Fried  Apples

2 1/2 cups apple  juice
4 large golden delicious apples, unpeeled and cut  into wedges
3 tablespoons cornstarch
1 teaspoon cinnamon
1/4 tsp  allspice
4 tablespoons sugar
In a large skillet, combine the apple juice  and sliced apples. Heat on 
medium until apples are fork tender, turning often to  enable even cooking. Be 
careful not to overcook apples. Remove apples from juice  with slotted spoon 
and 
place in large bowl.


In another bowl, combine all dry  ingredients and stir with wire whisk until 
well blended. Pour hot apple juice  into dry mixture. Whisk vigorously until 
lumps are gone. Pour this mixture back  into the skillet and heat on medium 
heat, whisking constantly, until bubbly and  thick.
Remove from heat and pour over apples in bowl. Stir until apples are  evenly 
coated.

  Yummy Chicken

4 boneless, skinless, chicken breasts
1 egg, beaten
6 oz. mozzarella
1 1/2 c. heavy cream
1 tsp. parsley flakes
2/3 c. parmesan cheese
1/2 c. seasoned breadcrumbs
1/4 c. vegetable oil

1. Preheat oven to 350 degrees Fahrenheit. 
2. Dip chicken in egg. Then dip chicken in the seasoned breadcrumbs and coat 
evenly. 
3. Heat oil in a skillet over medium high heat and brown chicken until it is no 
longer pink in the middle. 
4. Place chicken in a casserole dish. 
5. Top each piece of chicken with 1 1/2 oz. of mozzarella cheese. 
6. Mix together heavy cream, parmesan cheese, and parsley flakes. 
7. Pour cream mixture over the chicken. 
8. Bake for 25 minutes. 

Serves: 4

Serve this with your favorite pasta dish. Don't forget to add some veggies to 
your meal!

  SQUASH SOUFFLÉ   

  3 c. cooked, mashed butternut squash
  1/4 c. butter
  2 tbsp. brown sugar
  1/2 tsp. salt
  1/2 tsp. finely shredded orange peel
  1/8 tsp. nutmeg
  Dash pepper
  4 egg yolks
  4 stiffly beaten egg whites

  Combine all ingredients except eggs with mixer. Add yolks, beating well. 
Carefully fold squash into whites. Pour into 1 1/2 quart soufflé dish that has 
been buttered. Bake for 55-60 minutes (until set) at 350 degrees.  Enjoy.

APPLE  CRUNCH


2 Lbs. Apples
1/4 Stick of Margarine  or Butter
1 Cup Self-Rising Flour or Bisquick
1 Cup Sugar
1/2 Tsp.  Allspice
1/2 Tsp Cinnamon
1 Egg

Peel apples and cut into pieces.  Place in a Pyrex dish. Dot butter or 
margarine onto apples. Mix dry ingredients  with egg. (THIS MIXTURE WILL BE 
VERY 
STIFF). Spread over apples and bake in a  350F (preheated) oven until crust is 
done!

 1 butternut squash
 2 tbsp. butter
 1 tbsp. brown sugar
 Salt and pepper
 
 Preheat oven to 400 degrees.  Slice squash in half lengthwise,
  remove seeds.  Place cut side up on cookie sheet.  Divide butter and
  brown sugar between cavities and season well.  Bake 40 minutes.  Enjoy.

Baked Butternut Squash And Parsnips
2  Tablespoons   unsalted butter
2  Mediumwhite or yellow onions -- thinly sliced
1  Tablespoonolive oil
2  Mediumbutternut squash (about 3 pounds)
1 1/2  Poundsparsnips
2  Small oranges, peeled, seeded and coarsely chopped
2  Tablespoons   honey
  2/3  Cup   fruity white wine
  1/3  c defatted chicken or vegetable stock
  1/2  tsp   nutmeg
 Salt and freshly ground black pepper, to t
  3/4  c freshly grated good quality Parmesan cheese

   
Generously butter a 9 by 12 inch baking dish. Set aside.

Saute the onions in oil over moderate heat until just beginning to soften
and are lightly colored. Set aside.

With a sharp knife, cut squash in half and remove and discard seeds.
Carefully peel squash and cut into 1/2 inch cubes. Peel parsnips and cut
into 1/4 inch rounds. In a large saucepan filled with lightly salted boiling
water, cook squash until almost cooked through but still firm. Add parsnip
slices and cook 1 minute longer. Drain and combine with onions in a large
bowl. Set aside. In a food processor or blender pulverize the
oranges, honey, wine, stock and nutmeg. Add this mixture to the vegetables.
Season with salt and pepper and toss gently to combine. Place mixture in the
prepared dish and sprinkle cheese evenly over top. If serving immediately,
place under a hot broiler to lightly brown top. If prepared in advance,
place in a preheated 425 degree oven for 10-12 minutes or until lightly
browned and hot throughout.
 
Yield: 6-8 servings.  Enjoy.

2   lg   Acorn squash, split length-
 Wise and seeded
1   cChopped pear
  1/2   cRaw cranberries (fresh or
 Frozen)
3   tb   Undiluted orange juice
 Concentrate
3   tb   Honey or Maple Syrup
1 1/2   ts   Ground cinnamon
  1/2   ts   Ground allspice

   Preheat oven to 400 degrees. Place squash cut side up on foil-lined baking
   sheet. In a large bowl, combine pear, cranberries, orange juice concentrate,
   honey or syrup, cinnamon and allspice. Spoon mixture into squash cavities.
   Use any extra liquid to brush cut edges of squash. Bake 45 minutes to 1
   hour, or until squash is soft. Serve hot. Serves 4.  Enjoy.

