Hi, Helen, No, no chocolate cakes, no brownies, no sweets, no cake of any 
form or fashion; the chinese food was fabulous, and the money and shopping 
bag and heavy fleecy shirt are nice for our now approaching cold weather. 
perhaps some sweets when we go shopping in dallas.

[RecipesAndMore] Second day surprise suppers

10 mins is all you need to turn yesterday's dinner into sensational next
night eats! Each recipe serves 6 servings 
Creamy Thai Salmon Chowder! In a saucepot ove medium heat cook 1 tsp
curry powder 30 secs stir often. Add 1 can 14 oz light coconut milk, 1
pkg 1.8 oz leek soup mix and 1 cup water. Stir until blended. Increase
heat to high and bring to a boil stirring frequently. Reduce heat to
low. Let simmer partially covered 5 mins and stir occasionally. Stir in
1 can 14.5 oz diced new potatoes rinsed and drained, 1 pkg 16 oz frozen
pepper stir fry vegetable blend thawed, 2 cups cooked flaked salmon, 1
Tbsp julienned fresh gingerroot and 1 Tbsp lime juice. Cook 5 mins.
Garnish with lime wedges 
= 
Pork Ropa Vieja! In a large nonstick skillet over medium high heat cook
2 Tbsp vegetable oil 30 secs or until heated. Add 2 cloves garlic peeled
and chopped, 1 green pepper seeded and cubed, 1/2 cup chopped red onions
and 1 tsp each dried thyme and oregano. Cook 4 mins or until veggies are
crisp tender stir occasionally. Stir in 1 can 14.5 oz diced potatoes, 1
cup frozen peas, 1/2 pound cooked roast pork shredded and 1/2 cup pitted
spanish olives drained. Cook 4 mins or until heated through. Serve over
hot cooked rice. Garnish with fresh herbs if desired 
= 
Roast Beef Hash and Eggs! In skillet over medium heat cook 3 Tbsp butter
30 secs or until melted. Add 1 cup chopped onions, 1 cup chopped red and
or yellow peppers and 1 tsp dried thyme. Cook 4 mins or until tender.
Add 1 can 14.5 oz diced new potatoes rinsed and drained and 1/4 pd
cooked roast beef diced. Cook 3 mins, Stir in 2 tsp hot pepper sauce and
2 Tbsp each water and ketchup. Cook 1 min, In skillet bring 2 inches of
water to a simmer. Add 6 eggs 1 at a time. Cook 3 mins or until set.
Remove with slotted spoon. Divide beef among 6 plates and top with eggs.
Garnish with thyme if desired 
= 
Gingerific Chicken Soup! Zest and juice 1 lime. In a large saucepot over
high heat combine 2 quarts chicken broth, 1 cup shredded carrots, 2 Tbsp
fish sauce, 2 Tbsp fresh lime juice and 1 Tbsp julienned fresh
gingerroot bring to a boil. Reduce heat to low. Let simmer 5 mins or
until carrots are tender. Add 1/2 pd cooked chicken shredded, 1 1/2 cups
bean sprouts, 1/2 chopped scallions, 1/2 pkg (8oz) rice noodles cooked
according to pkg directions and 1/4 tsp lime zest. Cook 1 min or until
heated through. Gash with a lime wedge and cilantro if desired When you
reach the end of your rope. Tie a knot and hang on!

1 cup cooked rice 
1/2 pound  cooked shelled shrimp 
2 cups beef broth or bouillon 
8 ounces chicken  breast, chopped 
4 ounces smoked sausage, chopped 
1/2 teaspoon salt  
1/8 teaspoon cayenne 
2 teaspoons oregano leaves, chopped 
2 teaspoons  chopped thyme leaves 
2 tablespoons minced parsley 
1 clove garlic,  crushed 
1 cup chopped celery 
2 medium tomatoes, chopped 
1 onion,  chopped 
1 green bell pepper, chopped 
2 jalapeno or serrano peppers,  chopped

Shell shrimp and then halve lengthwise. In crockpot, combine all  ingredients 
except shrimp and rice. Cover and cook on LOW for 9 to 10  hours.

Turn crockpot to HIGH; add cooked shrimp and cooked rice. Cover  and cook on 
HIGH for 20 to 30 minutes.

Serves 6.

In a large bowl, combine the mayonnaise, sour cream,  horseradish, parsley, 
pepper and remaining salt. Stir in the potatoes, eggs,  bacon and onions. Cover 
and refrigerate for up to 24 hours. Yield: 6  servings.

Jalapeno Potato Salad 
 
Field editor Sarah Woodruff of Watertown, South Dakota puts a zippy spin  on 
potato salad. It's perfect for a picnic! 

6 medium red potatoes, peeled and cubed
2 celery ribs, chopped
2  hard-cooked eggs, chopped
1/4 cup chopped onion
2 small jalapeno peppers,  seeded and chopped
1/4 cup mayonnaise
3 tablespoons spicy brown  mustard
3 teaspoons hot pepper sauce
1/4 teaspoon ground cumin
1/4  teaspoon pepper 
 
Directions: 
Place the potatoes in a large saucepan and cover with  water. Bring to a 
boil. Reduce heat; cover and cook for 10-15 minutes or until  tender. Drain; 
cool 
to room temperature. 
In a large  serving bowl, combine potatoes, celery, eggs, onion and 
jalapenos. In a small  bowl, combine the mayonnaise, mustard, hot pepper sauce, 
cumin 
and pepper. Pour  over potato mixture and toss gently to coat. Cover and 
refrigerate overnight.  Yield: 5 servings.

