If the point of the thesis isn't to extract this data from the source 
repository itself, then I'd rely on e.g. https://www.ohloh.net/p/gimp

Especially https://www.ohloh.net/p/gimp/contributors

I would suggest you check with your staff adviser to find out what they want 
to see. A good start would be to refer to the program as GIMP. :-)  A link 
to GIMP's website would be a good idea along with the number of the version 
of GIMP you are using.

Depends on your subject area - e.g. MLA has guidelines to referring to
Web sites in references, and you tend to see something like,

[GIMP12] GIMP image editor http://www.gimp.org/ accessed July 2012

You'd have an awfully long reference if you named all the contributors.
I'd suggest something like, All who contributed towards the GIMP libre
