Awesome Tangerine-Glazed Turkey
Time: 45 Minutes
Cook Time: 3 Hours 30 Minutes Ready In: 4 Hours 15 Minutes
Yields: 13 servingsThis Thanksgiving turkey is indeed awesome--simply
out-of-this-world! Just wait until you smell the wonderful citrus aroma
while the turkey is roasting! I guarantee that you will receive rave
reviews on Thanksgiving Day with this recipe!
INGREDIENTS:
3/4 cup unsalted butter, divided
3/4 cup canola oil
1 1/2 cups tangerine juice
1 (10 pound) whole turkey, 
neck and giblets reserved
2 1/4 cups sausage stuffing
salt and pepper to taste
2 1/4 cups turkey stock
3 tablespoons all-purpose flour
DIRECTIONS:
1.Melt 6 tablespoons butter with canola oil and tangerine juice in a
saucepan over medium heat. Remove from heat, and allow to cool about 5
minutes. Soak a piece of cheesecloth large enough to drape over the
turkey in the mixture.2.Preheat oven to 425 degrees F ( 220 degrees
C).Clean turkey, and season body cavity with salt and pepper. Loosely
pack the neck cavity and body cavity with stuffing. Tie drumsticks
together, spread 6 tablespoons butter over the turkey, and season with
salt and pepper. Place turkey in a shallow roasting pan.3.Roast turkey
for 25 minutes in the preheated oven, and then arrange soaked
cheesecloth over turkey. Reduce oven temperature to 325 degrees F (110
degrees C). Continue roasting 1 hour. Leaving the cheesecloth draped
over the turkey, baste with the tangerine juice mixture. Continue
roasting about 2 hours, basting occasionally, until the internal
temperature of the thickest part of the thigh reaches 180 degrees F (80
degrees C) and the stuffing inside the body cavity reaches 165 degrees F
(70 degrees C). Discard cheesecloth, and place turkey on a serving
platter. Allow turkey to cool about 25 minutes before carving.4.Skim fat
from pan juices, and reserve 1/4 cup fat and skimmed pan juices. In the
baking pan, mix pan juices with 1 cup turkey stock; cook over high heat,
stirring to scrape the bottom of the pan.5.In a saucepan over low heat,
whisk together reserved 1/4 cup fat and flour until thickened, about 3
minutes. Stir in pan juices and remaining turkey stock, and add neck and
giblets. Simmer 10 minutes, stirring constantly, until giblets are
cooked through. Strain through a sieve, and serve with the turkey and
stuffing

 Cherry Tomato Pasta 
It is important to cook the garlic over low heat, or it will burn. Watch
it closely. 
2 TB extra virgin olive oil
3 cloves of garlic, peeled and sliced
1 pint cherry tomatoes, halved
1 tsp. sugar
Salt and ground black pepper, to taste 
1/2 cup coarsely torn fresh basil leaves 6 oz. thin spaghetti, cooked 
Grated or shredded Parmesan cheese 
Place the oil in a skillet over low heat. Add the garlic and cook,
stirring, until golden, about 6 to 7 minutes. 
Add the tomatoes, sugar, salt and pepper; raise heat to medium and cook,
gently smashing some of the tomatoes with the back of a spoon (leave
some whole), until the sauce is thickened, about 8 minutes. Stir in the
basil. 
Add the pasta, combine well and serve immediately, topped with cheese.
Serves 2.

[RecipesAndMore] Fantastic Coffee Cake

 Fantastic Coffee Cake 
1 c. butter/margarine
2 c. sugar
2 eggs
2 c. flour
1 c. sour cream
1/2 t. vanilla
1 t. baking powder
1/2 t. salt 
Filling
1 c. pecans
2-3 t. cinnamon
3 T. sugar 
Beat butter and sugar until creamy. Add eggs and beat for one minute.
Gradually add dry ingredients while beating. 
Fold in sour cream and beat until well mixed. Butter a Bundt pan and
pour 1/3 of the mixture in the bottom of the pan. Add suge, nut filling,
then add another 1/3 of portion of mixture. 
Layer again with sugar filling, then cover with remainder of the
mixture. Cook at 350° for 50-60 minutes.

