Chicken with Tomato, Orange and Rosemary Couscous 
   
  Chicken is served over a tasty couscous with zucchini and tomato for
a quick and satisfying supper.
Original recipe yield: 4 servings.
Prep Time:10 Minutes Cook Time:20 Minutes Ready In:30 Minutes

INGREDIENTS:
2 tablespoons olive oil
4 boneless, skinless chicken breast halves
1/4 cup dry white wine, such as Sauvignon Blanc or water
1 cup zucchini, cut into 1/2 inch slices
1 (14.5 ounce) can chopped tomatoes, drained
1 teaspoon fresh or dried rosemary
1 (5.8 ounce) package NEAR EAST® Roasted Garlic and Olive Oil
Couscous mix
3/4 cup peeled, seeded and chopped orange

DIRECTIONS:
Season chicken to taste with salt and pepper. In a large skillet,
heat olive oil over medium heat. Add chicken; cook 5 to 6 minutes on
each side, or until no longer pink inside.
Meanwhile, in large saucepan, combine wine, 1 cup water, zucchini,
tomatoes and rosemary, Bring to a boil over high heat.
Stir in couscous and contents of Spice Sack. Remove from heat. Cover;
let stand 5 minutes.
Fluff lightly with a fork. Stir in chopped orange and serve with
chicken.

[ Chicken Recipes ] Feta Cheese and Bacon Stuffed Breasts

Feta Cheese and Bacon Stuffed Breasts
  This is a very decadent dish. The chicken breasts are stuffed with bacon and 
feta cheese. A cucumber and tomato salad makes a great accompaniment. 
 4 servings.
  INGREDIENTS:
8 tablespoons olive oil 
2 teaspoons lemon juice 
4 cloves crushed garlic 
1 tablespoon dried oregano 
salt and pepper to taste 
4 skinless, boneless chicken breasts 
4 slices feta cheese 
4 slices bacon, fried and drained 
  DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). 
In a small bowl combine the oil, lemon juice, garlic, oregano, salt and pepper. 
Mix together. Place chicken in a 9x13 inch baking dish and pour oil mixture 
over chicken. 
Stuff each chicken breast with 1 slice feta cheese and 1 slice bacon. Secure 
open sides with toothpicks. 
Bake uncovered at 350 degrees F (175 degrees C) for 30 to 35 minutes.

Cheesy Bacon Breasts

Chicken breasts baked with barbecue sauce, mustard, bacon and
cheese. Hot, meaty, cheesy chicken.
Original recipe yield: 4 servings.
Prep Time:30 MinutesCook Time:30 Minutes Ready In:1 Hour

INGREDIENTS:
4 skinless, boneless chicken breasts
1 tablespoon vegetable oil
1/4 cup barbecue sauce
2 tablespoons prepared mustard
4 slices bacon, cooked until nearly crisp
2 cups shredded Cheddar cheese

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
Melt butter or margarine in a large skillet over medium high heat.
Add chicken breasts and saute until just cooked; don't brown. Place
chicken on a lined cookie sheet.
Spread a little barbecue sauce, then a little mustard, evenly on top
of each breast. Arrange a bacon slice on each breast, then cover all
with cheese.
Bake at 350 degrees F (175 degrees C) for 30 minutes or until chicken
is cooked through and juices run clear.

Cheesy Breaded Chicken

This is a great main dish to have at dinner. It is quick and easy
and children will love it!
Original recipe yield: 4 servings.

INGREDIENTS:
1 egg
1 tablespoon milk
1 cup seasoned dry bread crumbs
1 tablespoon Italian seasoning
4 skinless, boneless chicken breast halves
1 cup shredded mozzarella cheese

DIRECTIONS:
Preheat oven to 375 degrees F (190 degrees C).
In a small bowl, beat egg with milk. In a shallow plate or bowl, mix
bread crumbs with Italian seasonings. Dip each piece of chicken into
the egg/milk mixture, then into the bread crumb mixture to coat
thoroughly.
Place coated chicken in a 9x13 inch baking dish. Bake in the
preheated oven for about 30 minutes, depending on how thick the
chicken breasts are (bake until chicken is done and juices run
clear). In the last 3 to 4 minutes of baking, sprinkle the top of the
chicken pieces with cheese. Remove from oven and serve!
