
help with this one, Many thanks, Donna

   1 (3 oz) pkg cream cheese
   1 1/2 cups nuts (optional)
   1/2 box powdered sugar
   1 tsp. vanilla 
 
   1. Cream together sugar, shortening and eggs.
 Stir salt, soda, nutmeg, cloves, cinnamon and flour
 together in a separate bowl. 
 
   2. Add beer, bananas, dates, nuts and vanilla
 to creamed mixture. Add dry ingredients last and mix
 well. 
 
   3. Pour batter into a greased and floured cake
 pan. Bake at 350 degrees for about 45 minutes. Test
 to be sure it's done. Depending on the type of beer
 you use, it may need to bake up to 1 hour. 
 
   4. Mix all ingredients together for the icing.
 Spread over the cake after it has cooled.

[CAKE-RECIPE] Fudge Frosting

Here's my favorite chocolate frosting recipe.

Fudge Frosting

3/4 cup unsweetened cocoa
1 box confectioners sugar
1 tsp. vanilla
1/2 cup margarine or butter
1/2 cup evaporated milk (I used less.)

1. Mix cocoa and sugar.
2. Cream margarine and vanilla.
3. Add part of sugar mixture and part of milk.
4. Beat.
5. Add the remaining sugar and milk and beat until spreading 
consistency. Sometimes additional milk may be needed.

[CAKE-RECIPE] Cardamom Coffee Cakes

Cardamom Coffee Cakes
 
1 1/2 cups milk
3/4 cup sugar
1/2 cup butter
3 each egg yolks
 
Topping:
6 tablespoons sugar
1 package cake yeast
6 1/4 cups all-purpose flour
1/4 teaspoon salt
1 teaspoon cardamom
2 tablespoons milk
 
Scald milk and cool to lukewarm. Crumble yeast into
bowl, add 1 Tsp sugar and lukewarm milk. Beat in 3
cups flour, beat until smooth. Cover well and let rise
until light and double in bulk, 1 to 1 1/2 hours. 
Add soft butter, remaining sugar, salt, egg yolks,
cardamom and 3 cups flour. Mix thoroughly. Place
remaining 1/4 cup flour on board or pastry cloth for
kneading. 
Turn out dough and knead until smooth and elastic.
Place in greased bowl. Cover well. Set aside to rise
until double in bulk, 1 to 1 to 1/2 hours. 
Cut risen dough in half for two coffee cakes (braids).
Cut each half into 3 pieces. Roll each piece into a
roll 16 inches long. 
Pinch 3 rolls together at one end, braid and pinch
other ends together. 
Place braid on cookie sheet. Make second braid and
place on cookie sheet. 
Let braids rise until double in bulk, about 45
minutes. For topping brush each braid with 1 tbsp.
milk and sprinkle with 3 tbsps. sugar.
Bake in moderate oven 375 degrees for 25 to 30
minutes. 
Makes 2 coffee cakes.
