you should just make sure that the hibernate.cfg.xml is in your classpath, eg. 
put it in a separate folder (like '/config') inside your project and pick this 
up in the classpath definition:
 path id=libraries
  | !-- path to the config files --
  | pathelement location=config/
  | !-- path to other libs --
  | fileset dir=${librarydir}
  | ...
  | /fileset
  |   /path
  |
