Well, if the only thing you want is to plot the flight envelope then it would be overkill to use a full featured flightsimulator. So it might be better to only run the FDM and feed it with the control data you want (like speed settings and surface positions). Then you could let the FDM generate a log file containing just the properties you want to plot.