Southern Steak and  milk Gravy

4 Pieces Cubed Steak
Flour
Salt
Pepper
Milk


Place enough oil in a pan to just coat the bottom, put that on  medium heat 
while you prepare your steak. In a bowl, place 1 C flour and add 1/4  tsp salt 
and 1/ 4 tsp pepper (more if you prefer). Stir that up. Dip each piece  of 
steak into flour on both sides to get it coated well. Place each piece of  
steak 
in pan and cook until good and browned on both sides. Remove steak to a  plate 
while you make your gravy. 

Place about 1/4 C flour into skillet with meat drippings. Add a  little more 
salt and pepper and stir this over medium heat until the flour is  slightly 
browned (just a few minutes). Slowly pour in 1 1/2 Cups of milk,  stirring 
constantly. Continue stirring, with a wire whisk to help with lumps,  over low 
heat 
until thickened and there are no lumps. This will happen rather  quickly. Add 
a little more milk if you prefer thinner gravy. Return steak to the  pan and 
turn to coat with gravy on both sides. 

Serve steak and gravy together in a bowl or serve gravy on the  side to go 
with Mashed  potatoes.

  1 graham cracker crust or sweet pastry pie dough
  1 can Eagle Brand condensed milk
  3 egg yolks
  1/2 c. fresh lime juice
  2 c. milk
  1 pkg. Dream Whip
  Green food color (optional)

  In large mixing bowl beat eggs. Add milk. While beating, slowly add lime 
juice. (You can add 2 or 3 drops of food coloring now.) 
  Prepare Dream Whip and milk in a separate bowl. Then fold into key lime 
mixture. Pour into pie crust and spread out. Careful not to collapse the 
mixture.

  SPINACH SURPRISE   

  2 eggs
  1 env. dry Italian Salad Dressing
  1/4 tsp. nutmeg
  1 (15 oz.) container whole milk Ricotta cheese
  1 (10 oz.) pkg. chopped spinach, thawed and well drained
  1/2 c. shredded Mozzarella cheese
  15 sheets (1/2 pkg.) 12 x 17 inch phyllo pastry dough
  1/2 c. (1 stick) butter, melted

  Beat eggs slightly with salad dressing mix and nutmeg. Stir in Ricotta 
cheese, spinach and Mozzarella cheese; set aside. Unfold pastry sheets; cove 
with waxed paper and then a damp towel to prevent drying. Brush each sheet with 
butter as it is layered. Layer 6 buttered sheets and place in center of 9-inch 
pie plate with ends extending beyond rim. Layer 6 more sheets and place 
crosswise completely covering pie plate. Gently press into plate. Spoon in 
cheese mixture. Fold sheets over mixture to cover.  Enjoy.

  We have to suffer lack, so we can know God's provision,
We have to feel another's pain, so we can have a sense of mission.
  So take heart, if you don't understand today,
Instead of grumbling, ask God what He means to say,
In order to learn you must endure, and learn to see the bigger picture.
In order to grow, you must stand and look beyond the hurt,
Trust in God's loving hand that takes what is Good, and gives what is Best,
And on this blessed thought, rest your anxious heart with all the questions,

CP Peanut Butter Chocolate SwirlCheesecake

 

A delicious cheesecake, cooked in the crockpot.

 

Ingredients:

 

 Crust:

 1 cup chocolate or regular graham cracker crumbs

 2 tablespoons brown sugar

 3 tablespoons butter

 Filling:

 12 oz cream cheese, room temperature

 2/3 cup brown sugar

 2 large eggs

 1/3 cup creamy peanut butter

 1 tablespoon all-purpose flour

 1/2 teaspoon vanilla 1/2 cup chocolate chips, melted (semisweet or milk

chocolate)

 

Preparation:

Combine crumbs with brown sugar; mix in melted butter until well moistened.

Pat into a 7-inch springform pan.

 

In a medium-sized mixing bowl, with an electric hand-held mixer, cream

together the cream cheese and 2/3 cup brown sugar. Add eggs and beat on

medium speed

for about 2 minutes. Add peanut butter, flour, and vanilla; beat about 2

more minutes. Pour all but about 1/2 cup of the batter into the prepared

pan.

Combine the melted chocolate chips with the remaining batter and pour on top

of the batter in the pan. Cut the chocolate batter in gently with a knife

to make a swirling pattern, without disturbing the crust. Place on a rack or

aluminum foil ring (to keep the pan off the bottom of the pot) in the

crockery

cooker. Cover and cook on high for 2 1/2 hours. Turn heat off and leave for

about 1 1/2 to 2 hours, until cooled enough to remove. Cool completely

before

removing from pan. Chill before serving, and store leftovers in the

refrigerator.

Ingrediants:

APPLES:

8 tart apples, peeled, sliced

1-1/4 Teaspoons ground cinnamon

1/4 Teaspoon ground allspice

1/4 Teaspoon ground nutmeg

3/4 Cup milk

2 Tablespoons soft butter or margarine

3/4 Cup sugar

2 eggs

1 Teaspoon vanilla extract

1/2 Cup Bisquick

 

TOPPING

1 Cup Bisquick

1/3 Cup brown sugar

3 Tablespoons cold butter or margarine

1/2 Cup sliced nuts

Vanilla ice cream or whipped cream

 

Instructions:

 

In a large bowl toss apples with cinnamon, allspice and nutmeg. Place in a

large (4- to 6-quart) greased crockpot.

In another bowl, combine milk, butter or margarine, sugar, eggs, vanilla 
extract and 1/2 cup Bisquick.

Spoon over apples.

In another bowl, combine 1 cup Bisquick and brown sugar. Cut in

Margarine until crumbly.