Cheesy Ham Casserole

1 8-oz. jar Processed cheese spread melted
3/4 c. milk
1 24-oz. pkg. frozen hash brown potatoes, thawed and drained (4 cups)
1 16-oz. pkg. frozen vegetable medley, thawed and drained
2 c. diced cured A-1 ham
1 large onion chopped, about 2 cups
pepper to taste
1 c. shredded cheddar cheese
1 c. buttered cracker crumbs

Preheat oven to dg350.

In large bowl combine melted cheese spread and milk. Add potatoes,
vegetables, ham and onions. Add pepper and mix well.

Spread mixture in 13- by 9-inch baking pan. Cover. Bake 45 minutes,
stirring occasionally. Uncover. Sprinkle cheese and cracker crumbs
over top. Bake an additional 5 minutes or until cheese melts and
cracker crumbs are golden.

Serves six.

Farmer's Casserole

3 c. frozen hash brown potatoes
3/4 c. shredded Monterey Jack cheese with jalapeano peppers or
shredded cheddar cheese
1 c. diced, fully cooked ham or Canadian Bacon
1/4 c. sliced green onions
4 beaten eggs, or 1 cup frozen egg product
1 12-oz. can evaporated milk or evaporated skim milk
1/4 tsp pepper
1/8 tsp salt

Grease 2-quart square baking dish. Arrange potatoes evenly in bottom
of dish. Sprinkle with cheese, ham and green onions.

In medium mixing bowl combine eggs, milk, pepper and salt.

Pour egg mixture over potato mixture in dish. Casserole may be
covered and refrigerated several hours or overnight.

Bake uncovered in dg350 oven for 40-45 minutes or 55-60 minutes if
made ahead and chilled. Let stand 5 minutes before serving. Makes 6
servings.

Sausage and Egg Casserole

3/4 lb. bulk pork sausage
10 eggs
1 c. milk
3/4 tsp salt
6 oz. shredded sharp cheddar cheese
1-1/2 c. garlic-onion flavored croutons

Brown sausage over medium heat. Drain fat. Place sausage in greased
2-quart casserole dish. In bowl beat egg, stir in milk, salt and
cheese. Pour egg mixture over sausage. Sprinkle with croutons. Bake
uncovered in a dg325 oven about 45 minutes. Let stand 5 minutes before
serving.

Makes 8-10 servings.

Morning Sherri, and to the group,
 Yes I been somewhat busy here. I been taking a lot of bus  trips lately. 
This is my first Sat. off in awhile. 
 
We had to take Ashlee back to Iowa City for another follow up from  her 
surgery in Aug. They tell us that it has not healed 100% to go back in to  redo 
her 
bone graft. So they have rescheduled her on Feb. 26th. Every  surgery I pray 
for it to be her last one, then they tell us,, one  more.
 Bryce had teeth problems lately as well,, now he needs two  root canals 
done, they start them next week! I tell ya when it rains it pours on  us! 
 Been getting pretty cool here in Iowa, I had to turn on my  furnace Weds. 
evening, with all the rain we been getting and the cold in the  air, I had to 
break down and turn her on. Today is suppose to be in the 50's. I  plan on 
doing 
some baking this weekend, that will warm it up in here. 
 I hope everyone is doing great here and will have a super  safe weekend as 
well.

Cheese Enchiladas

1 large onion chopped, (about 1 cup)
2 large cloves garlic, crushed
1 tbsp chili powder
2 tbsp vegetable oil
1 28-oz. can whole tomatoes
1 tsp ground cumin
1 tsp dried oregano leaves
1 tsp salt
1/8 tsp pepper
1-1/2 c. shredded Cheddar cheese
1-1/2 c. shredded Monterey Jack cheese
1/2 c. vegetable oil
1 9-oz. pkg. 6-8 inch corn tortillas (12 tortillas)
1-1/2 c. shredded lettuce
1/3 c. sliced radishes
1/2 c. sliced ripe olives

Cook and stir onion, garlic and chili powder in 2 tablespoons oil, in
3-quart saucepan until onion is tender--about 5 minutes. Stir in
tomatoes, cumin, oregano, salt and pepper. Break up tomatoes with
fork. Heat to boiling; reduce heat. Simmer, uncovered, until sauce
thickens, about 30 minutes.

Combine Cheddar and Monterey Jack cheeses. Heat 1/2 cup oil in 8-inch
skillet until hot. Dip each tortilla lightly into hot oil to soften;
drain. Dip each tortilla into tomato sauce to coat both sides. Spoon
about 2 tablespoons cheese onto each tortilla; roll tortilla around
cheese. Place seam side down in ungreased 13 by 9 baking dish. Pour
remaining sauce over enchiladas; sprinkle with remaining cheese. Bake
at dg350 until cheese is melted and enchiladas are hot--about 20
minutes. Top each serving with lettuce, radishes and olives.