Crispy Cheddar Frico (Fried Cheese Crisps) 
1 1/2 cups shredded sharp Cheddar cheese 
In an 8-inch non- stick pan heated over medium-high heat add 1/4 cup
shredded cheese. Cook until cheese is light brown on the bottom. 
Turn over with a plastic spatula and continue cooking for another 10 to
15 seconds. Remove to a plate to cool. Wipe pan and start again until 6
fricos are complete

Whipped Fruit 
1 sm pkg sugar-free fat free butterscotch pudding 20 oz can crushed
pineapple 
4 large apples-peeled and chunked
8 oz tub light or fat free cool whip
1 cup coconut (Optional) 
Drain pineapple and reserve juice. Combine dry pudding  pineapple and
mix. 
Next add pineapple juice and mix. Mix in apples and coconut. Fold in
cool whip. Cool in fridge

Orange Marmalade Chicken 
4 (3 ounce) chicken breasts (skinless, boneless) 1/3 cup orange
marmalade 
1 tablespoon lemon juice
1/8 teaspoon salt
1/8 teaspoon pepper 
Arrange chicken in baking pan. Mix marmalade and lemon juice. Spread on
chicken. 
Cover and bake at 350 degrees for 40 minutes. Baste and bake uncovered
for 5 more minutes

1/2 cup raspberry reduced-fat cream cheese spread, from 8-ounce
container, softened 1/2 cup marshmallow creme 
1 container (6 ounces) Yoplait® Original lemon burst yogurt Assorted
fresh fruit pieces or Berries 
Mix cream cheese and marshmallow creme in medium bowl with wire whisk
until smooth. Stir in yogurt. 
Serve dip with fruit.

  Berry-licious Yogurt 
Makes 2 servings 
2 cups lowfat vanilla yogurt
1 cup fresh strawberries, sliced
1/2 cup fresh blueberries
6 tablespoons granola 
Clean and cut the strawberries into quarters, mixing them with the
blueberries. 
Using a tall glass, alternate layers, first beginning with yogurt, then
berries, and then yogurt again. Repeat this layering until the glass is
full. 
Top with granola.

Crispy Baked Chicken 
Vegetable oil spray 
1 (2 to 3 lb.) frying chicken, cut into serving pieces, skinned, all
visible fat removed 1 c. skim milk 
1 c. Corn Flake crumbs
1 tsp. rosemary
1/2 tsp. black pepper, freshly ground 
Preheat oven to 400 degrees. Line a baking pan with foil and lightly
spray foil with vegetable oil. Rinse chicken and pat dry. Set aside.
Pour milk into a shallow bowl. 
Combine Corn Flake crumbs, rosemary and pepper in another shallow bowl.
Dip chicken pieces first into milk and then into crumb mixture. Allow to
stand briefly so coating will adhere. 
Arrange chicken in prepared pan so pieces do not touch. Bake 45 minutes
or until done. Crumbs will form a crisp skin.

 Hi everyone.
 I had my appointment yesterday at the orthopedic clinic to see the surgeon
 who operated on my wrist.
 I had x-rays done and I thought I was doing quite well actually, doing
 dishes, putting laundry away, squeezing toothpaste and a whole bunch of
 other daily chores even chopping and cutting up stuff in the kitchen. And,
 I
 was hoping not to have to go back again! But, I was wrong! Lol. I found
 out
 that my right wrist is not quite as strong as my left one! The doctor put
 a
 piece of paper between my thumb and index finger, and yep? He was able to
 take it away quite easily, even though I thought I was hanging on to it
 for
 dear life! Lolololol. Then, I had to squeeze his finger first with one
 hand
 and then the other. The same thing happened. I guess I still have to work
 up
 the strength in my right wrist in order for me to be back to normal. So,
 he
 says he wants to see me in another month. But, that will depend on when
 they
 book me. It could be 6 weeks from now. And I was there for 3 hours! My
 appointment was for 2:15 and I didn't get out of there till after 5. All
 that waiting was just a pain. And my friends who took me, I hated like
 hell
 to put them out, but, they left for a doctor's appointment, for 4:30, but
 they came back to get me to take me home of course.
 Oh and in the meantime, there was a fire drill or the alarm went off, and
 my
 poor friends had to walk down 7 flights of stairs because the elevators
 didn't work at the time of the alarm going off. And then, of course, there
 were I don't know how many firetrucks approaching the hospital.
 Needless to say, it was a long afternoon. On the way home, we stopped so I
 could pick up some KFC for supper.
 My wrist still hurts to type for a long period of time.
 I still have to do wrist exercises to get the strength back in my wrist.

 Guess I'll just keep on keepin' on.