Add nuts. Sprinkle the streusel topping over the apples in

the crockpot. Cover and cook on LOW 6 to 7 hours or until the apples are

tender.

Serve warm with vanilla ice cream or whipped cream. This recipe yields 6 to

8 servings.

Crockpot Beer Cake

 

2/3 C. butter

1 1/2 C. brown sugar

3 eggs

2 1/2 C. flour

1 1/2 t. baking powder

1/4 t. baking soda

1 t. cinnamon

1/4 t. nutmeg

1 1/2 C. beer

1 C. chopped walnuts

1 C. dried cranberries or raisins

 

Cream butter and sugar until light and fluffy. Add eggs one at a time

mix well. Add flour, soda, baking powder, cinnamon, nutmeg to creamy

mixture alternately with beer. Stir in walnuts and raisins.

 

Pour mixture into well buttered and floured cake pan that will fit

into crockpot. Cover tin with four or five paper towels. Put into

pot. Put lid on crockpot loosely to allow steam to escape.

 

Cook on high for 3 1/2 hours or until cake is done.

 

Remove pan from pot and allow cake to cool on wire rack for 15

minutes before removing from pan.

 

Note: A old coffee can works great to bake a crockpot cake in...

Crockpot Bishop's Cake

 

 

1-1/2 C. flour

1 t. baking powder

1/2 t. salt

3 eggs

3/4 cup sugar

1 C. (about 7 ounces) small date pieces

1 C. (about 8 ounces) maraschino cherries, drained and sliced

2 C. walnuts, coarsely chopped and toasted

6 ounces semisweet chocolate pieces

 

Grease crockpot metal insert or 2 pound coffee can. With a wire whisk

combine flour, baking powder and salt. In another bowl, beat eggs and

sugar until thick. Stir in rest of ingredients. Place ingredients in

prepared insert.

 

Cover with 6 layers of paper towels. Place in crockpot. Cook on high for

2 to 3 hours. Cool pan for 10 minutes. Remove cake and cool completely

on wire rack.

Crockpot Chocolate cake

 

Ingrediants:

1 chocolate fudge cake mix or your favorite chocolate

8 oz sour cream

1 cup semisweet chocolate chips

1 cup water

4 eggs

3/4 cup vegetable oil

1 4 serving size instant chocolate pudding mix

 

Instructions:

Mix everything together and pour into a lightly greased crock pot.

Cook on low for 6-8 hours or 3-4 hours on high.

Crockpot Lemon Pudding Cake

 

Ingredients:

3 eggs, separated

1/4 cup lemon juice

3 tablespoons butter

1/8 teaspoon salt

1 1/2 cups milk

3/4 cup sugar

1/4 cup flour

 

Method:

Beat egg whites until stiff peaks form and set aside. Beat egg

yolks; blend in juice, butter and milk. Combine sugar, flour, and

salt; add to egg-milk mixture, beating until smooth. Fold into

beaten whites. Spoon into crock pot. Cover and cook on High for 2

to 3 hours.

 

Keep an eye on it; it tends to over-brown around the edges

(though for some of us that's the best part!)

Slow Cooker - Crock Pot Chocolate Mayo Cake

 

This is my favourite chocolate mayonnaise cake. I find it very

convenient because you don't need to rush to the supermarket for

eggs because it doesn't contain any...the mayonnaise takes their

place of course, and successfully. The quantities stated in this

recipe are suitable for a 3.5 quart slow cooker. Test if cake is

done after two hours and a half or cooking; if not, let them cook

until third hour. Don't overcook; it should be firm but still most

in the inside. Substitute water or orange juice for the coffee if

cake is for kids. Use another flavour marmalade if you wish. Don't

bake it on low for a longer time

 

8 servings

3¼ hours 15 min prep

1 1/2 cups sugar

1 1/2 teaspoons salt

3 cups white flour

3/4 cup pure cocoa

2 1/4 teaspoons baking soda

1 1/8 cups mayonnaise

1 1/2 cups cold brewed coffee

1/4 cup strawberry marmalade

 

In bowl, mix sugar, salt, flour, cocoa, and baking soda.

Carefully mix in mayonnaise and coffee.

Pour in mold lined with greased foil.

Tightly wrap mold with more aluminium foil, so as to steam doesn't

ruin the cake (or use the paper towel method: place 5-6 thick paper

towels between slow cooker lid and mold).

Bake on high for 2 1/2- 3 hours, depending on slow cooker.

When cake is baked let it cool completely, then sandwich it, fill

with a thin layer of marmalade and reassemble it.

If you used atall slow cooker like my old Rival 3100 you can even

cut it twice and use two kinds of marmalade.

The cake keeps wonderfully in the fridge if well wrapped in foil for

three days at least.

Slow Cooker Turtle Cheesecake

 

 

1 14 oz pkg caramels

3/4 cup evaporated milk

1 1/4 cups graham cracker crumbs

1/4 cup butter or margarine -- melted

1 cup chopped pecans

2 8 oz pkgs cream cheese -- softened

1/2 cup sugar

2 eggs

1 teaspoon vanilla extract

3/4 cup semisweet chocolate chips -- melted

pecan halves

 

Preheat oven to 350 degrees F. Grease and flour inside of Bread N' Cake

Bake Pan. Combine crumbs and butter, stirring well. Press crumb mixture

evenly onto bottom of Bread N' Cake Bake Pan. Bake at 350 degrees F. for

6 to 8 minutes. Cool. Unwrap caramels;; combine caramels and milk in a

heavy saucepan. Cook over low heat until melted, stirring often. Pour

over graham cracker crust. Sprinkle chopped pecans evenly over caramel

layer, and set aside. Beat cream cheese with an electric mixer until

fluffy; gradually add sugar, mixing well. Add eggs, one at a time,

beating after each addition. Stir in vanilla and chocolate until well

blended. Spoon over pecan layer in pan. Cover with lid and place in

Crock-Pot. Cover Crock-Pot and bake 3 hours on High or until set. Remove

from Crock-Pot, run a knife around edge of cheesecake and allow to cool.

