Peanut Butter Rice Krispie Treats 1 c. Brown sugar 1 c. White Karo 1/2 c. Peanut butter 1 box Rice Krispies Bring Karo and sugar to a boil. Remove from heat and stir in peanut butter and stir until dissolved. Add cereal and stir until mixture is well coated. It will probably take only 1/2 box of cereal. Pour up in buttered pan or drop by spoon on wax paper. Southwestern Macaroni Casserole 1 lb. Ground beef 1 (1-1/4 oz.) pkg. Taco seasoning 1 (15 oz.) can tomato sauce 3 c. Cooked macaroni 1 c. Shredded cheddar cheese 1/4 c. Parmesan cheese 1 (8 oz.) sour cream Brown beef; drain, stir in seasoning mix, tomato sauce, bring to a boil and remove from heat. Combine cooked add drained macaroni; 1/2 cup cheddar cheese and sour cream. Place on bottom of 13x10 dish. Top with meat mixture and remaining cheese. Sprinkle Parmesan cheese on top and bake at 350 degrees for 30 minutes. Chocolate Pudding Cookies 2 1/4 c. Flour 1 tsp. Baking soda 1 c. Butter or margarine, softened 1/4 c. Sugar 3/4 c. Brown sugar 1 (4 oz.) pkg. Instant pudding vanilla or chocolate) 1 tsp. Vanilla 2 eggs 1 (12 oz.) pkg. Chocolate chips Mix flour and baking soda; set aside. Combine butter, sugar, pudding mix and vanilla in large bowl; beat until smooth and creamy. Beat in eggs. Gradually add flour mixture, stir in chips, (batter will be stiff). Drop by rounded teaspoonfuls onto ungreased baking sheet about 2 inches apart. Bake at 375 degrees for 8 to 10 minutes. Peanut Butter Fudge Easy Peanut Butter Chocolate Fudge 1 Package Peanut butter flavored chips (12-ounce) 1 Can Eagle Brand Sweetened Condensed Milk (14-ounce) (Not evaporated) 1/4 Cup Butter or margarine 1/2 Cup Chopped peanuts, optional 1 Package Semi-sweet chocolate morsels (6-ounce) Makes about 2 pounds In a large saucepan, melt peanut butter chips, 1 cup sweetened condensed milk and 2 tablespoons butter; stir occasionally. Remove from heat; stir in peanuts. Spread mixture into waxed paper-lined 8-inch square pan. In a small saucepan, melt chocolate morsels, remaining sweetened condensed milk and butter. Spread chocolate mixture on top of peanut butter mixture. Chill two hours or until firm. Turn fudge onto cutting board; peel off paper and cut into squares. Tightly cover any leftovers. CHICKEN WITH HAM AND CHEESE 1 tablespoon butter 4 chicken breasts, boneless, skinless 1 can (10 oz.) cream of chicken soup 1/2 cup grated Swiss cheese 1/2 cup chopped cooked ham 1/4 cup white wine Melt butter in a large frying pan. Add chicken and cook until browned, About 10 minutes. Remove from pan and set aside. Add chicken soup (undiluted), cheese, ham, and wine to the pan. Cook and stir until it Comes to a boil. Add chicken to the pan. Reduce heat to low, cover and Simmer for about 5 minutes until chicken is cooked through. Serves 4. . MEXICAN PORK CHOPS Makes 4 servings Weight Watcher Points - 4 Points 4 boneless Pork Chips (5 ounces) (I used Schwan's) 1 cup salsa 1 bell pepper 1 cup white onion, chopped Salt and pepper to taste Season pork cops to taste. In a nonstick skillet brown pork chops on both sides. Add salsa, bell pepper and onion. Simmer for 30 minutes. (I have also cooked this in the oven for 30 minutes at 350 degrees. Makes 4 servings Calories 200 Fat 7g Fiber 2g Carbohydrate 7g Cholesterol 60mg Sodium 516mg == Baked Rice Casserole 1-1/2 c. Chopped celery 2 med. Chopped onions 1-1/2 sticks butter 2 sm. Cans mushrooms 2 sm. Bell peppers, chopped 2 sm. Cans water chestnuts 2 lb. Lean pork sausage (spicy) 2 c. Uncooked rice 1 can chicken broth Sauté chopped vegetables. Cook rice. Mix ingredients together. Bake at 350 degrees in covered dish 30-45 minutes. Pork Chop and Green Bean Casserole 6 rib or loin pork chops, 3/4 thick 2 (10 oz.) pkgs. Frozen cut green beans, defrosted 2 cans cream of celery soup 1 c. Milk 1/4 tsp. Salt Brown chops, season with salt and pepper. Mix together beans, soups, milk and 1/4 teaspoon salt. Pour mixture into a 