Meat Loaf Pie 
1 pound ground beef 
salt  pepper (or any other seasons you like) 1 small onion, chopped 
1 egg
1/4 cup ketchup
1 tablespoon Worcestershire sauce
1 (8.75 ounce) can whole kernel corn
1 (9 inch) unbaked pie crust
2 cups prepared mashed potatoes
1/2 cup shredded Cheddar cheese 
Preheat oven to 350 degrees F (175 degrees C). 
In a skillet over medium heat, cook and stir the ground beef and onion
until beef is evenly brown. Season to taste, drain, and allow to cool
slightly. 
In a bowl, mix the cooked beef and onion, egg, ketchup, and
Worcestershire sauce. 
Spread the corn in the bottom of the pie crust. Layer with the beef
mixture. Spoon the mashed potatoes over the beef, and top with cheese. 
Bake 30 minutes in the preheated oven, until cheese is bubbly and
lightly browned.

Cream Cheese Squares 
2 cans (8 oz each) refrigerated crescent dinner rolls, divided 2 pkg (8
oz each) Philadelphia Cream cheese, softened 1 tsp vanilla 
1 egg slightly beaten
¾ cup sugar, divided
2 tbsp ground cinnamon 
Preheat oven to 350 F. Unroll 1 of the cans of crescent dough. Press
onto bottom of greased 13X 9 inch baking pan to form crust, firmly
pressing seems together to seal. 
Beat cream cheese, vanilla, and egg and ½ cup of the sugar with
electric mixer on medium speed until well blended. Spread onto crust.
Unroll remaining can of crescent dough onto large sheet of wax paper. 
Pat out dough to form 13X9 inch rectangle, pressing seams together to
seal. Invert over cream cheese mixture to form top crust; discard wax
paper. 
Bake 30 to 35 minutes or until golden brown. Combine remaining ¼ cup
sugar and cinnamon in small bowl; sprinkle over squares before cutting. 
Makes 24 servings.

  Orange Poppyseed Quick Bread 
Servings: 16 slices 
2 cups whole wheat flour
1/2 cup sugar
1 teaspoon baking soda
1 tablespoon poppyseeds
1 cup orange juice
1 teaspoon vanilla extract 
Coat a loaf pan with nonstick cooking spray and preheat oven to 325
degrees. Combine dry ingredients and stir to mix well. Add the liquid
ingredients and stir just until dry ingredients are moistened. 
Pour the mixture evenly in the loaf pan and bake for 45 minutes (or
until a toothpick inserted in center of bread comes out clean). 
Let loaf pan sit for 10 minutes after removing from oven, then invert
loaf onto a wire rack and turn rightside up. Cool before slicing and
serving.

4 tablespoons balsamic vinegar 
Clean mushrooms and remove stems, reserve for other use. Place caps on a
plate with the gills up. In a small bowl, combine the oil, onion, garlic
and vinegar. 
Pour mixture evenly over the mushroom caps and let stand for 1 hour.
Grill over hot grill for 10 minutes. Serve immediately. Makes 3 servings

Paisley, Plant, Krauss and McAnally Are Early CMA Winners
Wed. November 12.2008 8:33 PM EST

Brad Paisley, Robert Plant, Alison Krauss and Mac McAnally are among the early 
winners at the 42nd annual CMA Awards taking place Wednesday night (Nov. 12) in 
Nashville. Paisley's Waitin' on a Woman resulted in a music video of the year 
win for Paisley and video directors Jim Shea and Peter Tilden. Plant and 
Krauss' collaboration on Gone, Gone, Gone was named musical event of the 
year. McAnally, a singer, songwriter and guitarist who is a member of Jimmy 
Buffett's Coral Reefer Band, was voted musician of the year. It marks his first 
CMA win. Winners in select award categories were revealed prior to ABC's live 
awards show broadcast from the Sommet Center.

3/4 cup BBQ sauce
1/8 cup Worcestershire sauce
1/8 cup soy sauce
1/2 tsp. garlic, minced
1/2 tsp. Dijon mustard
1 bunch green asparagus, trimmed 
In small bowl, combine sauces, garlic, and mustard. Brush marinade
mixture over asparagus. 
Place asparagus on uncovered grill over direct heat for 3 minutes, or
until tender, rotating once

Small carton sour cream
1 T. onion flakes
1 T. dried parsley flakes
1 t. dill weed
1 t. Lawry's seasoning salt 
Mix all ingredient and let stand a few hours in refrigerator. Serve with
vegetable dippers.

Hope that by your next appointment your hand and wrist are 
stronger.  Waiting around hours just to spend 15 minutes or less with 
the doctor is maddening for sure.
The beginning of November I had a 10:15 appointment and at 12:15 I 
was still sitting in the examining room not having been seen with a 
30-45 minute more possible wait.  I walked out beca8use my ride 
couldn't wait any longer as he had others to take home from 
appointments.  I'm still waiting for the clinic to resolve the 
problem and decide what to do.  It took 4 months to get the first 
appointment in July, two months for the 2nd appointment which I 
cancelled due to a stomach virus and then 2 more months for the 
ill-fated last appointment.  No telling when I'll be able to be seen 
again.  Frustrating, for sure.
Anyway, continued prayers for you.