Makes 6 servings--2 enchiladas per person.

I revamped my mother's potato salad recipe to taste more like baked  potatoes 
with all the fixin's, which I love. It's now the most requested dish at

1 teaspoon salt
1/2  teaspoon pepper
8 hard-cooked eggs, chopped
1 pound sliced bacon, cooked  and crumbled
2 cups (8 ounces) shredded cheddar cheese
1 sweet onion,  chopped
3 dill pickles, chopped
1-1/2 cups (12 ounces) sour cream
1 cup  mayonnaise
2 to 3 teaspoons prepared mustard 
 
Directions: 
Place the potatoes in a greased 15-in. x 10-in. x 1-in.  baking pan; sprinkle 
with salt and pepper. Bake, uncovered, at 425° for 40-45  minutes or until 
tender. Cool in pan on a wire rack. 
In a  large bowl, combine the potatoes, eggs, bacon, cheese, onion and 
pickles. In a  small bowl, combine the sour cream, mayonnaise and mustard; pour 
over 
the potato  mixture and toss to coat. Serve immediately. Yield: 20 servings.

Nacho Casserole

3/4 c. quick cooking rice, uncooked
1 lb. ground turkey or lean ground beef
1 17-oz. can Del Monte Whole Kernel Golden Sweet Corn, drained
1 14-1/2 oz. can Del Monte Mexican Style Stewed Tomatoes
1 1-1/4 oz. taco seasoning mix
1/4 c. water
1 c. broken tortilla chips
1-1/2 c. shredded cheddar cheese

In lightly greased 2-quart baking dish spread uncooked rice in bottom.

In skillet, brown meat; drain. Stir in corn, tomatoes, taco seasoning
mix and water. Mix well. Spoon meat mixture over rice. Cover and bake
at dg350 25 min. Top with tortilla chips then cheese. Bake 5 min. more
until cheese is melted.

Makes 4 servings.

Ham and Potato Scallop

5 c. thinly sliced pared potatoes
1 sliced, cooked, ready to eat, smoked ham 1/2 inch thick
1 can cream of mushroom soup
1/4 c. milk
1/2 c. chopped onion
1/4 c. chopped green pepper
1/2 tsp salt
Dash pepper
Butter or margarine

Place potatoes in a greased 1-quart casserole dish. Cut ham in
serving pieces and bury in potatoes. Combine soup, milk, onions, green
pepper and seasonings; pour over potatoes, dot with butter. Cover and
bake at dg350 for 1 hour. Remove cover, bake 45 minutes longer or
until done. Before serving, fork ham to top. Makes 6 servings.

Pre-heat oven to 375 degrees.  Drop dough by rounded tablespoons onto greased
cookie sheets. Small ice  cream scoop is  ideal. Leave space for cookies to
spread.
Bake  10-15 minutes.

Check cookies after 10 minutes. Push down with back of a  spoon, as they tend
to mound a bit. 

They are done when they turn a  little golden and the middle springs back
when lightly poked. Let cool  while making glaze.

TO MAKE THE GLAZE: Stir water in to powdered sugar.  Add just enough water to
make a spreadable glaze.
Spread glaze on top of  cooled cookies, and let set.
Makes about 45 cookies.

Sausage Brunch Souffle

1-1/2 lb. seasoned pork sausage (Bob Evans)
6 slices white bread with crusts, cubed
6 eggs
2 c. milk
1 tbsp dry mustard
1 c. shredded cheddar cheese

Brown sausage. Drain.

Place bread cubes in greased 12 by 8 inch baking dish.

Slightly beat eggs. Add remaining ingredients along with sausage.
Pour over bread cubes. Evenly distribute mixture pushing down to coat
all bread.

Cover and chill several hours or overnight. When ready to serve, bake
at dg350 40-45 minutes or until lightly browned and mixture is set.

Makes 6 servings.

  Yes I been somewhat busy here. I been taking a lot of bus  trips lately.
 This is my first Sat. off in awhile.

 We had to take Ashlee back to Iowa City for another follow up from  her
 surgery in Aug. They tell us that it has not healed 100% to go back in to

 bone graft. So they have rescheduled her on Feb. 26th. Every  surgery I pray
 for it to be her last one, then they tell us,, one  more.
  Bryce had teeth problems lately as well,, now he needs two  root canals
 done, they start them next week! I tell ya when it rains it pours on  us!
  Been getting pretty cool here in Iowa, I had to turn on my  furnace Weds.
 evening, with all the rain we been getting and the cold in the  air, I had
 to
 break down and turn her on. Today is suppose to be in the 50's. I  plan on
 doing
 some baking this weekend, that will warm it up in here.
  I hope everyone is doing great here and will have a super  safe weekend as
 well.

German Potato Pie

3 eggs, beaten
1 cup milk, hot
6 tablespoons margarine, melted
2 teaspoons salt
1/3 cup onion, chopped fine
6 to 8 potatoes, large

Preheat oven to 350 F. Grease an 8 X 12 inch baking dish. Beat together 
eggs, milk, margarine, salt and onion. Peel and grate the potatoes quickly 
(to avoid discolouration). Add to the egg mixture and stir to coat all 
pieces of potato. Pour into the prepared dish. Bake about 1 hour 20 minutes, 
until set. Cut into squares and serve.

Layered Broccoli Wild Rice Casserole

3 tbsp unsalted butter or margarine
1/2 medium yellow onion, finely chopped
2 tbsp flour
1-1/2 c. milk
1/2 c. sour cream
4 c. hot cooked wild rice, white rice, or a mixture of the two
1/2 tsp salt to taste
1/4 tsp black pepper
1 lb. broccoli trimmed and halved lengthwise
1 c. shredded Cheddar cheese
6 slices bacon, cooked, drained and crumbled, optional

In heavy 10-inch skillet over moderate heat, melt butter. Add onion,
saute, stirring occasionally, until soft, about 5 minutes. Blend in
flour and cook, stirring 2 minutes. Gradually stir in milk and bring
to a boil then reduce heat to low. Simmer, stirring 3-4 minutes or
until thickened and smooth. Remove from heat, blend in sour cream and
stir mixture into rice. Stir in salt and pepper.

Steam broccoli until just tender, about 4 minutes. Refresh under cold
water and pat dry.

Layered half the rice mixture in a buttered 2-quart baking dish,
preferably clear. Arrange half the broccoli, cut side down. Add second
layer of the remaining rice mixture. Arrange remaining broccoli on
top. Sprinkle cheese and bacon on top. Cover tightly with aluminum
foil. Bake at dg350 20 minutes. Uncover and bake an additional 10
minutes. Do not overcook or rice will soak up too much moisture.

Makes 6 servings.

to $10 million. Morgan filed for bankruptcy in 1992 but later withdrew the

2 cups  Cooked corn
1/2  lb.   Salt pork
2 large  Onions, sliced
3  cups   Potatoes, boiled and diced
4 cups   Hot  whole milk
2 cups   Boiling water
Salt and pepper to  taste

1. Cut pork into 1/2 inch dice; add onion and cook slowly  5-10
minutes, stirring until transparent but not browned.
2. Add corn,  potatoes, hot milk and boiling water.
3. Season to taste and serve hot with  fry bread

Butternut-Turkey Casserole
6 servings

1 butternut squash (about 2 lbs.)
3/4 cup minced onions
2 tbsp. butter
2 cups toasted croutons
1/2 tsp. poultry seasoning
1/2 tsp. salt
Freshly ground black pepper
1 cup chicken broth
2 cups cooked diced turkey or chicken
1/2 cup shredded Cheddar cheese

Preheat oven to 350*. Grease a 1 1/2 qt. casserole.

Cut squash in half lengthwise and discard seeds. Bake, cut side down, in a
baking dish for 50 to 60 min., until squash is tender. Scoop out pulp and
mash.

Saute onions in butter. Add croutons, poultry seasoning, salt, and pepper to
taste. Add broth, mashed squash, and turkey. Place mixture in the casserole.
Bake for 20 min. Sprinkle Cheddar on top and return to oven until cheese is
melted.

California Turkey Casserole 
Leftover turkey or chicken 
1 box chicken or turkey stuffing mix 
8 slices mozzarella cheese 
2 small boxes frozen chopped broccoli 
1 can cream of celery soup 
1 can cream of chicken soup 
1/2 can water 
Salt and pepper to taste 

Lightly grease 13-by-9-inch baking pan. Cover bottom of pan with 
turkey or chicken. 

Layer in the following order: turkey, prepared stuffing mix, cheese, 
broccoli. 
Mix both cans of soup with 1/2 can water. Pour over top all ingredients. 
Bake at 350 degrees for 30 minutes. Let sit 10 minutes before serving.

Comfort Turkey Casserole

10 ounces cooked turkey, cut into 1/2-inch chunks (2 cups)
1 can (15 ounces) black beans, rinsed and drained
1 can (10 3/4 ounces) condensed cream of chicken soup
1 soup can milk
1 can (4 1/2 ounces) chopped mild chilies
4 scallions, thinly sliced
10, 6-inch corn tortillas (from a 6 1/2-ounce package), torn into large
pieces
2 cups shredded sharp Cheddar cheese

Preheat oven to 350°F.

In large bowl, stir together turkey, beans, soup, milk, chilies and 
scallions
until well blended.

In 9x13 inch glass baking dish, scatter 1/3 of tortillas and 1/3 of cheese.
Evenly spoon over half the turkey mixture, then another third of tortillas 
and
cheese. Add remaining turkey mixture, spreading to edges. Scatter remaining
tortillas and then remaining cheese over top.

Bake, uncovered, until hot and bubbly, 1 hour. Let stand 10 minutes before
serving.

Makes 6 servings.

1- 10 oz. pkg. frozen peas  carrots, cooked, drained
5 oz. spaghetti, cooked, drained
1 T. chopped chives

Heat oven to 350ºF. Combine milk  salad dressing; add Velveeta. Heat
over low heat, stirring until sauce is smooth. Add remaining
ingredients; mix well. Pour into 2 quarts casserole; bake at 350ºF
for 35-40 minutes.

Serves 6-8

1-10.5 oz. can cream of potato soup
1 c. milk
1/4 t. crushed, dried thyme leaves
1/8 t. pepper
2 c. cooked, cut up green beans
2 c. cooked, cut up sliced carrots
2 c. cubed, cooked turkey
4 c. prepared herb seasoned stuffing
Combine soups, milk, thyme, pepper, veggies and turkey in a shallow, 3-
quart baking dish. Top with prepared stuffing. Bake at 400° for 25
minutes or until hot. Serves 5.

Creamy Turkey Mushroom Casserole

6 slices bacon
3/4 cup chopped onion
1/2 cup chopped celery
1/4 cup chopped green pepper
1 (4oz) can mushrooms
1 can condensed cream of celery soup
1 cup dairy sour cream
1/2 cup shredded cheddar or American cheese
3 cup cut up cooked turkey or chicken
1/4 tsp. salt
1/8 tsp. pepper
2 cups Bisquik baking mix
1/2 cup milk
2 eggs

Heat oven to 350F.  Grease 2 quart round casserole
Fry bacon in skillet until crisp; remove from skillet and crumble
Cook and stir onion, celery, green pepper, and mushrooms in bacon fat until
tender; drain if necessary
Stir in soup, sour cream, turkey, salt, pepper and bacon; heat until bubbly.
Spread in casserole. Mix remaining ingredients just until moistened; spread
over turkey mixture. Bake, uncovered until golden brown, 30-35 minutes
Makes 4 Servings

3 cups cut-up cooked turkey
1 cup grated Parmesan cheese
  Buttered Crumbs (below)

1.  Heat oven to 400ºF.
2.  Heat Pasta, Sauce Mix and hot water to boiling in 3-quart
saucepan, stirring constantly; remove from heat. Stir in turkey and
cheese. Pour into ungreased 3-quart casserole. Sprinkle with
Buttered Crumbs.
3.  Bake uncovered about 30 minutes.

GROUND TURKEY CASSEROLE   

1 lb. ground turkey
1 can tomatoes or tomato sauce
3 c. cooked macaroni
12 oz. shredded cheese
Salt  pepper to season
Approx. tbsp. chili powder

Cook macaroni as usual, drain and set aside. Brown the
meat and stir in the tomatoes and seasoning to taste,
stir in macaroni and simmer a few minutes, put in a 2
quart casserole dish adding about three fourths of the
cheese and mix, bake in 350 degree oven for
approximately 45 minutes then take out of oven and add
the last of the cheese on top and return to oven for
about 5 minutes. Serve hot or cooled it is a very
tasty dish.

Pumpkin Bars 
2 c. sugar
1/2 c. vegetable oil
16 oz. pumpkin (fresh or canned)
4 eggs, beaten
2 c. Bisquick
2 tsp. ground cinnamon
1/2 c. raisins (optional)
Cream cheese frosting 
Heat oven to 350 degrees. Grease 15 1/2 x 10 1/2 x 1 inch jelly roll
pan. Beat sugar, oil and eggs in large mixer bowl on medium, 1 minute.
Stir in baking mix, cinnamon and raisins. 
(Scrape sides of bowl.) Pour into pan. Bake 25-30 minutes until center
is set; cool. Frost with cream cheese frosting. Cut into bars, 2x1 inch. 
Refrigerate any remaining (50 bars).

Eggplant Supreme with Meat Sauce 
1 eggplant
1 c.bread crumbs
1 c. grated cheese 
Peel and slice eggplant in 12 slices. Lay 6 slices in greased casserole.
Add 1/2 of meat sauce and 1/2 of grated cheese; sprinkle with bread
crumbs. 
Add remaining eggplant, cover with meat sauce, rest of cheese and bread
crumbs. Bake at 375 until tender. 
Meat Sauce 
1 lb. ground beef
1/2 c. celery; chopped
1/2 c. onion; chopped
1/2 c. green pepper; chopped
2 c. canned tomatoes
1 tsp. Worcestershire sauce
1/4 tsp. salt 
1 clove garlic, minced (or garlic powder) 1/4 tsp. chili powder 
Brown meat; add celery, onion and green pepper. Cook 5 minutes. Add
tomatoes and seasonings. Cover and simmer for 30 minutes.

Easy Fudge with Variations 
1 can sweetened condensed milk
1 ounce unsweetened baking chocolate
12 ounces semisweet chocolate chips
1 teaspoon vanilla
1 1/2 cups walnuts -- chopped 
Butter an 8-inch square pan. Heat milk and chocolates over low heat,
stirring constantly until melted and smooth. Remove from heat, stir in
vanilla and nuts. Spread in pan. Refrigerate until firm and cut in
1-inch squares. Makes 64 pieces. 
NOTES : Very smooth and dark. Does not become grainy or sugary. 
Variations: 
Almond Roca Fudge: Stir in 3/4 cup Almond Brickle chips instead of nuts,
sprinkle 2 Tablespoons Brickle chips on the top. 
Mounds fudge: Stir in 1 cup coconut instead of nuts. 
Rocky Road Fudge: Stir in 1 cup miniature marshmallows and 1/2 cup
peanuts instead of the nuts. 
Milk Chocolate Fudge: Use milk chocolate chips instead of semisweet
chips. 
Reese's Peanut Butter Cup Fudge: Use chocolate flavored Eagle milk, 10
oz. package peanut butter chips instead of plain Eagle milk and
chocolate chips. 
When melted, add 1/2 to 3/4 cup peanut butter with the vanilla. May use
either smooth or chunky peanut butter and may add chopped peanuts if
desired.

4 oz. green chilies, diced 
1/4 lb. butter, softened to room temperature 1 cup mayonnaise 
1/2 lb. jack cheese, grated
2 loaves French bread, small diameter
Parsley sprigs 
In medium bowl, mix chilies, butter, mayonnaise and cheese until well
blended. Slice French bread into thin slices and spread amply with the
cheese mixture. Make sure to completely cover the bread. 
Put bread slices on ungreased cookie sheet in preheated broiler and
broil about 5 to 10 minutes until spread is bubbly. Serve on large
serving plate garnished with parsley sprigs.Serves 10 to 12

Savory Steak Rub

1  tablespoonDried marjoram
1  tablespoonDried basil
2  teaspoons Garlic powder
2  teaspoons Dried thyme
1  teaspoon  Dried rosemary -- crushed
3/4  teaspoon  Dried oregano

Combine all ingredients; store in a covered container.
Rub over steaks before grilling or broiling. Will season four to five steaks.  
Enjoy.

   Yes I been somewhat busy here. I been taking a lot of bus trips lately. This 
is my first Sat. off in awhile. 

  We had to take Ashlee back to Iowa City for another follow up from her 
surgery in Aug. They tell us that it has not healed 100% to go back in to redo 
her bone graft. So they have rescheduled her on Feb. 26th. Every surgery I pray 
for it to be her last one, then they tell us,, one more.
   Bryce had teeth problems lately as well,, now he needs two root canals done, 
they start them next week! I tell ya when it rains it pours on us! 
   Been getting pretty cool here in Iowa, I had to turn on my furnace Weds. 
evening, with all the rain we been getting and the cold in the air, I had to 
break down and turn her on. Today is suppose to be in the 50's. I plan on doing 
some baking this weekend, that will warm it up in here. 
   I hope everyone is doing great here and will have a super safe weekend as 
well.

  SWEDISH PANCAKES (Platter)   

  2 eggs
  2 1/2 c. milk
  2 c. flour (enriched, all-purpose)
  1 tsp. salt
  2 tbsp. sugar
  2 tbsp. oil (Crisco or other vegetable)

  Sift dry ingredients together. 
  Beat eggs until light and fluffy. Add milk alternately with dry 
ingredients, a little at a time. Add oil and mix thoroughly. Let stand at room 
temperature for 2-3 hours or in the refrigerator, overnight. 

  To make pancakes: Preheat a cast iron, 6 inch skillet or a Swedish 
plattpan, with several circular indentations. Skillet will be ready when a 
drop of water sizzles on it and a pat of butter will melt, but not burn. 

  Grease skillet or plattpan lightly with butter. Pour enough batter onto 
pan to completely cover the flat surface. After about 1-2 minutes, check to see 
if pancake can be turned over by gently loosening edge all around with a small 
metal spatula. If lightly browned underneath, pancake may be turned over. 

  Repeat until all batter is used. Keep finished pancakes warm in a 200 
degree F. oven. 

  Serve with Swedish lingonberries or other favorite preserves, or a 
sprinkling of sugar.

  AUTHENTIC SWEDISH MEATBALLS   

  Sauté 3 tablespoons of finely chopped onion in 1 tablespoon of butter.

  Mix together with:

  1/2 lb. each veal and pork (preferably ground together)
  1 cup half and half cream
  1 cup bread crumbs
  2 eggs
  1 tsp. salt
  1/2 cup ketchup or tomato sauce
  1/2 tsp. pepper
  1/2 tsp. allspice
  2 tablespoons chopped parsley, fresh or dried


  Mix all together thoroughly and refrigerate for several hours before 
using (very important). 
  Form small round balls no larger than the end of your thumb. Fry in a 
little butter until brown. Shake skillet constantly to keep meatballs round. 

  Place the browned meatballs in a covered casserole in and bake at 325°F 
to 350°F degrees for 30 minutes. 

  These are delicious and have a very special flavor.

SWEDISH LIMPA 

   Yield: 2 loaves
  
   1 pk Yeast, dry
   1 ts Sugar, granulated
 1/2 c  ;Water, warm (100 F.)
   2 c  Beer; heated to lukewarm
 1/2 c  Honey; to 1/2 cup
   2 tb Butter; melted
   2 ts Salt
   1 ts Cardamom, ground (opt)
   1 tb Caraway seeds; crushed, or
 3/4 ts Aniseed; crushed
   2 tb Orange peel, fresh or
-candied; chopped
   2 1/2 c  Flour, rye
   3 c  Flour, unbleached
  
