i remember being able to add interceptors for classes annotated with a given annotation. in your case, a wildcard representing any class annotated with @Entity. We are currently having the exact same issue with JBoss AS 4.2.1 and JBoss AS 4.2.2. Having to define each and every EntityBean in our entire development and production environment in an AOP XML file is out of the question. This is a showstopper for us.