White Chocolate Cookie Bars 
1 roll (16.5 oz) refrigerated sugar cookies 1 1/2 cups white chocolate
chunks or white vanilla baking chips 1 1/2 cups flaked coconut 
1 cup slivered almonds 
1 can (14 oz) sweetened condensed milk (not evaporated) 1 teaspoon oil 
Heat oven to 350. Grease 13x9-inch pan. In pan, break up cookie dough.
With floured fingers, press dough evenly in bottom of pan. 
Sprinkle with 1 cup white chocolate chunks; press firmly into dough. 
Sprinkle with coconut and almonds; drizzle with condensed milk. 
Bake 20 to 30 minutes or until edges are golden brown and top is lightly
browned. 
Cool completely, about 1 hour. In small microwavable bowl, place
remaining 1/2 cup white chocolate chunks and oil. Microwave on High 45
seconds. 
Stir until smooth. If necessary, microwave an additional 15 seconds.
Drizzle over bars.

3 Turkey Recipes
Turkey Corn Chowder

1/4 cup butter
1 lrg onion, chopped
2 cups water
2 chicken bouillon cubes
4 or 5 med potatoes, cubed
1 cup sliced celery
3 cups diced turkey
salt and pepper to taste
1 can creamed corn
1 can whole kernel corn
4 cups milk parsley and paprika

Saute onions in butter in large pot until soft but not brown.Add water,
bouillon cubes, potatoes, celery and turkey.

Cook about 15 minutes then season with salt and pepper.  Add corn and milk
and allow to simmer until hot, but not boiling.

Sprinkle bowls of soup with parsley and paprika.



Old-Fashioned Turkey Soup

1 cup carrots diced
1/2 cup onions chopped
1 cup celery sliced
1 cup green beans cut, fresh if available
1 cup cabbage shredded
1 cup mushrooms sliced
2 turkey thighs (about 2 1/4 lb.  total)
5 cups water warm
3 tsp chicken bouillon
2 tsp steak sauce bottled
1 tsp thyme dried, crushed
1/2 tsp salt
1/8 tsp black pepper
2/3 cups white rice uncooked instant

In a slow cooker, layer in order, carrots, onion, celery, green beans,
cabbage and mushrooms.

Remove skin and excess fat from turkey.  Place thighs in slow cooker.  Add
water, bouillon granules, steak sauce, thyme, salt and pepper.

Cover and cook on high for 3 to 4 hours or on low for 6 to 8 hours or until
turkey, carrots and green beans are tender when pierced with a fork.

Remove turkey from mixture to cool. Quickly stir rice into soup.  Cover and
cook on high for 15
minutes or until rice is done.  Meanwhile, when turkey is cool enough to
handle, remove turkey from bone and cut into bite-size pieces.  Discard
bones.  Return turkey to soup.

Cover and cook on high 10 minutes longer or until heated through.  Taste for
seasoning and add additional salt if needed.

Makes 6 servings.

Nutritional information:  87 calories, 2 g fat, 1 g protein, 19 g
carbohydrates, no cholesterol, 468 mg sodium, 2 g fiber.



Hearty Turkey Stew

1 Tbsp olive oil
1 onion, cut into 1/2-inch chunks
1 lb potatoes, cut into 1-inch chunks
4 oz mushrooms, halved (2 cups)
5 clove garlic, minced
1-1/2 cups chicken broth(homemade or reduced-sodium canned)
1/2 tsp salt
3 cup broccoli florets and thinly sliced stems
3 cup cooked turkey chunks
1/2 cup fat-free or low-fat milk
2 Tbsp flour

Heat oil in a nonstick Dutch oven or flameproof casserole; add onion and
cook, stirring occasionally, until the onion is lightly browned and soft,
about 7 minutes.

Stir in the potatoes, mushrooms and garlic.  Add broth and salt; bring to a
boil.  Reduce to a simmer, cover and cook until the potatoes
are firm-tender, about 10 minutes.  Add broccoli and cooked turkey; cook,
covered, until the potatoes and broccoli are tender, about 5 minutes.

Meanwhile, in a small bowl, whisk the milk into the flour until smooth.
Stir the flour mixture into the simmering stew and cook, stirring, until the
sauce is slightly thickened, about 2 minutes.

