I feel blessed when I smell the enticing aroma of bratwurst sputtering on a charcoal grill. The burst of coffee ground flavor from a newly opened can. The scent of pine boughs freshly cut from the nearby woods. I feel blessed when I taste a warm mug of cocoa beside a crackling pine scented fire. A slice of icy cold watermelon on a muggy summer day. The buttery kernels of a freshly grilled ear of corn-on-the-cob. I feel blessed when I feel the contented weight of a sleeping child's head on my shoulder. [RecipesAndMore] Appetizer -- Stuffed Grape Leaves
Appetizer -- Stuffed Grape Leaves 1 cup chopped fennel 1 cup onion, chopped 2 tomatoes, seeded and chopped One half cup uncooked rice 2 Tbsp. olive oil One half cup fresh mint, chopped One third cup lemon juice One half tsp. red pepper One half tsp. salt 1 large jar grape leaves 3 cups chicken broth One half cup lemon juice One quarter cup olive oil Lemon slices for garnish Place fennel and onion in a food processor and process until minced. Combine with tomatoes, rice, 2 Tbsp. olive oil, mint, one third cup lemon juice, red pepper and salt and mix well. Drain liquid from grape leaves and rinse to remove some of the saltiness. Snip stems of grape leaves with scissors and lay leaves out flat. Place about 1 Tbsp. of filling on each grape leaf and roll from stem to end tip. You may need to secure with a toothpick. Place stuffed grape leaves on the bottom of a lightly greased saucepan, add chicken broth, one half cup lemon juice and one quarter cup olive oil and bring to a boil. Reduce heat and simmer for 30 minutes covered. Drain liquid and garnish with lemon slices and chill before serving. The Skinny: Use fat free chicken broth. [RecipesAndMore] The Pinewood Derby
The Pinewood Derby My son Gilbert was eight years old and had been in Cub Scouts only a short time. During one of his meetings he was handed a sheet of paper, a block of wood and four tires and told to return home and give it all to his dad. That was not an easy task for Gilbert to do. Dad was not receptive to doing things with his son. But Gilbert tried. Dad read the paper and scoffed at the idea of making a pinewood derby car with his young, eager son. The block of wood remained untouched as the weeks passed. Finally, mom stepped in to see if I could figure this all out. The project began. Having no carpentry skills, I decided it would be best if I simply read the directions and let Gilbert do the work. And he did. I read the measurements aloud, the rules of what we could do and what we couldn't do. Within days his block of wood was turning into a pinewood derby car. A little lopsided, but looking great, at least through the eyes of mom. Gilbert had not seen any of the other kids cars and was feeling pretty proud of his Blue Lightning, the pride that comes with knowing you did something on your own. Then the big night came. With his blue pinewood derby in his hand and pride in his heart we headed to the big race. Once there my little one's pride turned to humility. Gilbert's car was obviously the only car made entirely on his own. All the other cars were a father-son partnership, with cool paint jobs and sleek body styles made for speed. A few of the boys giggled as they looked at Gilbert's, lopsided, wobbly, unattractive vehicle. As the race began, it was done in elimination fashion. You kept racing as long as you were the winner. One by one the cars raced down the finely sanded ramp. Finally it was between Gilbert and the sleekest, fastest looking car there. As the last race was about to begin, my wide-eyed, shy, eight-year-old asked if they could stop the race for a minute, because he wanted to pray. The race stopped. Gilbert hit his knees clutching his funny looking block of wood between his hands. With a wrinkled brow he set to converse with his Father. He prayed in earnest for a very long minute and a half. Then he stood, smile on his face and announced, Okay, I am ready. As the crowd cheered, a boy named Tommy stood with his father as their car sped down the ramp. Gilbert stood with his Father within his heart and watched his block of wood wobble down the ramp with surprisingly great speed and rushed over the finish line a fraction of a second before Tommy's car. Gilbert leaped into the air with a loud Thank you as the crowd roared in approval. The Scout Master came up to Gilbert with microphone in hand and asked the obvious question, So you prayed to win, huh, Gilbert? To which my young son answered, Oh, no sir. That wouldn't be fair to ask God to help you beat someone else. I