I had to collect information here and there (mostly from Miklos Vajna),
use personal experience on the subject from big corporations I worked
for, build test cases and by trial and error, discover what the current
implementation does. I wrote a help page with my findings here

The page will be available at 5.3 release, even if 5.2 carries the feature.

I also missed the button to remove the classification while testing but
it also means that if such button exist, users can tamper the
classification too easily.

Apparently yes, but only "Intellectual property" category has a visual
impact. The other categories insert its specific fields in the
properties and no visual indication. As you will read on the help page,
the current implementation is taken from the aerospace and defense industry.

This is - I believe - an solution specific to who contracted the
implementation. You can remove it if necessary.