Makes 4 servings.

Nutritional information:  368 calories, 9 g fat, 39 g protein, 33 g 
carbohydrates, 81 mg cholesterol, 569 mg sodium, 5 g fiber.

Basic bread stuffing
Yield: 12 servings (enough for a 10- to 12-pound turkey)

1 stick (1/2 cup) unsalted butter, plus an optional 2 tablespoons
2 medium onions, chopped
2 each, chopped: celery ribs, peeled carrots
1/4 cup fresh parsley, chopped
2 tablespoons chopped fresh sage or 2 teaspoons dried
1 tablespoon chopped fresh thyme or 1 teaspoon dried
1 tablespoon salt
Freshly ground pepper
8 cups cubed stale challah bread
1/2 to 1 cup homemade or low-sodium canned chicken broth

Preparation time: 45 minutes
Cooking time: 50 minutes

1. Melt the butter in a skillet over medium heat. Add the onion, celery and
carrots; cook until soft, about 5 minutes. Stir in the parsley, sage, thyme,
salt and pepper to taste.

2. Transfer mixture to a large bowl. Add the bread cubes and 1/2 cup of the
broth; toss to combine. Use to stuff the turkey, or bake separately: Heat
oven to 350 degrees; toss another 1/2 cup of the broth with the dressing.
Transfer to a buttered 13-by-9-inch baking dish. Cover tightly with foil;
bake 30 minutes. Uncover; dot with 2 tablespoons butter. Bake until top is
crisp and golden, about 20 minutes.

Nutrition information per serving:

148 calories, 52% of calories from fat, 9 g fat, 5 g saturated fat, 20 mg
cholesterol, 15 g carbohydrates, 3 g protein, 180 mg sodium, 1 g fiber

Basic Turkey Gravy

1 medium carrot, thickly sliced
1 medium onion, thickly sliced
1 medium celery rib, thickly sliced
1/2 tsp. salt 
3 T fat from poultry drippings
3 T all-purpose flour
poultry stock, warmed

Makes About 4 Cups 

To make the gravy, remove the cooked turkey and roasting rack from 
the roasting pan. Pour the poultry drippings through a sieve into a 4-
cup measuring cup. 

Add 1 cup stock to the roasting pan and stir until crusty brown bits 
are loosened: pour the deglazed liquid/broth into the 4-cup measure. 
Let the mixture stand a few minutes until the fat rises to the top. 

Over medium heat, spoon 3 tablespoons fat from the poultry drippings 
into a 2 quart or larger saucepan. Whisk flour and salt into heated 
fat and continue to cook and stir until the flour turns golden. 

Meanwhile, skim and discard any fat that remains on top of the 
poultry drippings. Add remaining broth and enough water to the 
poultry drippings to equal 3 1/2 cups. Gradually whisk in warm 
poultry drippings/broth mixture. Cook and stir until gravy boils and 
is slightly thick.

Bread Dressing

1 (1 pound) loaf day old bread

1 1/2 ts Poultry seasoning
1/2 ts Pepper
1 c Canned chicken broth;
-undiluted
2 Eggs; slightly beaten
3/4 c Onion; chopped
3/4 c Celery; chopped
1/2 c Butter or margarine; melted

Combine first 5 ingredients in a large bowl; set aside.
Saute onion and celery in butter until tender.
Add to bread mixture, stirring well.
Spoon into a lightly greased 2-quart casserole dish.
Cover and bake at 325 degrees F for 20 minutes.
Yield: 6 servings.
Note: Dressing is too moist to bake in turkey.

Cheddar Corn Casserole for thanks giving

1 stick butter (4oz), melted 
1 large onion, chopped 
1 small green bell pepper, chopped 
1 small red bell pepper, chopped 
3 eggs 
1 cup sour cream 
1 can (16oz) creamed corn 
1/3 cup yellow cornmeal 
1/4 teaspoon salt 
1/4 teaspoon pepper 
1 cup cheddar cheese, shredded 

In a medium saute pan, heat 2 tablespoons of butter over medium heat. 
Add onion and peppers and cook until softened, stirring occasionally. 
Remove from heat.

Combine remaining 6 tablespoons butter, eggs, and sour cream in a 
large bowl. Whisk together until smooth. Mix in corn, cornmeal, salt 
and pepper. Stir in cheese and onion-pepper mixture. 

Turn into a 2-quart buttered baking dish. Bake in a preheated 350 
degree F. oven for 30 to 35 minutes, until puffed and golden.
Serves 8.