2 quart baking dish. Arrange pork chops on top. Cover and bake in 350 degree oven for 45 minutes or until meat is done. . Yellow Squash Corn Casserole 3 crookneck squash 1 can cream style corn 1/2 cup chopped onion 1 small can green Chiles 1 cup grated Velveeta cheese 1/2 stick butter Salt and pepper to taste 1 egg, beaten 1 cup crushed corn flakes Slice and cook squash in medium sized sauce pan over medium high heat until slightly tender; about 10 minutes. Drain the liquid from the pan and add the cream corn, green Chiles, 1/2 of the cheese, 1/2 of corn flakes and 2 tablespoons of butter. Stir. Pour into greased casserole dish and top with remaining cheese, corn flakes and Drizzle with butter. Bake at 350F for 30 to 45 minutes. Cat Head Biscuits (as big as a cat's head) 2 cups of flour 1/4 teaspoon of baking soda 2 teaspoons of baking powder 1 teaspoon of salt 5 tablespoons of lard or shortening About 1 cup of buttermilk Sift the dry ingredients together and cut in the lard or shortening. Add enough buttermilk to make a soft dough. Pinch off about a lemon sized ball of dough for each biscuit and pat out with your hands. Bake for 12 – 15 minutes at 450 degrees or until the tops are golden brown. Remove the biscuits from the oven and rub butter on the tops of the hot biscuits to coat. Some Of The Different Ways We Eat Cat Head Biscuits: In the South, the infamous Cat Head biscuit was and still is used in a great number of ways. In fact this versatile bread can easily be eaten in different ways with every meal. Here are just a few ways I remember eating them: Aside from the usual biscuit filled with various homemade jams and jellies, we would sometimes eat them hot from the oven, filled with a generous amount of brown sugar and butter. The butter melts over the brown sugar and creates a breakfast food that no store-bought brown sugar and cinnamon toaster pastry can even touch. Split open or torn into small pieces and smothered with one of the delicious southern gravies such as Chocolate Gravy, Sausage Gravy, Tomatoes Gavy or one of the homemade Fruit Jams. Not much in the world of food is as good as a sandwich made out of a big homemade biscuit with a large slice of a ripe, red tomato and a little salt or with a slice of pork tenderloin or ham. Cat Head biscuits make great desserts when covered with your favorite berries, ice cream, and whipped cream. This is a very easy way to make a wonderful strawberry shortcake. Another way I remember eating them was to cream butter and honey or butter and molasses together and spread over the hot biscuits. Try some for yourself and you will find that the biscuit is one of the most versatile and delicious foods ever to come out of your oven. Chicken Patties 6 cups of chopped, cooked chicken 1/4 tablespoon of butter 1 tablespoon of chopped onion 1/3 cup of flour 2 cups of milk 2 teaspoons of salt 1/4 teaspoon of black pepper Brown the onion in butter and stir in the flour, salt, and pepper. Pour in the milk and cook until kind of bubbly. Remove from heat and mix with the chopped chicken in a shallow bowl. Cover and put in refrigerator over night. Remove from the refrigerator and shape into patties. Beat 3 eggs and dip patties in the eggs. Chill for 15 minutes and fry in hot oil until golden brown. TASTE THE CARIBBEAN This Caribbean dinner calls for the popular island ingredients of rum, black beans, rice and pork. Rum mixed with brown sugar and mustard makes a perfect glaze for pork. Pork tenderloin is low in fat and cooks quickly, but you could use spare ribs if you prefer. Flatten the pork tenderloin to about 2 inches thick for faster cooking. Try not to overcook the tenderloin; it has very little fat and will dry out quickly. Boil rice like pasta in a pot large enough to let the grains roll freely in the boiling water. This method gives fluffy rice every time. Any type of rum can be used. You can buy miniature bottles or