18 MINUTE CHOCOLATE CAKE

2   cFLOUR
1 3/4   cSUGAR
1/4   ts   SALT
4   tb   COCOA
1   cCOLD WATER
1/2   cVEGETABLE OIL
1/2   cBUTTER
1/2   cBUTTERMILK
2   xEGGS
1   tBAKING SODA

COMBINE FLOUR, SUGAR, SALT AND COCOA IN A LARGE BOWL. MIX IN A SAUCE PAN, 
WATER, OIL AND BUTTER. BRING TO A BOIL. POUR INTO DRY MIX AND BEAT UNTIL 
SMOOTH. ADD BUTTERMILK, EGGS AND SODA. BEAT; BATTER WILL BE THIN. POUR INTO 
WELL GREASED JEELY ROLL PAN. COOL ON A WIRE RACK; WHILE STILL A LITTLE WARM, 
FROST WITH ROCKY ROAD FROSTING

NEW YORK CHEESECAKE - Diabetic 

Christmas Dessert

1-1/2 cups vanilla wafer crumbs 
4 tablespoons margarine, melted 
1 teaspoon sweetener equal to 1 teaspoon sugar 
2 (8-ounce) packages reduced-fat cream cheese, softened 
1 (8-ounce) package fat-free cream cheese, softened 
5-1/2 teaspoons sweetener to equal 5-1/2 teaspoons sugar 
2 eggs 
2 egg whites 
2 tablespoons cornstarch 
1 cup reduced-fat sour cream 
1 teaspoon vanilla 
1 pint strawberries, sliced (optional)  

Strawberry Sauce (recipe follows)
 
Mix vanilla wafer crumbs, margarine and 1 teaspoon sweetener in the bottom of a 
9-inch spring-form pan. Reserve 1 tablespoon of the crumb mixture. Pat the 
remaining mixture evenly on the bottom and 1/2 inch up the side of the pan. 
Bake in a preheated 350° F oven until crust is lightly browned, about 8 
minutes. Cool on a wire rack. 
 
Beat cream cheeses and 5 ½ teaspoons sweetener in a large bowl until fluffy. 
Beat in eggs, egg whites and cornstarch. Mix in sour cream and vanilla until 
well blended. Pour mixture into crust. 
 
Place cheesecake in a roasting pan on oven rack, add 1 inch hot water to the 
roasting pan. Bake in a preheated 300° F oven just until set in the center, 45 
to 60 minutes. Remove cheesecake from the roasting pan, sprinkle with reserved 
crumbs and return to oven. Turn oven off and let cheesecake cool 3 hours in the 
oven with the door ajar. Refrigerate 8 hours or overnight. 
 
Remove side of pan, place cheesecake on a serving plate. Serve with 
strawberries and strawberry sauce. Serves 16  

STRAWBERRY SAUCE FOR CHEESECAKES 

1 (16-ounce) package frozen unsweetened strawberries, thawed 
1 tablespoon lemon juice 
1- 3/4 teaspoons sweetener to equal 1- 3/4 teaspoon  
 
Process strawberries in a food processor or blender until smooth. Stir in lemon 
juice and sweetener. Refrigerate until serving time. Yield 2 cups.

Sugar-Free Chocolate Frosting 

1 envelope Dream whip 
1/2 teaspoon vanilla extract
1/2 cup milk 
1 (2 ounce) package sugar-free chocolate pudding 

Blend together skim milk, vanilla extract and Dream Whip (or sugar-free whipped 
topping mix). Beat until stiff. Add pudding mix and continue to beat until 
light and fluffy. Add more milk if too thick.

[CAKE-RECIPE] Mrs. Harvey's White Fruit Cake

Mrs. Harvey's White Fruit Cake  

1 pound pecans -- shelled and chopped
1 pound candied cherries
1 pound candied pineapple
1 3/4 cups flour, all purpose
1/2 pound butter
1 cup sugar
5 eggs
1/2 teaspoon baking powder
2 ounces vanilla extract
2 ounces lemon extract 

Chop nuts and fruits into medium sized pieces, dredge with 1/4 cup of the 
flour. Do not use food processor, it will make fruit gummy. 

Cream butter and sugar together till light and fluffy. Add well beaten eggs and 
blend well. 

Sift remaining flour and baking powder together; fold into egg and butter 
mixture. 

Mix in vanilla and lemon extracts, then blend in fruit and nuts. 

Grease a 10 tube pan and line with parchment. Grease again. 

Pour batter into prepared pan, back at 250 for 2 1/2 to 3 hours. Start cake in 
cold oven. Cool in pan on baking rack.

Oh, wow, this is a dream!  You do not know how many people in the past  year 
have asked me if I have a recipe for sugar-free icing!  Can you use  any 
flavor of sugar-free pudding?  And is that Instant, or the cooked  kind?
