The first step when troubleshooting is to determine where the problem is
located.

Your Identity
Your User's folder
Your base OS files
Your Office install

1) you can eliminate your Identity by creating a new Identity in Entourage
and see if you experience the same problem.

2) if a new Identity still exhibits the same issues, then create a new User
in System Preferences and test Entourage there.

If the problem is in your User's account, then log out/in with Shift key
down to disable any startup items. Test. If the problem still exists, it's
most likely a preference file that's corrupt. See this page for help:

3) If the problems still exist in the new User, it's a problem with your
base OS files or your Office install. If running the Apple combo does not
fix, then you might need to do an "Archive & Install".

If the problem exists in your User's folder, when you test in a new User all
preferences will be new. What I would do is sort by date modified your
User's Library Preferences folder. Next modify this setting in Entourage and
see what preference file pops to the top. Then in your regular User's folder
try deleting that file.

FYI....

Entourage stores preferences in .plist file, a folder in preferences called
Microsoft and in the database. This is why sometimes rebuilding is the only
way to fix a problem. I don't advise rebuilding unless necessary. By testing
in a new Identity you can verify that if it is your database then rebuild
when you know it is necessary. Always make a copy first in the Finder before
rebuilding. If the rebuild goes bad during the rebuild copy you can loose
your original. How to rebuild:
