[RecipesAndMore] Turkey Giblet Gravy

2008-11-12 Thread Angelique in Texas

The Recipe
Ya ever wonder how to make that spectacular gravy people have craved for
hundreds of years at Thanksgiving? Well, here's a super duper Turkey
Giblet Recipe that everyone will sing songs about for generations. Let's
do it!
Turkey Giblet Gravy
Roasting pan with juices from a (14- to 16-pound) roast turkey Unsalted
butter (less than 1/2 stick), melted, if turkey drippings yield less
than 1/4 cup
4 cups hot turkey giblet stock
1/4 cup all-purpose flour
Reserved cooked giblets (optional), finely chopped
Pour pan juices into a 1-quart glass measure (do not clean roasting
pan), then skim off fat and reserve fat and juices separately. (If using
a fat separator, pour pan juices into separator and let stand until fat
rises to top, 1 to 2 minutes. Carefully pour pan juices from separator
into 1-quart glass measure and reserve fat left in separator.) If there
is less than 1/4 cup reserved fat, add melted butter.
Straddle roasting pan across 2 burners. Add 1 cup giblet stock to pan
and deglaze pan by boiling over high heat, scraping up brown bits, about
1 minute. Add to glass measure with remaining 3 cups giblet stock.
Whisk together reserved fat and flour in a 2-quart heavy saucepan and
cook roux over moderately low heat, whisking, 3 minutes. Add hot stock
to roux in a fast stream, whisking constantly to prevent lumps, then
whisk in any turkey juices accumulated on platter and finely chopped
giblets, if using. Simmer sauce, whisking occasionally, 10 minutes.
Season with salt and pepper.
Buon appetito!

I'm in my own little world, but thats ok everybody knows me here

[RecipesAndMore] CAN YOU RELATE?

2008-11-12 Thread steve doyle
CAN YOU RELATE?

I drive into work listening to gospel music or a pre-recorded sermon on the
radio. I get out of the car and walk to the building entrance.

As I open the building door I leave just enough room for me to get in and I
leave Jesus standing outside as the door closes behind me. He's standing
with His palms on the door glass and watches me as I get on the elevator.

His eyes are sad and He turns and goes to sit on the stone bench. There
He'll sit patiently and wait for me for the next 9 hours.

First two hours of work - I fuss and complain about things not going right.
Jesus, sitting with his chin in His hand looks upward toward the building
wishing He could help me.

By lunch time - I'm flustered, regretting I work in this place and
sputtering bitterness all over folks.

Jesus comes around to the side of the building where my cubicle is located.
He looks up from the ground trying to get my attention but I can't hear him;
my focus is on my problems.

Jesus goes back to the front of the building, sits down and continues to
wait for me. He thinks to Himself as He looks up to the third floor, She
went in there defenseless. If only she had taken me in there with her. When
will she learn?

End of the day - I'm pooped, run down, no energy, irritable frustrated. I
leave the building Jesus gets up happily to greet me but I'm in no mood
for Him now. I've just been to hell and back and the last thing I want to do
is be bothered with anyone.

God just actually showed me this is how I'VE been acting. He showed me each
act and worst of all, He let Me feel a small portion of how grieved he was
because of my actions and attitude. I left Jesus standing outside, almost
let the door smack him in His face.

From time to time our jobs overwhelm us and we completely forget to take
Jesus with us. We may not go around cursing anyone out or punching anyone
in the face (hopefully not) but what are our actions saying about us and
about who or whose we are?

We are the salt of the Earth and the light of the world. A city on a hill
cannot be hidden. Neither do people light a lamp and put it under a bowl.
Instead they put it on its stand, and it gives light to everyone in the
house. Matt. 5:13-15.

We should be bringing peace to our jobs and not be the cause of confusion.
We should be the ones to bring our gifts talents to the table to help in
WHATEVER area God has chosen for us to work in.

It doesn't matter when.