splits of rum, if you don't have any on hand. One medium garlic clove, crushed, can be used instead of minced garlic. RUM GLAZED PORK 3/4 pound pork tenderloin 1/4 cup brown sugar 1/4 cup rum 4 teaspoons Dijon mustard Preheat broiler. Pound pork to 2 inches thick with the palm of your hand or the back of a heavy skillet. Line baking sheet with foil. Place pork on sheet and broil 5 inches from heat 5 minutes. Turn and broil 5 minutes. Pork is done when meat thermometer reads 160 degrees. Meanwhile, mix together brown sugar, rum and mustard. Bring to a boil and simmer 1 minute. Or heat in a microwave on high for 2 minutes or until sauce is hot. Slice pork and spoon sauce over top. Makes 2 servings. BLACK BEAN AND RICE SALAD 1/2 cup long-grain, white rice 2 tablespoons diced red onion 1 teaspoon minced garlic 1/4 cup reduced fat vinaigrette 1 cup rinsed and drained canned black beans 1/2 cup chopped fresh cilantro Salt and freshly ground black pepper Bring a large pot with 2 to 3 quarts of water to a boil. Add rice and boil, uncovered, about 10 minutes. Test a grain; rice should be cooked through, but not soft. Drain into a colander in the sink. Place in a bowl. Meanwhile add onion and garlic to the dressing. Add to rice with the beans and cilantro and toss with a fork. Add salt and pepper to taste. Makes 2 servings. Catfish With Bacon And Horseradish Sauce 3 catfish fillets (flounder or other fish can be used) 4 strips of bacon 1 – 8 ounce package of cream cheese, softened 1/4 cup of chopped onion 2 tablespoons of butter 1/4 cup of dry white wine 2 tablespoons of horseradish 1 tablespoon of Dijon mustard 1/2 teaspoon of salt 1/2 teaspoon of black pepper 2 tablespoons of minced parsley Fry the bacon until crisp, drain and set aside. Place the fish fillets in a buttered baking dish. Fry the onions in butter until soft. Then in a small bowl blend the cream cheese, white wine, horseradish, mustard, salt, and the black pepper with the onions. Pour the onion mixture over the fish fillets and top with the crumbled bacon. Bake at 350 degrees for 30 minutes or until the fish flakes easily with a fork. Garnish with the parsley. Old-Fashioned Tomato Gravy 1/2 pound of diced bacon 1 small onion, chopped 2 tablespoons of flour 1/8 teaspoon of salt A pinch of black pepper 1 - 14 1/2 ounce can of diced tomatoes, undrained 3 cups of tomato Juice In a skillet, fry the bacon until crisp and place on paper towels to drain. Discard all but 2 tablespoons of the bacon drippings and cook the chopped onion in drippings until tender. Stir in the flour, salt and black pepper and cook, over low heat, stirring constantly until the mixture is golden brown. Gradually add the tomatoes and tomato juice and stir well. Bring the mixture to a boil over medium heat and cook, stirring constantly for about 2 minutes. Reduce the heat and simmer, uncovered, for 15 to 20 minutes or until the gravy becomes thickened, stirring occasionally. Ground Beef And Corn Casserole 1 1/2 pounds of lean ground beef 1 cup of chopped onion 1 - 12 ounce can of whole kernel corn, drained 1 can of cream of chicken soup 1 can of cream of mushroom soup 1 cup of sour cream 1/4 cup of chopped pimiento 3/4 teaspoon of salt 1/4 teaspoon of black pepper 3 cups of noodles, cooked and drained 3 tablespoons of butter, melted 1 cup of soft breadcrumbs Brown the ground beef; add the onion and cook until tender, but not brown. Add the corn, soup, sour cream, pimiento, salt, and pepper. Mix well; then stir in the cooked noodles. Taste and add more seasoning if needed. Pour into a 2-1/2 quart casserole dish. Add the melted butter to the breadcrumbs and sprinkle over top of the casserole. Bake at 350 degrees for 30 minutes or until hot. Cabbage With Mustard-Horseradish Sauce 1 small head of cabbage quartered 2 tablespoons of finely chopped onion 2 tablespoons of butter or margarine 1 tablespoon of all-purpose flour 2/3 cup of evaporated milk 