Cranberry Dressing

Stuffing

   1/4   cup  butter
 1/2   cup  celery -- diced
  1 apple -- diced, peeled
  1cup  onion -- diced
  3   cups  bread cubes
  1   teaspoon  ground sage
 1/4  teaspoon  ground marjoram
  1cup  whole cranberry sauce
 1/4   cup  brown sugar
  1   teaspoon  salt
Zest and juice of an orange

Heat butter in a sauté pan,  sauté celery, apple,  onion until soft.
Add bread cubes, sage  ground marjoram. Remove from heat.
In medium saucepan, stir together over low heat
whole cranberry sauce, brown sugar, salt 
the zest  juice of one orange.
Stir until sugar is dissolved.
Mix with the bread mixture; blending well.

Classic Roast Turkey With Giblet Stuffing

Classic Roast Turkey
We've collected some all-time family favorites to create this savory and
colorful menu.


Glistening and golden brown, this Classic Roast Turkey needs only a simple
herb garnish.


Ingredients
1 16- to 20-pound turkey
Desired stuffing (optional)

Preparation
  1. Thaw turkey in refrigerator, allowing time to prepare the giblet
broth the day before roasting. Remove turkey legs from leg clamp or band of
skin crossing the tail. If desired, remove leg clamp from body cavity.
Remove giblets and neck from cavities.
  2. Just before roasting, spoon some of the stuffing into the neck
cavity of the turkey. Pull the neck skin over stuffing; fasten to back with
a short skewer. Loosely spoon stuffing into body cavity (no more than 3/4
cup stuffing per pound of turkey). Do not pack stuffing, or it will not get
hot enough by the time the turkey is cooked. Spoon any remaining stuffing
into a casserole; cover and chill. Tuck legs under band of skin, or reset
legs into leg clamp. If leg clamp has been removed, tie legs together with
string. Twist wing tips under back.
  3. Place turkey, breast side up, on a rack in a shallow roasting pan.
Place a meat thermometer into the center of an inside thigh muscle so the
bulb doesn't touch bone. Cover turkey loosely with foil, leaving space
between the bird and foil. Press foil over drumstick and neck.
  4. Roast in a 325 degree F oven until thermometer registers 180
degrees F and juices run clear (4 to 4-3/4 hours for stuffed bird). The
center of the stuffing should be at least 165 degrees F Add covered
casserole of stuffing during the last 25 to 30 minutes of roasting. (Or, if
there isn't room in the oven for the casserole, while bird is standing,
increase oven temperature to 375 degrees F and bake for 20 to 25 minutes or
until heated through.) Remove the foil the last 30 to 45 minutes to let the
bird brown.
  5. Remove the turkey from the oven, and cover loosely with foil. Let
stand for 20 minutes. Release legs from leg clamp, or snip string or band of
skin. To avoid possible burns, do not remove leg clamp from the hot bird
after roasting. Store leftover turkey and stuffing in separate containers as
soon as possible after serving. Makes 24 servings.
Giblet Stuffing
Dry the bread overnight or in oven; add cooked vegetables, giblets, and
broth.

Ingredients
24 slices firm-texture white bread (about 1-1/2 one-pound loaves)
2 cups finely chopped celery
1 large onion, finely chopped (1 cup)
1/2 cup margarine or butter
1 medium tart apple, peeled and chopped (1 cup)
1 teaspoon dried rosemary, crushed
1 teaspoon dried sage, crushed
1 teaspoon dried thyme, crushed
1/4 cup snipped fresh parsley
Finely chopped cooked giblets (optional)
3/4 to 1 cup giblet broth or chicken broth
Salt
Pepper

Preparation
  1. Trim crusts from bread slices; cut into 1/2-inch cubes (about 16
cups). Spread into a single layer in two 15-1/2x10-1/2x2-inch baking pans
(or bake half of the cubes at a time). Bake in a 300 degree F oven for 10 to
15 minutes or until dry, stirring twice. Or, let stand, loosely covered, at
room temperature for 8 to 10 hours.
  2. In a large saucepan cook celery and onion in margarine or butter
until tender. Stir in apple, rosemary, sage, and thyme. Continue cooking 2
minutes. Stir in parsley and giblets, if using. Put bread cubes in a very
large bowl. Add the cooked vegetable-herb mixture. Drizzle with enough
giblet broth or chicken broth to moisten to taste, tossing lightly. Season
to taste with salt and pepper. Use to stuff turkey or transfer to casserole.
Bake in a 325 degree F oven about 30 minutes or 375 degree F oven about 25
minutes or until heated through. Makes 16 to 20 servings.