[RecipesAndMore] Old-Fashioned Stuffing

2008-11-12 Thread Angelique in Texas

Old-Fashioned Stuffing
White bread, turkey giblets, oysters and mushrooms make
this a truly classic recipe.
Ingredients
3-4 loaves of white bread (or 5 if you like leftovers)
Water
Chicken broth
Turkey giblets
2 bunches celery
1 or 2 onions
2 Tbs. butter
1/2 tsp. sage
Oysters (optional)
Mushrooms (option)
Directions
The night before, break the bread into small pieces
(about 1 inch squares) into 2 huge bowls or pots.
Let the bread sit overnight to dry out. The next day,
after you remove the turkey*s giblets, boil the giblets
in water in 2/3 qt. sauce pan until cooked
(about 20/30 minutes). Remove giblets for later use
or discard. Set giblet cooking water aside. Preheat
oven to 350 degrees. Chop onion and celery and place
into food processor until minced. Melt 2-3 Tbs. of
butter in large saucepan. Sauté onion and celery until
heated through. Do not brown! (Sauté mushrooms also at
this time if using them).
Depending on how much stuffing you want and how much
celery and onion you*ve chopped, you may have to sauté
the onion and celery in two parts. Once cooked, pour
the onion/celery mixture directly over the dried out
bread. Pour 1/2 tsp. sage over bread/onion/celery
mixture. Using the reserved giblet cooking water, pour
slowly over bread. The bread will shrink as you do this.
Be careful not to pour too much water in. Mix thoroughly
and smell/taste for perfect stuffing. If you need more
liquid, open a can of chicken broth and pour over bread.
If you need more spice, add more sage. If you are using
oysters, add them now.
Once stuffing is of a consistency that it will stick
together and does not look too dry, do not add more
liquid. Either stuff in turkey to be baked in oven, or
put in 9x13 pan. If using oysters, it is recommended
that you bake the stuffing in a pan so as to ensure
the oysters will be cooked through. Bake in 350 degree
oven for 45 minutes to an hour. You want the stuffing
to have a nice brown crust on top.

[RecipesAndMore] Update On Me

2008-11-12 Thread helen

Hi everyone.
I had my appointment yesterday at the orthopedic clinic to see the surgeon
who operated on my wrist.
I had x-rays done and I thought I was doing quite well actually, doing
dishes, putting laundry away, squeezing toothpaste and a whole bunch of
other daily chores even chopping and cutting up stuff in the kitchen. And, I
was hoping not to have to go back again! But, I was wrong! Lol. I found out
that my right wrist is not quite as strong as my left one! The doctor put a
piece of paper between my thumb and index finger, and yep? He was able to
take it away quite easily, even though I thought I was hanging on to it for
dear life! Lolololol. Then, I had to squeeze his finger first with one hand
and then the other. The same thing happened. I guess I still have to work up
the strength in my right wrist in order for me to be back to normal. So, he
says he wants to see me in another month. But, that will depend on when they
book me. It could be 6 weeks from now. And I was there for 3 hours! My
appointment was for 2:15 and I didn't get out of there till after 5. All
that waiting was just a pain. And my friends who took me, I hated like hell
to put them out, but, they left for a doctor's appointment, for 4:30, but
they came back to get me to take me home of course.
Oh and in the meantime, there was a fire drill or the alarm went off, and my
poor friends had to walk down 7 flights of stairs because the elevators
didn't work at the time of the alarm going off. And then, of course, there
were I don't know how many firetrucks approaching the hospital.
Needless to say, it was a long afternoon. On the way home, we stopped so I
could pick up some KFC for supper.
My wrist still hurts to type for a long period of time.
I still have to do wrist exercises to get the strength back in my wrist.

Guess I'll just keep on keepin' on.
Take care everyone.

Hugs to you all.

Friends

Oh, I just spoke to mamma Allie on the phone, she and baby are well, being
well kept looked at, and will remain in hospital until birth.
didn't have to give birth right away, all is stable for now, and we are just
waiting.
she does have a blood clot in the uterus and they are keeping their eyes on
her, but as long she can remain under stress, blood sugars controled(she is
diabetic on insulin) and her blood pressure down, which at the moment it
is...
and I did say a prayer for her...
then looks good, still a touchy situation, but prayer is working
will certainly keep posted

[RecipesAndMore] Re: Update On Me

2008-11-12 Thread Sandra Warren

Hi, Helen, I don't want to bore you, as I commented on the other mutual
list, but did not comment on one thing, the length of time spent waiting for
our appointments at the doctors' offices, in comparison to the short amount
of time actually spent with the doctor. wow, annoying. it is that way, too
when mom has her appointments. I am praying that by the next time you return
for your appointment, you will have gained strength; these things do take
time. wonder if using a soft ball and rolling it in your palm, and moving it
with your fingers would help; also, squeezing it; just a few suggestions;
continuing praying for progress for you.