Cover and chill at least 8 hours. Remove cheesecake from Bread N' Cake

Bake Pan. Place cheesecake onto serving plate with graham cracker crust

on the bottom. Arrange pecan halves around top edge of cheesecake. Cut

and serve.

1 cup flour

1/3 cup sugar or splenda

1 teaspoon baking powder

1/2 teaspoon ground cinnamon or apple pie spice

1/2 cup milk

2 tablespoons oil

1/2 cup chopped pecans, toasted optional

1/4 cup dried apples or pears

1 cup packed brown sugar

1 cup water

1 cup apple juice or pear nectar

2 tablespoons butter or margarine

1 tablespoon finely chopped crystallized ginger

Vanilla ice cream or light cream, optional

 

In a mixing bowl, combine flour, sugar, baking powder,  and spices then add milk

and oil. Stir until combined. Stir in the nuts and dried fruit. Spread batter

evenly in bottom of a 3-1/2 to 4 quart slow cooker. In a small saucepan,

combine brown sugar, water, apple juice or nectar, margarine or butter, and

ginger. Bring to a boil. Boil for 2 minutes.

 

Pour mixture evenly over batter in cooker. Cover. Cook on HIGH for 2 to 2-1/2

hours or until a toothpick inserted in the cake's center comes out clean.

Let stand uncovered for 30-40 minutes to cool slightly before serving. Serve

warm with a scoop of vanilla ice cream or drizzle with light cream as desired.

 

Fresh fruit can be used chop them after peeling and coring.  Also I do not use

nuts so I add raisins or craisins to mine.

3/4 C. butter, softened

1/2 C. sugar

4 eggs

1 package (7-1/4 ounces) vanilla wafers, finely crushed

1/4 cup plus 2 T. milk

3/4 C. flaked coconut

3/4 C. chopped pecans, lightly toasted

1/2 t. vanilla extract

 

Grease and flour 2-pound coffee can or insert. Cream butter and sugar.

Add eggs, one at a time, beating well after each addition. Add wafer

crumbs to creamed mixture along with milk, coconut and pecans.

Mix well. Put batter in prepared can. Cover can with 6 layers of paper

towels. Place pan in cooker. With cover slightly ajar, cook for 3 to 4

hours.

4   tb   Olive or vegetable oil, lite
4   cOnions -- thinly sliced
4Thyme sprigs
2   lg   Garlic cloves -- minced
8   cButternut squash -- cut in
 -1/2-inch cubes
  1/2   cFlour
2   tb   Sage leaves -- chopped, OR
2   ts   Sage, dried
2   tb   Parsley -- chopped
 Salt and pepper to taste
  1/2   cGruyere cheese -- grated
  1/2   cWhole milk, PLUS 2 TBS
1   cBread crumbs, fresh

Preheat oven to 350 degrees. Lightly oil or butter a
   gratin dish.
   
Warm half the oil in skillet, add onions and thyme
   and cook over medium high heat. Stir frequently, until
   onions are lightly caramelized, about 12 to 15
   minutes. Add half the garlic, season with salt
   and pepper and cook 3 minutes more.
   
Dredge squash in flour. Heat remaining oil in large
   pan, add squash and saute until it begins to brown,
   about 7 minutes. Add sage and parsley, season with
   salt and plenty of pepper; cook another minute or so.
   
Spread onion mixture on bottom of dish; add squash
   and cheese. Pour in milk and cover with bread crumbs.
Cover and bake 25 minutes; remove cover and bake
   another 25 minutes, until top is browned. Serves 4.  Enjoy.

  3/4   cWild rice, raw -- rinsed
3   tb   Soy margarine, divided
1   cOnion, red -- chopped
1Garlic clove -- minced
2 1/2   cBread crumbs, whole wheat
 -firmly packed
1   tb   Sesame seeds
  1/2   ts   Each:
 Sage
 Thyme
1   tSalt, seasoned
1   cOrange juice, fresh

   Preheat the oven to 350 degrees.
   
   Halve the squashes and scoop out seeds and fibers.
   Place them cut side up in shallow baking dishes and
   cover tightly with covers or foil. Bake for 40 to 50
   minutes, or until easily pierced with a knife, but
   still firm.
   
   In the meantime, bring the water to a boil in a
   saucepan. Stirring the rice, reduce to a simmer, then
   cover and cook until the water is absorbed, about 40
   minutes.
   
   Heat 2 T of the soy margarine in a skillet. Add the
   onion and garlic and saute until the onion is limp and
   golden.
   
   In a mixing bowl, combine the cooked wild rice with
   the sauteed onion and the remaining ingredients. When
   the squashes are cool enough to handle, scoop out the
   pulp, leaving firm shells about 12/2 inch thick. Chop
   the pulp and stir it into the rice mixture. Stuff the
   squashes, place in foil-lined baking dishes, and cover.
   
   Before serving, place the squashes in a preheated
   350-degree oven. Bake for 20 minutes, or until well
   heated through.  Enjoy.