Easy Bake Turkey

1 frozen Turkey, thawed
Salt and pepper to taste
3 tablespoons paprika
1/8 cup hot water
1 cup peanut oil

Season inside and outside of turkey with salt and pepper.  Dissolve paprika
in water; blend in peanut oil.  Baste turkey generously with oil mixture;
brush
inside of heavy brown grocery bag with remaining oil mixture, greasing well.
Place turkey in bag, breast side up; tie end of bag.  Place bag in baking
pan.  Bake in preheated 325-degree oven for 15 minutes per pound.

Hope that by your next appointment your hand and wrist are
stronger.  Waiting around hours just to spend 15 minutes or less with
the doctor is maddening for sure.
The beginning of November I had a 10:15 appointment and at 12:15 I
was still sitting in the examining room not having been seen with a
30-45 minute more possible wait.  I walked out beca8use my ride
couldn't wait any longer as he had others to take home from
appointments.  I'm still waiting for the clinic to resolve the
problem and decide what to do.  It took 4 months to get the first
appointment in July, two months for the 2nd appointment which I
cancelled due to a stomach virus and then 2 more months for the
ill-fated last appointment.  No telling when I'll be able to be seen
again.  Frustrating, for sure.
Anyway, continued prayers for you.

Easy Beginner's Turkey with Stuffing

12 pounds whole turkey 
1 (6 ounce) package dry bread stuffing mix 
1 cup water 
1 tablespoon butter 
1 cup chopped celery 
1/4 cup chopped onion 
4 slices toasted white bread, torn into small pieces 
 salt and pepper to taste 
2 tablespoons vegetable oil 
 
Directions
 
1 Preheat oven to 350 degrees F (175 degrees C). Rinse turkey, remove 
giblets and place in a shallow roasting pan. 
2 Prepare stuffing according to package directions. Mix in water. 
3 Melt butter in a medium saucepan over medium heat, and slowly cook 
and stir the celery and onion until tender. 
4 Mix celery, onion, and toasted bread pieces into the stuffing, and 
season with salt and pepper. Loosely scoop stuffing into the turkey 
body cavity and neck cavity. Rub the exterior of the turkey with 
vegetable oil. 
5 Loosely cover turkey with aluminum foil, and roast 3 1/2 to 4 hours 
in the preheated oven, until the thickest part of the thigh reaches 
180 degrees F (85 degrees C) and the interior of the stuffing reaches 
165 degrees F (70 degrees C). Remove foil during the last half hour 
of cooking to brown the bird. 
Makes 1 - turkey

8-10 servings

2 10 oz. pkgs. finely shredded cabbage
1 carrot shredded
1/2 c. sugar
1/2 t. salt
1/8 t. black pepper
1/2 c. mayo
1/4 c. buttermilk
2 1/2 T. lemon juice
1 1/2 T. white vinegar

Combine cabbage and carrot in a large bowl.

Whisk together the sugar and next 7 ingred. til nicely blended. Toss 
with the cabbage and carrot. Cover and chill 2 hours.

Oh, I just spoke to mamma Allie on the phone, she and baby are well, being well 
kept looked at, and will remain in hospital until birth. 
didn't have to give birth right away, all is stable for now, and we are just 
waiting.
she does have a blood clot in the uterus  and they are keeping their eyes on 
her, but as long she can remain under stress, blood sugars controled(she is 
diabetic on insulin) and her blood pressure down, which at the moment it is...
and I did say a prayer for her...
 then looks good, still a touchy situation, but prayer is working
will certainly keep posted

CHEF PAUL'S HOLIDAY DINNER
SERVES 24 to 30
It's a lot of fun to let your guests think you're serving them a regular
holiday turkey. When you start to carve the turkey, they'll be quite
surprised to see you cut through its bones!

Since the Turducken takes about 8 hours to cook (and then it needs to
cool at least 1 hour before it's carved), you will need to plan your
time wisely. First, be sure your oven temperature control is accurate by
using (or purchasing) an inexpensive oven thermometer to monitor the
oven's temperature instead of relying on the oven temperature control.
Otherwise, your Turducken may take considerably less or more time than
you have planned.
The quickest way to prepare your Turducken is to get friends or family
members to help make the dressings and de-bone the fowl. (If you're on
your own, you will need to allow more time for preparation of the
Turducken). We get letters every year from Turducken Teams - friends
and relatives who gather together to make (and eat!) their Turduckens as
a group activity!  It might be fun to take pictures along the way so
that you can look back and have Turducken memories year-round!
It's also nice to serve additional dressing in bowls at the table, so
our dressing recipe will make about 8 cups extra of each dressing. If
you do not want to serve extra dressing with your Turducken, you can cut
each dressing recipe in half.
If you're inexperienced at de-boning fowl, start with the turkey;
because of its size, you can more easily see the bone structure. After
de-boning the turkey, the duck and chicken will go much faster. And
remember, each time you do a Turducken it gets easier; it doesn't take
magical cooking abilities, it just takes care. What is magical is the
way people eating your Turducken will feel about your food!

