Hum, maybe I should trim down the signature to one line: my workplace
organizational unit and its hierarchy.  I think this is useful as I may
change organizational unit in the future, and I want my emails to inform
which organizational unit I belonged to at the time.

If the organizational unit is a single line, then Outlook won't mangle
it.

Hi.  My workplace sadly uses Microsoft technologies for collaboration
and MS Outlook as the default email client.  I instead use Evolution on
a GNU/Linux virtual machine (VM).  I used to compose emails in plain
text, but then my boss told me to use HTML because plain text emails
look bad on MS Outlook.

MS Outlook removes most newlines from plain text emails, sparing only
runs of two or more consecutive newlines.  That's the Auto Remove Line
Breaks (mis)feature, which is enabled by default.

For most text paragraphs this looks acceptable, but some kinds of text,
such as the mail signature, look pretty bad.  Is there anything I can do
from Evolution side to attenuate the problem?  For example, is it
possible to configure Evolution to use HTML for the signature only,
while sending plain text for all else?  Any other workaround?

The signature forms part of the text, it's not a different section of
the email, so it follows the same format as the email (or MIME part). 
I don't think Outlook even acknowledges the existence of the '--'
sig separator.

If your work requires you to use HTML emails, then I suspect it's a
battle not worth fighting. However when you use HTML, Evolution
surrounds the sig with   to try and maintain it's integrity
and that seems to work OK for me.  Perhaps you just need to adjust your
sig so that it looks OK after Outlook has done things to it.