1  Teaspoon  coarse salt
  1/2  Teaspoon  ground black pepper
1  Tablespoonolive oil
1  Mediumonion -- diced
  1/2  Cup   dry sherry
  1/2  Teaspoon  ground black pepper
2  Cups  cooked wild rice
  1/2  Bunch parsley -- chopped
  1/2  Cup   sour cream
  1/2  Cup   toasted walnuts
  1/3  Cup   cream cheese
  1/2  Cup   milk
1  Teaspoon  lemon juice
1  Teaspoon  cinnamon
  1/2  Teaspoon  salt

Preheat an oven to 350 degrees F. Halve the squash and scrape out the seeds.
Season with salt and pepper. Arrange squash, cut side down, in a baking dish
with about 1inch of water. Cover with foil and bake until tender, about 45
minutes. Meanwhile, heat oil in a large skillet over moderate heat. Add the
onion and saute until soft, about 10 minutes. Stir in the sherry and pepper
and simmer 3 minutes. Stir in the cooked wild rice and heat through. Add the
parsley and mix well. Keep warm.
In a blender, puree the sour cream, toasted walnuts, cream cheese, milk,
lemon juice, cinnamon and salt. Reserve. Spoon the wild rice mixture into
the squash cavities, pour walnut sauce over squash and serve immediately.
Yield: 4 to 6 servings

  1/4   tsGarlic salt or

4   oz   Can chopped green chili
   16   oz   Can whole kernel corn
1   cGrated cheddar cheese

   Saute' squash and onion in oil until barely tender. Add garlic salt (or
   fresh garlic), chilies, corn and cheese; mix well. Put in buttered 1-quart
   casserole and bake at 400 for 20 minutes.  Enjoy.

  1 (16 oz.) frozen bread dough
  Apple pastry pie filling
  3 tbsp. butter
  1/3 c. sugar
  Cinnamon (add to sugar to taste)

  Cut dough in half, lengthwise, then cut into 8 pieces cross wise. Flatten 
and stretch to form 4 circles. Spoon 1 tablespoon pie filling into each 
circle. Bring edges of dough together and pinch to seal. Dip in melted butter 
then in cinnamon sugar. Place seam down in 2 layers in a 9x5x3 loaf pan and 
let rise until double. Bake at 350 degrees for 35 to 40 minutes with foil for 
last 10 minutes. Remove from oven and invert on plate.

6 to 8 slices ham
8 to 10 potatoes, peeled  sliced
Onion, sliced or chopped
Salt  pepper to taste
1 c. grated cheese
1 (10 oz.) can cream of celery or mushroom soup
Paprika

Put half of ham, potatoes, and onions in crock pot. Sprinkle with salt and 
pepper, then grated cheese. Repeat with remaining ham, potatoes and onions. 
Spoon undiluted soup over top. Sprinkle with paprika. Cover and cook on low for 
8 to 10 hours or on high for 4 hours.

1 can cream of chicken soup
1 c. shredded cheddar cheese
1/2 c. butter

Peel and chop or slice potatoes. Cook in water to cover for 3 minutes; drain.

  PORCUPINE MEATBALLS   

  1 1/2 lbs. hamburger
  1 box beef Rice-A-Roni
  2 eggs
  Water and sauce mix

  Put together in large bowl hamburger, rice, 2 eggs. Make medium to large 
meatballs. Brown them in a large skillet, then add sauce mix and 2 cups water. 
Simmer for about 20-25 minutes. Use liquid for gravy. I usually serve them with 
mashed potatoes and corn and muffins.

SWEDISH BUTTERBALLS
Guaranteed, these cookies can be mailed to Aunt Harriet in Maine or
frozen in August for Christmas giving and still retain their good, home
baked flavor
1 3/4 cups butter at room temperature
3/4-cup confectioners' sugar
1-teaspoon vanilla
1 1/4 cups pecans, very finely chopped
4 1/2 cups flour
2 teaspoons pecan flavoring
Pinch of salt
Thoroughly blend all ingredients. Refrigerate for an hour. Roll into
small (half inch) balls and bake in a 350 degree oven for   5-8 minutes.
These cookies will not change color while baking. Check for done­ness
by looking on the underneath side for a light tan color. Carefully roll
in powdered sugar while still warm, and once again when completely
cooled

GRANOLA BARS
1/2-pound brown sugar
1 ¼ cups instant oats
3/4-cup raisins
3/4 cup-unsalted pecans roughly cut up
3/4 cup sunflower seeds
3/4 cup shredded and sweetened coconut
3/4-tablespoon cinnamon
1/4-cup flour
1/4 cup unsalted peanuts
2 eggs
3/4-teaspoon vanilla
1/2-teaspoon salt
1/2-cup butter
Thoroughly mix the first set of ingredients. In a separate bowl, mix the
second set of ingredients. Blend the two together; making sure
everything  is well distributed. Press into a cookie sheet (9x13xl) that
has been greased and floured. Bake at 3500 for 25  minutes or until
sides start to pull away from the pan. Cut into bars while still warm.
Makes approximately 24 bars.
NOTE: For chewier bars, reduce cooking time by 8 to 10 minutes.