1 tablespoon of prepared mustard 2 teaspoons of prepared horseradish 1/4 teaspoon of salt A dash of black pepper Water Cook the cabbage in salted, boiling water for 10 to 12 minutes and drain well. In a small saucepan cook the onion in the butter or margarine until tender. Blend in the flour, 1/4 teaspoon of salt, and a dash of black pepper. Add the milk and 1/2 cup of water. Cook stirring constantly until thickened and bubbly. Stir in the mustard and horseradish. Spoon the sauce over the cabbage. Potato and Sausage Soup 1/2 gallon of diced potatoes 1 pound of pork sausage 2 cups of whole milk 2 to 3 tablespoons of flour Salt and Black Pepper to taste Wash, peel, and dice the potatoes into a large pot. Cook the potatoes with the salt and black pepper and enough water to cover the potatoes. While the potatoes are cooking, crumble the sausage and fry until done. When the potatoes are tender add the sausage and grease and about 1 1/2 cups of the milk to the pot and bring the potato mixture to a boil. Mix the flour with the remaining 1/2 cup of milk and pour into the potatoes. If desired add more salt and black pepper to taste. Continue to cook the potatoes until the soup is the desired thickness. Hummingbird Cake 3 cups of plain flour 2 cups of sugar 1 teaspoon of baking soda 1 teaspoon of salt 1 teaspoon cinnamon 2 cups of chopped pecans 1 1/2 cups of vegetable oil 3 eggs 1 1/2 teaspoons of vanilla 1 – 8 ounce can of crushed pineapple 3 bananas, mashed Place all of the dry ingredients in a large bowl. Add all of the other ingredients and stir until mixed well. Do not beat. Pour into a greased and floured tube pan. Bake at 325 degrees for 1 hour and 15 minutes. Remove from the oven and allow to cool in the pan. For The Frosting: 1 – 4 ounce package of cream cheese (at room temperature) 1/2 stick of butter 1 teaspoon of vanilla 1/2 box of 10X powdered sugar Mix all of the frosting ingredients together and beat by hand until smooth and creamy. Spread over the cooled cake. Did You Know? You can remove the odor of onions or garlic from your hands by rubbing moistened salt on your hands and then rinsing with warm water and soap. Coconut Cream Pie 2 1/2 cups of milk 2 egg yolks 1/4 cup of heavy cream 4 tablespoons of cornstarch 2 tablespoons of butter, softened 2 teaspoons of vanilla 1 1/2 cups of flaked coconut 1 baked pie shell Whisk milk, egg yolks and cream together. Mix sugar and cornstarch in heavy sauce pan. Mix in the yolk mixture and cool over medium heat, stirring occasionally, for 5 minutes. Then stir constantly until it comes to a boil, and cook about 8 minutes more. Remove from heat and stir in vanilla and butter. Pour into pie shell and smooth top. Cool pie in refrigerator. Top with whip cream. Sprinkle on flaked coconut. ( For chocolate cream pie increase sugar to 1 cup and melt 4 oz semi-sweet chocolate and add to filling in place of coconut). Whip Cream 1 cup of heavy whipping cream 2 tablespoons of powdered sugar 1/2 teaspoon of vanilla Mix all ingredients and whip until cream hold stiff peaks Did You Know? You can easily remove food stains from your fingers by rubbing the stained areas with a slice of raw potato and rinsing with water. SAUSAGE CORNBREAD STUFFING 2 tbsp. salad dressing 1 med. bell pepper 2 onions (1 med. and 1 lg.) 1 sm. pkg. Pepperidge Farm stuffing mix 1 box Jiffy cornbread mix 2 tbsp. poultry seasoning Thyme Sausage Poultry giblets Chop onions and bell pepper. Simmer half of onions with poultry giblets that have been seasoned to taste. Make cornbread according to directions on box. Crumble and cook sausage. Drain well. Saute remaining onions and bell pepper in butter. Pour stuffing mix in large bowl and crumble in cornbread. Add minced giblets and broth, onions, and bell pepper, poultry seasoning and thyme (to taste) and toss well. Make sure all cornbread and stuffing mix is well moistened. Stir in salad dressing. Add sausage and stir well. Place in baking dish and bake 35-40 minutes at 350 degrees. Sticky Apple Biscuits Submitted by: Edna Hoffman Prep Time: 20 Minutes Cook Time: 20 Minutes Ready In: 40 Minutes Yields: 12 servings Instead of the typical drop or cut biscuits, this hearty version is rolled up like a cinnamon roll. Tender apples, crunchy pecans and sweet honey make these a wonderful breakfast treat. 