   Dissolve the yeast and sugar in the water in a large
   bowl and proof for five minutes.  Combine the beer,
   the honey (adjust for how sweet you like your bread)
   butter, and salt, and stir well.  Add to the yeast
   mixture. Add the spices and orange peel.  Mix the
   flours, then add three cups of this mixture to the
   liquid and beat briskly.  Cover with a tea towel, and
   let rise in a warm, dark place for about an hour.
   Stir down and add enough of the remaining flour to
   make a pretty stiff but still sticky dough. Turn out
   on a very well-floured board, and work the dough until
   it is smooth and elastic.  Add more flour to the board
   as needed. While the dough will not lose its tackiness
   completely it will smooth out a lot. Shape it into a
   ball, oil the surface, and place in an oiled bowl.
   Cover with the tea towel again and let rise a second
   time, about one hour. Punch down, shape into two
   balls, and put on a greased baking sheet sprinkled
   with cornmeal. Brush with melted butter, cover loosely
   with waxed paper, and refrigerate for three hours.
   Remove from the fridge and let sit on the counter,
   uncovered, for ten to fifteen minutes. Bake in a 375
   F. oven until the bread sounds hollow when tapped on
   the bottom; about 40 to 45 minutes. Cool before
   slicing.  Enjoy.

  SLOW BAKED CHICKEN WINGS   

  5 lb frozen chicken wings
  10 oz. soy sauce
  1/2 cup brown sugar
  1/2 cup white sugar
  2 tablespoons molasses or honey
  1/8 teaspoon (or to taste) cayenne pepper (optional)
  5 cloves garlic, peeled
  fresh ginger, 1 inch piece, peeled

  In a blender, combine soy sauce, sugar, molasses or honey, cayenne 
pepper, garlic and ginger. 
  In a disposable aluminum 10x12 inch pan (or a regular pan lined with 
foil), pour blended mixture over the still-frozen chicken wings. 

  Place on center oven rack and bake at 250°F for 2 - 2 1/2 hours, turning 
and basting every 30-40 minutes. When wings are done they will be tender. 
Remove from sauce and serve immediately or keep warm in a Crock-Pot.

7 c. flour

Dissolve yeast in 1/2 cup lukewarm water. Scald milk and butter, cool to 
lukewarm, then add yeast mixture, sugar and salt. Mix well. Add well-beaten 
eggs. Add enough flour to make a stiff dough and knead. Put in warm place to 
rise. 
When double in bulk, knead again. Let rise until very light. Take small pieces 
of dough and roll into long strips. Form them into figure eight. Let rise again 
and bake until brown. Dip at once in boiling water.

The Nail

 

As the story goes, they built a new church building and

people came from far and wide to see it. They admired

its beauty! Up on the roof, a little nail heard the people

praising everything about the lovely structure - except

the nail! No one even knew he was there, and he became

angry and jealous.

 

If I am that insignificant, nobody will miss me if I quit!

So the nail then released its hold, slid down the roof,

and fell in the mud.

 

That night it rained and rained. Soon, the shingle that

had no nail blew away, and the roof began to leak.

The water streaked the walls and the beautiful murals.

The plaster began to fall, the carpet was stained, and

the pulpit Bible was ruined by water. All this because

a little nail decided to quit!

 

But what of the nail? While holding the shingle, it was

obscure but it was also useful. Buried in the mud it was

just as obscure, but now it was useless and would soon

be eaten up by rust!

 

The moral of the story - EVERY MEMBER IS IMPORTANT

TO THE CHURCH! You may, like the nail, feel obscure at

times, but just like the nail, your absence is felt. When you

are not present for worship, in some way the body of Christ hurts. We are ALL

a part of the Lord's ministry.

Barbecued Pork Steaks

  4 Armour Premium Pork Tenderloin -- 
 3/4-inch thick
  1/2  cup bottled barbecue sauce
  1/3  cup honey
  1 Tablespoon Worcestershire sauce
  1 teaspoon garlic salt
  1/2  teaspoon prepared mustard

Brush or wipe your GFG with cooking oil 
and preheat. Please, do not use an aerosol 
(can) spray. Your grill will last a lot longer, 
and will thank-you for it. Also, by not using 
an aerosol spray you will be doing your part 
to go green, and help the environment.


Stir together all ingredients except steaks in small 
bowl; mix well. Brush steaks on both sides with the
sauce.

Penn  Teller's Halloween Dessert
Pkg. red Jell-O
Cool whip
Karo syrup
Dark red wine or grape juice 
Penn  Teller made this dessert on a Geraldo show some years ago. Okay,
start off by making some Jell-O, preferably strawberry or cherry or some
other flavor that's naturally red. But, use two to three times as much
Jell-O mix as you normally would, to thicken up the consistency. After
this is mixed, stir in some cool whip, and pour it into your favorite
standard party mold (the dome kind would be good). Get a CLEAN plastic
bag (inside and out) and place in it some Karo syrup. Now add something
like a very dark red wine, or grape juice. What you want is a semi-thick
VERY dark red (opaque) liquid which looks not unlike blood. Starting to
get the picture yet? Okay, now place this bag in the mold, so that the
bag is still floating on top. Keep in mind that you want the Jell-O plus
the bag to completely fill the mold, but have a level surface, as this
thing is going to flip over later on. Put it in the fridge, and allow it
to chill and set. 
When you take it out of the refrigerator, you should decorate it a
little. Try drizzling some chocolate glaze on top and popping a couple
of strawberries or cherries on top of this. Allow to set if necessary,
and then bring it out to your dinner guests. At this point, your dinner
guests will probably be oo'ing and ah'ing over this rather nice dessert
you've brought out to them. Make sure you've got that big pointy butcher
knife in one hand as you set this beauty down on the table. 
Now you get to play Norman Bates: cut into the side of this, making sure
you go deep enough to cut into the bag real wide. As you continue to cut
out a piece of the gelatin mold, the bag will leak into this, and your
bewildered guests will think your dessert is BLEEDING. Not to disappoint
them, cut out one of these bloody pieces of gelatin and plop it down on
a plate. If you're lucky, it will look like a recently-extracted body
organ. 
Yes, this is gross. Yes, you shouldn't bring this to the typical dinner
party. Yes, you probably have to have a *very* warped sense of humor.
But, I laughed quite loudly when I saw this being done by Penn  Teller.
At the very least, it might be fun... for a Halloween party... :-)