CRYSTALLIZED GINGER
1-pound fresh ginger
2 cups sugar
1 cup ginger wine
1/2-cup water
Rinse ginger and cover with cold water. Soak at least 4  hours, best if
overnight. Drain ginger and cover again with fresh water. Bring to a
boil, uncovered. Reduce heat and simmer covered for 10 min­utes. Drain
and replace with fresh water. Repeat this process of simmering and
changing water 3 more times. Once again, cover with cold water to cool.
Peel skins. Cut ginger diagonally across the grain to make slices about
one eighth of an inch thick. Cover sliced ginger with fresh water.
Repeat simmering and changing water 5-6 more times. Taste to see if it
is at desired spiciness. If still too spicy, repeat process. Drain.
In a  3 quart pan, stir together sugar, !/2  cup water and ginger wine.
Bring to a boil, cover and cook for 1  minute to dissolve sugar. Add
sliced ginger and bring to a full boil. Remove from heat. Allow slices
to stand in syrup at room temperature, overnight.
Bring syrup back to a boil. Simmer ginger uncovered stirring
occas­ionally until ginger is translucent and most of the syrup is
dissolved, about 1 1/2 hours to  2 1/2 hours. Remove pan from heat and
continue to stir occasionally for 5-10 minutes, until all syrup is
dissolved. Place ginger on a wire rack or cookie sheet in a single layer
to dry, about 1 hour. When cooled and dry to touch, pack in an airtight
container. For ginger lovers, package in a decorative clamp style jar
with ribbon for an appreciative gift.
DID YOU KNOW: If you save some of the water used while boiling the
peeled ginger, and dilute it with addi­tional water you will have a
beverage similar to ginger tea. Excellent when served hot with a slice
of ginger and a drop of honey, especially on a cold windy day

CAKE:
2 cups sugar
1 1/4 cups salad oil
4 eggs
2 cups flour
2 teaspoons baking powder
1 1/2 teaspoons baking soda
2 teaspoons cinnamon
1-teaspoon salt
13 ounces crushed pineapple, drained
1/2 cup chopped nuts
2 cups grated carrots, packed
FROSTING:
1 pound powdered sugar
1/2-cup butter
8 ounces cream cheese
1-teaspoon vanilla
Combine sugar, oil, and eggs. Mix thoroughly until light and creamy.
Combine with dry ingredients. Add pineapple, nuts and carrots. Pour into
lined cupcake pans, each about 2/3 full. Bake at 350 degrees for 12-15
minutes. Mix ingredients of frosting in blender or food proces­sor.
Frost cupcakes when cool. Makes between 45 and 50 cupcakes

BANANA CHOCOLATE CHIP CAKE
3 tablespoons shortening
3 tablespoons butter at room temperature ¥3 cup granulated sugar
1-teaspoon vanilla
3 eggs
1-cup flour
1-teaspoon baking soda
1/2-teaspoon salt
1 cup mashed ripe bananas (the riper, the better)
1/2 cup chocolate chips
1/2 cup chopped walnuts or pecans
In   a bowl, cream together butter, shortening, sugar, vanilla, and
eggs; add smashed, but not too smooth bananas. In a separate bowl, mix
together flour, soda and salt. Blend these two together gradually. Stir
in chips and nuts. Pour batter into a buttered and floured   8 x 8 cake
pan. Bake at 325 degrees for 30 minutes or until knife Inserted in the
middle comes out clean. Serve hot or at room temperature the next day.
Serves nine portions.

Home made pot pie has never been so easy! And the flavorful mac  cheese 
topping adds another dimension to this dish. The basic recipe makes 2 
individually sized pot pies - enough for 2 big eaters, or 4 smaller appetites. 
It's not
hard - really, it's not!
Serves 2 to 4 - Preparation Time 1 hour
2 frozen pie crusts
1 box macaroni and cheese
1/4 c. milk (or to taste)
1/4 c. butter (or to taste)
19 oz. can chunky beef soup or stew
1 c. shredded cheddar cheese (optional)

Preheat oven to 350 degrees. 
Thaw pie crusts 15 minutes. Make the macaroni  cheese according to box 
directions, or your favorite variation. 

While macaroni is cooking, heat soup in a saucepan. After thawing shells, press 
each carefully into an individual size oven-proof bowl or soufflé pan, 
smoothing it out and patching any cracks. 

Cut off excess around edges. Pour soup into pie shell. 

Carefully place spoonfuls of macaroni and cheese on top of pie, covering it 
evenly. Scatter cheddar cheese on top of the pie. 

Bake 35 minutes, or until cheese is melted and starting to brown.

SHORTBREAD DREAM BARS
This one is guaranteed that while baking, some wide eyed cashier or
customer will pop their head into the door of the kitchen and say:
M-m-m-m-m-m-m-m, what's baking
4 1/2 cups flour
1/4-pound butter, at room temperature
1/2-cup sugar
1/2-cup brown sugar
1/2-teaspoon vanilla
1/4-teaspoon salt
FILLING
1/2-pound cream cheese
1/2 cup apricot jam (or strawberry, or...)
Cream butter and sugars together; add remaining ingredients. Blend until
smooth. Press into two 9 x 13 x 1 pans, buttered and floured. Bake in a
350-degree oven until the sides start to pull away from the pan. Cool at
room temperature. Meanwhile, whip together the cream cheese and jam in a
food processor or blender. Spread evenly over one pan of baked
shortbread. Remove the other shortbread from the pan and lay on top of
the iced portion. Place in a 350-degree oven for 5  minutes. When cool,
cut into bars. Makes approxi­mately 24-26 bars.

Easy Chinese Corn Soup

1 (15 ounce) can cream style corn
1 (14.5 ounce) can low-sodium chicken broth
1 egg, beaten
1 tablespoon cornstarch
2 tablespoons water

 In a saucepan, combine the cream style corn and chicken broth. Bring
 to a boil over medium-high heat. In a small bowl or cup, mix together
 the cornstarch and water; pour into the boiling corn soup, and
 continue cooking for about 2 minutes, or until thickened. Gradually
 add the beaten egg while stirring the soup. Remove from heat and
 serve.