1/4 cup honey 1/4 cup packed brown sugar 2 tablespoons butter or margarine, melted 2 tablespoons water 1/3 cup pecan halves BISCUIT: 2 cups all-purpose flour 2 teaspoons baking powder 1/2 teaspoon salt 1/2 teaspoon ground cinnamon 3 tablespoons shortening 3 tablespoons cold butter or margarine 2/3 cup milk 1/2 cup diced peeled tart apple FILLING: 3 tablespoons butter or margarine, softened 2 tablespoons applesauce 1 tablespoon honey 1/4 cup packed brown sugar 3 tablespoons raisins In a small bowl, combine the honey, brown sugar, butter and water. Divide between 12 greased muffin cups. Sprinkle with pecans; set aside. In a large bowl, combine the flour, baking powder, salt and cinnamon. Cut in shortening and butter until mixture resembles coarse crumbs. Stir in milk and apple just until moistened. Turn onto a floured surface. Pat into a 10-in. x 8-in. rectangle, about 12 in. thick. Spread with butter, then applesauce; drizzle with honey. Sprinkle with brown sugar and raisins. Roll up, jelly-roll style, starting with a long side. Cut into 12 biscuits. Place, cut side down, over pecan mixture in muffin cups. Bake at 425 degrees F for 20-25 minutes or until golden brown. Cool for 1 minute before inverting onto a serving platter. Apple Sticky Buns Submitted by: Jonita Williams Prep Time: 35 Minutes Cook Time: 30 Minutes Ready In: 1 Hour 5 Minutes Yields: 12 serving fast and easy to make. 3 1/4 cups all-purpose flour 2 (.25 ounce) packages active dry yeast 1/4 cup sugar 1 teaspoon salt 3/4 cup milk 1/4 cup water 1/4 cup butter, cubed 1 egg 1 1/2 cups finely chopped peeled apple TOPPING: 1 cup packed brown sugar 3/4 cup butter, cubed 3/4 cup chopped walnuts or pecans 1 tablespoon water 1 tablespoon corn syrup 1 teaspoon ground cinnamon In a large mixing bowl, combine 1-1/2 cups flour, yeast, sugar and salt. In a saucepan, heat the milk, water and butter to 120 degrees F to 130 degrees F. Add to dry ingredients; beat just until moistened. Add egg; beat until smooth. Stir in remaining flour and apples. Do not knead. Cover and let rise in a warm place for 30 minutes. Meanwhile in a saucepan, combine the topping ingredients. Bring to a boil, stirring until blended. Pour into an ungreased 13-in. x 9-in. x 2-in. baking dish. Stir dough down. Spoon walnut-size pieces of dough over nut mixture. Cover and let rise for 30 minutes. Resist the urge to add up your score as you go along. If you anticipate your score, you'll be distracted from the task at hand. In other words, live more in the present. [RecipesAndMore] Caramel Bars
Caramel Bars 3 cups firmly packed light brown sugar 2 cups unsalted butter, melted 3 large eggs, lightly beaten 1 tablespoon vanilla extract 4 cups all-purpose flour 1 cup uncooked regular oats 1 teaspoon baking powder 1/2 teaspoon baking soda 3/4 teaspoon salt 6 (2.07-oz.) chocolate-coated caramel-peanut nougat bars, chopped (we tested with Snickers) 1 (14-oz.) can dulce de leche* Preparation Combine first 4 ingredients in a large bowl; stir well. Combine flour, oats, baking powder, baking soda, and salt. Add to butter mixture, stirring just until blended. Fold in chopped candy bars. Spoon batter into a greased aluminum foil-lined 13 x 9 pan coated with cooking spray, allowing foil to extend over ends of pan. (Pan will be very full.) Spoon dollops of dulce de leche over batter; swirl slightly into batter with a knife. Bake at 325° for 1 hour and 5 minutes. Remove to a wire rack, and cool completely. (This may take several hours.) Use foil to lift uncut brownies out of pan.