Tomato Cakes for Halloween 
1 (14.5 ounce) can peeled and diced tomatoes with juice 1/4 onion,
chopped 
30 saltine crackers, crushed
1 pinch salt and pepper to taste
3 tablespoons vegetable oil 
Place the tomatoes, onion and crackers into a large bowl. Season with
salt and pepper, and mix thoroughly. 
  
Cover, and let stand for about 15 minutes. This will allow the crackers
to soak up the juices from the tomato. The mixture should set up to be a
stiff paste. 
Heat oil in a large skillet over medium-high heat. Form the tomato
mixture into patties, and place in the hot oil. Fry the patties,
flipping only once, until golden on both sides.

Poppyseed Chicken 
2 cups cooked chicken diced
1 can cream of chicken soup
1 1/2 cups sour cream
8 oz. pkg Ritz Crackers, crushed
1/2 cup melted butter
1 Tbls poppyseeds 
Melt butter and add crushed crackers and poppyseeds to make a topping. 
Mix cooked chicken, soup, and sour cream in a bowl. Add 1/2 of the
topping to it. 
Put in baking dish and top it with the remaining cracker topping
mixture. Bake at 350 degrees for 30 minutes.

Onions Baked with Rosemary and Cream 
6 medium yellow onions, with peel
2 cups chicken stock
1 tablespoon extra-virgin olive oil
salt and pepper to taste
3 sprigs fresh rosemary, chopped
1/2 cup heavy cream 
Preheat the oven to 425 degrees F. 
Slice about 1/4 inch off of the tops and bottoms of the onions. Cut in
half crosswise leaving the skin on, and arrange cut side up in a shallow
baking dish. 
Pour the chicken stock over and around the onion halves, then drizzle
with olive oil. Season liberally with salt, pepper and rosemary. 
Bake uncovered for 1 hour or until onion is easily pierced with a knife
and liquid has reduced by 1/2. Remove the dish from the oven, and pour
the cream over the onions. 
Return to the oven, and continue to bake uncovered until the pan juices
have thickened slightly and onions are browned, up to 30 minutes

Mediterranean Salad 
1 bag (16 ounces) lettuce or 1 small head lettuce, torn into bite-size
pieces (6 cups) 1 bag (8 to 10 ounces) fresh spinach, torn into
bite-size pieces 1 small red onion, thinly sliced 
1 can (6 ounces) pitted ripe olives, drained 1/4 cup Italian dressing 
1 jar (6 to7 ounces) marinated artichoke hearts, undrained 1/3 cup Betty
Crocker® Bac~Os® bacon flavor bits or chips 1/4 cup feta cheese,
crumbled 
Toss lettuce, spinach, onion and olives in large salad bowl;
refrigerate. 
Just before serving, toss with dressing and artichoke hearts. Sprinkle
with bacon flavor bits and cheese. 
Makes 8 servings

Swiss Bacon Pleasers 
1 pkg. crescent rolls
4 Swiss cheese slices, grated
4 slices bacon, crumbled
3 eggs
3/4 c. milk
1 tbsp. dry minced onions
1 tbsp. parsley flakes 
Grease and flour two 8 x 8 inch baking dishes. Press 2 crescent
rectangles into bottom and 1 inch up on sides of pan. 
Mix egg, onion and milk. Sprinkle cheese on dough and pour egg mixture
over cheese. Crumble bacon all over. Top with parsley. 
Bake at 425 degrees for 15-18 minutes. Cut in squares. Serve hot.

Coconut Pie 
1 tbsp. plain gelatin
1/4 c. cold water
1/2 c. sugar
4 tbsp. flour
1/2 tsp. salt
1 1/2 c. milk
1 tsp. vanilla
1/2 tsp. almond extract
1/2 c. whipping cream, whipped stiff
3 egg whites
1/4 tsp. cream of tartar
1/2 c. sugar
1 c. shredded coconut 
Soften gelatin in 1/4 cup cold water. Mix next 4 ingredients and cook
over low heat stirring until it boils. Boil 1 minute and remove from
heat. Stir in softened gelatin and let cool. 
Add vanilla and almond flavoring. Next gently fold in whipping cream.
Beat egg whites adding cream of tartar and 1/2 cup sugar. 
Carefully fold into other mixture. Also fold in 1 cup coconut. Chill.