PLUM GRANITAS
1/2-cup water
4 tablespoons sugar
3 tablespoons plum wine
Juice of 1/4 lemon
8 plums, peeled and pitted
2 tablespoons plum preserves
In a saucepan, combine water, sugar, wine and lemon juice. Bring to a
boil over moderate heat, stirring until sugar is dissolved. Simmer for
5 minutes and let cool. Cut up plums, and blend with pre­serves in a
food processor or blender. Mix in syrup and semi-freeze. Stir and
semi-freeze again. Repeat this process at least two more times. Dish up
before freezing for the last time. Serves 4.
TO HELP YOU ALONG THE WAY: Place plums in a stainless steel bowl. Cover
with boiling water and let set for 5 minutes. Drain and rinse with cold
water. Skins should slip off easily with little or no effort

ABM Beignets

1   cWater
1Egg
2   tb   Oil
3   tb   Nonfat Dry Milk Powder
  1/2   ts   Nutmeg
1   tsSalt
3 1/2   cBread Flour
2 1/2   ts   Yeast
  1/2   cPowdered Sugar

   Place all ingredients except sugar in machine.
   Program for knead and first rise and press start. The
   dough will be sticky at first but will hold its shape.
   After the final cycle, it will be workable. When dough
   is finished, turn the dough out onto a floured surface
   and let it rest for 10 minutes. Roll the dough to a
   generous 1/4″ thick and cut it into 2″ squares.
   
   Cover the squares with a clean towel and let rise for
   30 minutes. Add the powdered sugar to a medium-size
   clean paper bag.  Lay out paper towels to drain the
   doughnuts. Heat 1 to 1 1/2  of oil to 375øF.  Do not
   add too many; add once or it may cool the oil too
   much.  Gently brush the uncooked squares to remove any
   extra flour. Slide them into the heated oil. When they
   pop to the surface, spoon the hot oil over them
   constantly until they are puffed. Turn the squares and
   cook until they are a light golden color on both
   sides. It should take 1 to 2 minutes. Cut the first
   couple of squares in half to be sure there is not
   sticky uncooked dough inside.
   
   Remove from hot oil with slotted spoon and drain on
   paper towels. While warm, drop them, 3 or 4 at a time,
   into the bag with powdered sugar and shake until they
   are well coated. Serve immediately.  Enjoy.

 1/3cp Applesauce

 1/4cpRaisins; finely chopped

   2cpsSugar

 1/4tsGround nutmeg

 1/4tsGround cinnamon

 1/2tsVanilla

   1Egg

 1/2cpSugar

 1/4tsNutmeg

 

   Combine applesauce, raisins, sugar, nutmeg, cinnamon, vanilla and egg. Add

   Mix, stirring until thoroughly blended. Turn dough onto well-floured surface

   and knead about 10 times or until smooth.  Roll or pat dough to about 1/2

   inch thickness. Cut into rings using floured doughnut cutter. Fry 3 or 4 
rings at a time in hot shortening. Turn   as soon as they rise to the surface

   and continue turning  until golden brown.  Drain on paper towels. Shake 
doughnuts  in mixture of 1/2 cup sugar and 1/4 teaspoon nutmeg.  Yield: 1 dozen.

 Enjoy.

Apple has released the new iPod Nano in a variety of colours and in 8 Gigabyte 
or 16 Gigabyte guises. The menu structure on the iPod can now be spoken using
a synthetic voice, so now if you can't see the iPod screen, you will not be 
left wondering what tracks you have downloaded or have selected to play.

The model evaluated is the Nano Red, which means that Apple donates some of the 
purchase cost towards fighting Aids in Africa. The great news is that this
is an iPod that anyone can buy and use, not a specialist product or needing an 
add-on for blind or partially sighted people to use. This is the first talking
iPod to come to the market. You can expect other MP3 players to follow suit as 
Apple is the market leader in this segment. The spoken menu feature is expected
to be well received amongst fully sighted people also because the iPod is an 
audio device and people will find the spoken menu coming through their earbuds.

The spoken interface can be used on a Macintosh or Windows PC but you must use 
iTunes version 8. When the iPod is plugged in the first time, it will begin
to charge up the battery. Eventually a start up screen appears which allows you 
to choose how you want to set up the iPod. One of the tick box options
is spoken menus. Tick this box if you want iPod menus to be spoken.

The voice used is a synthetic voice (i.e. computer generated voice) so might 
not be totally clear or understandable. The voice used is the one chosen in
Speech in System preferences folder on a Mac and the speech folder in the 
Control Panel on a Windows PC. These are text to speech voices that are 
installed
on your computers hard drive. The more synthesizers you have installed then the 
greater the number of voices you have to choose from.

The PC used to trial the iPod Nano had Microsoft Sam installed which was very 
basic but quite clear and also Voiceware Kate which is a very human sounding
voice.

Using the iPod

The iPod has an LCD screen, which is approximately half of the height of the 
device. The screen can be used to watch movies, or photo albums or even TV
shows that are now available to download from iTunes. The screen also shows 
albums and songs installed on the iPod. Below the screen is a touch wheel.
This touch wheel is made up of four buttons that can be pressed - so left side 
of the wheel is rewind or backwards but also can be volume down, the right
side of the wheel when pressed is fast forward or volume up. The top of the 
wheel is Menu and the bottom of the wheel when pressed toggles between play
and pause. The touch wheel can also be used as a touch sensitive scroll wheel. 
Sliding your finger around the wheel will move backwards or forward through
the menus. Finally the inside of the wheel acts as an on and off button.

To listen to tracks simply move through your menu list of tracks and press play 
on the one you want to hear. If you want to browse for another track whilst
listening to a song, the iPod fades the music playing into the background while 
speaking the menu contents. Once you finish navigating in the menus the
song returns to the set volume.