just asked Him to make it so I don't cry when I lose. Children seem to have a wisdom far beyond us. Gilbert didn't ask God to win the race, he didn't ask God to fix the outcome, Gilbert asked God to give him strength in the outcome. When Gilbert first saw the other cars he didn't cry out to God, No fair, they had a father's help. No, he went to his Father for strength. Perhaps we spend too much of our prayer time asking God to rig the race, to make us number one, or too much time asking God to remove us from the struggle, when we should be seeking God's strength to get through the struggle. [I can do everything through Him who gives me strength. Philippians 4:13] Gilbert's simple prayer spoke volumes to those present that night. He never doubted that God would indeed answer his request. He didn't pray to win, and thus hurt someone else, he prayed that God supply the grace to lose with dignity. Gilbert, by his stopping the race to speak to his Father also showed the crowd that he wasn't there without a dad, but His Father was most definitely there with him. Yes, Gilbert walked away a winner that night, with his Father at his side. A single candle can illuminate an entire room. A true friend lights up an entire lifetime. Pour Jello over and refrigerate until set. Spread Cool Whip over Jello/cake mixture. Line the blueberries in upper left corner to represent stars. Italian Crock-Pot Vegetables 1 tsp olive oil 1 can Great Northern or cannellini beans, drained and rinsed 1 can green beans, drained and rinsed 1 can diced tomatoes, or 1.5 cup fresh tomatoes, diced 1 medium yellow onion, quartered 2 cloves garlic, peeled and quartered 1 tbsp oregano, ground 2 small zucchini, thickly sliced 1 eggplant, peeled, diced 2 stalks of celery 1 dash black pepper Rub olive oil over Crock-Pot sides and bottom to prevent sticking. Add remaining ingredients. By all means, add others, if you like. (Many people enjoy green bell peppers in this dish; I find this recipe an excellent way to hide a turnip or two, or to use up that starting-to-wilt spinach.) Cover and cook on low for 6-9 hours. Taste (carefully) and season further as desired. Scientists believe they have uncovered the link between diabetes and circulatory problems which causes thousands of Britons to need a limb amputation each year. A protein in cells could be responsible for leg ulcers and gangrene in diabetics, which lead to their needing amputation, they said. Experts from the British Heart Foundation (BHF) said the study could pave the way for a new drug to cut down the risks. About 5,000 diabetics a year in the UK - or 100 a week - have a limb amputated. Experts carried out experiments on mice and found that a protein called p75NTR was present in the cells of diabetics but not in the cells of healthy mice. When they stopped the protein working in diabetic cells, they found that circulation to the lower limbs improved. But when the protein was introduced into cells, circulation worsened, suggesting the important role played by the protein. Jeremy Pearson, associate medical director at the British Heart Foundation (BHF), which funded the study, said: The researchers have found that there is an increased expression of this protein in the cells of diabetics. The problem with diabetics is that they get all sorts of circulation problems and can suffer things like gangrene in their toes. Mrs. Field's Frosting 8 Unsweetend chocolate -- squares 2 tablespoons Butter 2 pounds Powdered sugar 1 cup Whipped cream 4 teaspoons Vanilla 6 ounces Milk chocolate chips 1 package Hershey kisses Combine chocolate and butter in small saucepan. Place over low heat until melted. Remove from heat. Combine sugar, cream, and vanilla in medium size bowl. Stir till smooth. Add chocolate and butter. Set bowl in a pan of ice and beat with wooden spoon till frosting is thickened. After frosting bottom layer,add 1 cup of chips. Spread on top of of cake. Add second layer. Frost second layer. A pply kisses as desired over top of cake. Add remaining chips to the sides. Sugar Says 'Try some wicked sugar... [RecipesAndMore] feeling left out