Subject: [RecipesAndMore] Update On Me

 Hi everyone.
I had my appointment yesterday at the orthopedic clinic to see the surgeon
 who operated on my wrist.
I had x-rays done and I thought I was doing quite well actually, doing
dishes, putting laundry away, squeezing toothpaste and a whole bunch of
other daily chores even chopping and cutting up stuff in the kitchen. And,
 I
was hoping not to have to go back again! But, I was wrong! Lol. I found
 out
that my right wrist is not quite as strong as my left one! The doctor put
 a
piece of paper between my thumb and index finger, and yep? He was able to
take it away quite easily, even though I thought I was hanging on to it
 for
dear life! Lolololol. Then, I had to squeeze his finger first with one
 hand
and then the other. The same thing happened. I guess I still have to work
 up
the strength in my right wrist in order for me to be back to normal. So,
 he
says he wants to see me in another month. But, that will depend on when
 they
book me. It could be 6 weeks from now. And I was there for 3 hours! My
appointment was for 2:15 and I didn't get out of there till after 5. All
that waiting was just a pain. And my friends who took me, I hated like
 hell
to put them out, but, they left for a doctor's appointment, for 4:30, but
they came back to get me to take me home of course.
Oh and in the meantime, there was a fire drill or the alarm went off, and
 my
poor friends had to walk down 7 flights of stairs because the elevators
didn't work at the time of the alarm going off.

[RecipesAndMore] A Simply Perfect Roast Turkey

2008-11-12 Thread Angelique in Texas

A Simply Perfect Roast Turkey
Simple, perfect roast turkey just like grandma used to make. Seasoned
with salt and pepper, and basted with turkey stock, the flavors of the
turkey really stand out. Stuff with your favorite dressing.

RECIPE RATING * * * * *:
PREP TIME 30 Min COOK TIME 4 Hrs READY IN 4 Hrs 30 Min
SERVINGS

Servings

USMETRIC
INGREDIENTS (Nutrition)
1 (18 pound) whole turkey
1/2 cup unsalted butter, softened
salt and freshly ground black pepper to taste
1 1/2 quarts turkey stock
8 cups prepared stuffing
DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C). Place rack in the lowest
position of the oven.
Remove the turkey neck and giblets, rinse the turkey, and pat dry with
paper towels. Place the turkey, breast side up, on a rack in the
roasting pan. Loosely fill the body cavity with stuffing. Rub the skin
with the softened butter, and season with salt and pepper. Position an
aluminum foil tent over the turkey.
Place turkey in the oven, and pour 2 cups turkey stock into the bottom
of the roasting pan. Baste all over every 30 minutes with the juices on
the bottom of the pan. Whenever the drippings evaporate, add stock to
moisten them, about 1 to 2 cups at a time. Remove aluminum foil after 2
1/2 hours. Roast until a meat thermometer inserted in the meaty part of
the thigh reads 180 degrees F (80 degrees C), about 4 hours.
Transfer the turkey to a large serving platter, and let it stand for at
least 20 to 30 minutes before carving.

[RecipesAndMore] Homestyle Turkey, the Michigander Way

2008-11-12 Thread Angelique in Texas

Homestyle Turkey, the Michigander Way
A simple, down to basics recipe when it comes to the good old tom
turkey.

RECIPE RATING: * * * * *
PREP TIME 10 Min COOK TIME 5 Hrs READY IN 5 Hrs 10 Min Original
recipe yield 1 (12 pound) turkey
SERVINGS

Servings

USMETRIC
INGREDIENTS (Nutrition)
1 (12 pound) whole turkey
6 tablespoons butter, divided
4 cups warm water
3 tablespoons chicken bouillon
2 tablespoons dried parsley
2 tablespoons dried minced onion
2 tablespoons seasoning salt
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Rinse and wash turkey.
Discard the giblets, or add to pan if they are anyone's favorites.
Place turkey in a Dutch oven or roasting pan. Separate the skin over the
breast to make little pockets. Put 3 tablespoons of the butter on both
sides between the skin and breast meat. This makes for very juicy breast
meat.
In a medium bowl, combine the water with the bouillon. Sprinkle in the
parsley and minced onion. Pour over the top of the turkey. Sprinkle
seasoning salt over the turkey.
Cover with foil, and bake in the preheated oven 3 1/2 to 4 hours, until
the internal temperature of the turkey reaches 180 degrees F (80 degrees
C). For the last 45 minutes or so, remove the foil so the turkey will
brown nicely.