Shuffle the Shuffle

The iPod has an accelerometer built in so it can detect which way it is being 
held up. This is mainly as a feature for sighted users viewing photos, movies
or downloads. However the accelerometer allows the iPod to detect when it is 
shaken. This shaking is used as the shuffle feature and a track is played
randomly from the playlist.

Disable touch wheel mode

When the iPod is in your pocket, bag or even on your arm you can set it to play 
then disable to touch wheel functions so that it does not change songs or stop
playing by accident. Its similar to keypad lock on a mobile phone. On the top 
left of the iPod is a tiny round slide switch. Sliding it to the right puts
the iPod into keypad locked. To the left, unlock touch pad.

Display and font sizes

The display is small - after all, the device is called a Nano! However there is 
some accessibility built in. In the General folder the backlight, brightness,
font size can be adjusted. The font adjustment has two settings standard and 
large. Large is approximately 14 point print size. The colour scheme appears
to be set as black text on a white background. There is a lot of adjustment in 
the Brightness setting if people find the bright white background causes
glare however contrast does deteriorate if the brightness is turned down low. A 
useful feature is the clicker, which registers movement on the touch
wheel by clicking through menu items.

In conclusion

A desirable, great little device that just got even better. Why not give one a

Tangy Glazed Meatloaf
1 lb Turkey, ground, lean
1/4 c Bread crumbs
1/3 c Milk
1 Onion, chopped, small
1 pn Salt
1 pn Pepper
1/2 ts Poultry seasoning
2 tb Catsup
Glaze:
3 tb Sugar, brown
1/4 c Catsup
1/4 ts Nutmeg
1 ts Mustard, dry OR A-1 poultry
Sauce 
Combine breadcrumbs and milk in a bowl. Add turkey, egg, onion,
seasonings and catsup. Mix well and pat into a small meatloaf pan. Bake
at 350 degrees for 40 minutes. Combine glaze ingredients and spoon over
meatloaf. Bake 20 additional minutes.

Apple Crisp Oven Pancake
1/2 c Oats; regular
1/4 c Bisquick
1/4 c Brown sugar
2 tb Butter; softened
3/4 ts Cinnamon
2 c Bisquick
3/4 c Milk
3/4 c Chunky applesauce
1/4 ts Vanilla
1 Egg
Heat oven to 425F. Grease jelly roll pan. Mix oats, 1/4 cup bisquick,
brown sugar, butter (or margarine) and cinnamon. Reserve. 
Beat remaining ingredients with whisk until well-blended. Pour into pan.
Spread batter to edges. Sprinkle with oats mixture. 
Bake 14 to 16 minutes, or until light golden brown. Cut into 6 pieces
and serve.

Mini Spam and Cheese Buns
1 Loaf frozen bread dough - (16 oz); thawed
1 cn Spam luncheon meat - (12 oz); shredded
1 1/2 c Shredded Monterey Jack cheese
2 ts Dill weed
1 Egg
1 tb Water
Cut bread dough in half lengthwise; cut each half into 12 pieces. In
bowl, combine Spam, cheese, and dill; mix well. 
Place about 1 tablespoon of Spam mixture in center of 1 piece of dough.
Shape dough into a ball; place on greased baking sheet. Repeat with
remaining dough pieces. Cover; let rise in warm place 30 to 40 minutes
or until double in size. Heat oven to 350 degrees. 
Uncover dough. In small bowl, stir together egg and water. Brush each
piece of dough with egg mixture. Bake 20 to 30 minutes or until golden
brown. Serve warm. 
This recipe yields 24 appetizers.

Spam Hawaiian Pizza
1 can refrigerated all-ready pizza -- crust (10 ounce )
1 package sliced provolone cheese -- (6 oz)
1 can Spam luncheon meat -- cut in squares -- (12 oz)
1 can chunk pineapple -- drained 8 ounces )
1/2 cup thinly sliced red onion
1/2 cup chopped green pepper
Heat oven to 425F. Grease 12 pizza pan or 13x9 baking pan. Unroll
dough; press in prepared pan. Top with cheese. Arrange remaining
ingredients over cheese. 
Bake 25-30 minutes or until crust is deep golden brown.

Apple Nut Cobbler
1/2 c Almonds, sliced  toasted
6 md Granny Smith apples
1/2 c Sugar
1 c Flour
1 ts Baking Powder
1/4 ts Salt
5 1/3 tb Butter
1/3 c Milk
Egg Wash
Preheat oven to 350 degrees F. 
Cut apples into 8 wedges. Toss apples with 1/4 cup sugar. Place apples
in 2 quart baking dish. Spread out into even layer in pan. 
In food processor, blend flour remaining 1/4 cup sugar, baking powder
and salt. Add butter to flour. Process until completely blended and
mixture resembles coarse meal. Pour flour mixture into bowl. Add milk.
Blend just until milk is absorbed. Add more flour if necessary. Gather
into a ball. 
On lightly floured board, roll dough out into a shape that will cover
the fruit. Carefully place rolled out dough over fruit in baking dish.
Tuck in edges. Brush with egg wash. Top with toasted almonds. 
Bake on lowest oven rack for 45 to 50 minutes or until apples are tender
and topping golden brown. Cool on rack about 15 minutes before serving.

Garlic Bread Bruschetta
1/2 Baguette (long and narrow French bread loaf)
1 tb Olive oil
4 Cloves garlic; minced
2 tb Minced fresh basil leaves
Preheat oven to 400 degrees. Cut baguette into 1/4-inch, slices; place
on nonstick baking sheet without overlapping. In a small saucepan over
low heat, combine oil and garlic: heat 1 minute. Brush over bread
slices. Bake bread slices 15 minutes, or until golden brown. Sprinkle
with basil and serve warm. Makes 6 servings.