hi do anyone here feel sometimes they are left out of the loop? i go to a church that i have attnded on and off since i was a teenager. i left when i was about 18 to attend college, but i still always came to see them on my vacations. anwya, sicne we moved back to live with my parents, i have been attending here for nearly a year. one would think that one would feel more family like with the church. i don't know how to explain this... we have met a few good folks from the church and we do things from time to time with them if they call and ask if we woudl like to come along for this or that. sometimes, i have asked such and such to take me to the store, and we have a great time. my thing is feeling more excepted with the church. for instance, they have baby showers, weddings showers and never ask if i want to come along. today, they had a 1 month old baby come to the church. i had to make several hints and finally had to just come out and ask if the baby was still around and could i hold him. it is a long story, but first the pastor's wife asked if i had held the baby since he was so small and she figured i would be reminded of philip when he was a baby. anyway, she told the grandma of the baby that she would hold anna-lynn so i could hold the baby. [RecipesAndMore] Macaroni Salad This is soooo good
Macaroni Salad The Salad: 1 pound small pasta shells 2 medium ripe tomatoes, cored and diced 1 cup thinly sliced celery 1/2 cup finely diced green pepper The Dressing: 1 cup mayonnaise 1/4 cup Creole mustard, preferably Zatarain's or spicy brown mustard 4 cloves garlic, minced 1 t. brown sugar 1 t. kosher salt 1 t. black pepper Cook the shell sin large quantity of well salted rapidly boiling water until al dente. Drain and cool down the shell sunder cold running water. Drain again and put them in a large bowl. add the tomatoes, celery and peppers. Make the dressing by mixing up the mayonnaise, mustard, garlic, sugar, salt and pepper. Stir into the pasta until coated and creamy. Taste and fix the seasonings if you need to. Refrigerate or serve pronto. Marinated Mushrooms 1 lb. fresh mushrooms, sliced or quartered 2 T. soy sauce 1 t. pepper 1 clove garlic, crushed, or 1/4 t. garlic powder 2 T. lemon juice 2 T. green onion, chopped 1 t. celery salt 1/4 cup vegetable oil Combine all ingredients. Marinate at least 2 hours. Cook over medium heat. Serve as vegetable or over grilled steaks. Pecan Surprise Bars Serves/Makes: 36 cake mix 2/3 cup cake mix reserved for filling 1/2 cup butter, melted 1 egg 1 cup chopped pecans ***FILLING:* ** 2/3 cup reserved cake mix 1/2 cup brown sugar, packed 1 1/2 cup dark corn syrup 3 eggs Cake: Combine dry cake mix (minus amount reserved for filling) in large mixing bowl with melted butter and egg. Mix until crumbly. Press mixture into generously greased (bottom and sides) 13 x 9 inch baking pan. Bake in a 350 degree F oven for 15 to 20 minutes until light golden brown. Meanwhile, prepare filling. Combine all filling ingredients in large mixing bowl. Beat at medium speed for 1 to 2 minutes. When the cake has baked for 15-20 minutes, remove from oven and pour filling over partially baked crust. Sprinkle with pecans. Return pan to oven. Bake for 30 to 35 minutes longer until filling is set. Cut into bars when cake is almost cool. Chicken Rolls Blend: 1 - 3 ounce cream cheese 2 tablespoons melted butter Add: 1 - 5 ounce can chicken Lawry's seasoned salt 1/8 teaspoon pepper 2 tablespoons milk 2 tablespoons chopped onion Separate one can crescent rolls. Place heaping tablespoon of mixture on each roll. Bring ends up over each other and seal. Brush top of each roll with melted butter. Sprinkle with bread crumbs. Bake on greased cookie sheet at 350 for 20-25 minutes. Funnel Cake 3 cups flour 2 cups milk 1/2 tsp salt 3 eggs 1/4 cup sugar 1 tsp vanilla 1 tbls baking powder frying oil Mix all ingredients well. Pour through a funnel into hot oil in a skillet. Turn once. Remove from oil onto a plate with a paper towel. Place on serving plate and sprinkle with powdered sugar before eating. Makes quite a bit. Broccoli Biscuit Squares 1 pound ground beef 1 can (4 ounces) mushroom stems and pieces, drained 1 small onion, chopped 2 cups biscuit/baking mix 2 cups (8 ounces) shredded cheddar cheese, divided 1/4 cup grated Parmesan cheese 1/2 cup water 3 cups frozen chopped broccoli, thawed and drained 4 eggs 1/2 cup milk 1 teaspoon salt Dash pepper In a large skillet, cook the beef, mushrooms and onion over medium heat until meat is no longer pink; drain. In a large bowl, combine biscuit mix, 1/2 cup cheddar cheese, Parmesan cheese and water until a soft dough forms. Press dough onto the bottom and 1/2 in. up the sides of a greased 13-in. x 9-in. x 2-in. baking dish. Stir remaining cheddar cheese into the beef mixture; spread over dough. Sprinkle with broccoli. In a large bowl, beat eggs, milk, salt and pepper. Pour over meat mixture. Bake, uncovered, at 400° for 25 minutes or until a knife inserted near center comes out clean.