1 (15 to 20 pound) turkey
1 (5 to 6 pound) domestic duckling
1 (3 to 4 pound) chicken
Andouille Sausage Dressing (recipe follows)
Cornbread Dressing (recipe follows)
Shrimp Dressing (recipe follows)
Sweet Potato Eggplant Gravy (recipe follows)
1 (15 x 11-inch) ungreased baking pan, at least 2½ deep
6 sheet pans
3 metal or bamboo skewers
1 pan, larger than the 15 x 11-inch pan, that the smaller pan will fit
inside with room to spare (NOTE: The 15 x 11-inch pan size is ideal
because the Turducken fits snugly in the pan and stays in the proper
shape while cooking.)
1 small hammer

STEPS FOR MAKING THE TURDUCKEN
An Important Note About Refrigeration:  As you complete the steps for
making the Turducken, you will be refrigerating the fowl and dressings.
It is very important to keep the meats as cold as possible before
preparing them, and to chill all the finished items as quickly as
possible after preparing. The best way to accomplish this is to spread
the prepared items (or lay them flat in the case of the de-boned fowl)
on a sheet pan and place them in the coldest part of your refrigerator.
While the items are chilling, keep the refrigerator door closed as much
as possible.
STEPS TO BE DONE ONE DAY AHEAD
 Prepare the Cornbread for the Cornbread Dressing
 De-bone the turkey, chicken and duck
 Bring the water to a simmer and prepare the Poultry Stock
 Roast the vegetables for the Sweet Potato Eggplant Gravy
 Prepare the Andouille Dressing
 Prepare the Cornbread Dressing
 Prepare the Shrimp Dressing
 Assemble the Turducken

TURDUCKEN DAY!
Bake the Turducken
10.   Prepare the Sweet Potato Eggplant Gravy
11.   Let the Turducken rest for 1 hour before serving
12.   While the Turducken is resting, bake the extra
dressings

TURDUCKEN SHOPPING AND PREPARATION LIST
. 1 chicken (3 to 4 pound).  7 bay leaves .  1 duckling (5 to 6
pound) .  ¾ cup corn flour .  1 turkey, (15 to 20 pound).  1 cup
cornmeal.  2 lbs. duck or chicken giblets .  2 tablespoons dark
brown sugar .  2½ pounds andouille sausage.  1 cup evaporated
milk.  1½ pounds shrimp, peeled.  1 cup sugar.  9 cups celery,
chopped (total).  6 cups very fine dry breadcrumbs,
unseasoned (preferably French bread).  7 tablespoons garlic, minced

Makes 4 servings

 

1 lb. ground beef

1/3 cup finely chopped onion

¼ cup saltine cracker crumbs

1 egg white, slightly beaten

2 tablespoon milk

1 jar (12 oz.) mushroom gravy

Salt and Pepper, to taste

 

1.  In medium bowl, combine ground beef, onion, cracker crumbs,

egg white, milk, horseradish, salt and pepper, mixing lightly

but thoroughly.

2.  Shape into four oval ½ thick patties.

3.  Heat large nonstick skillet over medium heat until hot.

4.  Place beef patties in skillet.

5.  Cook 7 to 8 minutes or until centers are no longer pink,

turning once.

6.  Remove from skillet; keep warm.

7.  Add gravy to skillet; heat through.

Willie's White Chili

 

1 tablespoon vegetable oil

1 onion, chopped

3 cloves garlic, crushed

1 (4 ounce) can diced jalapeno peppers

1 (4 ounce) can chopped green chile peppers

2 teaspoons ground cumin

1 teaspoon dried oregano

1 teaspoon ground cayenne pepper

2 (14.5 ounce) cans chicken broth

3 cups chopped cooked chicken breast

3 (15 ounce) cans white beans

1 cup shredded Monterey Jack cheese

 

Heat the oil in a large saucepan over medium-low heat. Slowly

cook and stir the onion until tender. Mix in the garlic,

jalapeno, green chile peppers, cumin, oregano and cayenne.

Continue to cook and stir the mixture until tender, about 3

minutes. Mix in the chicken broth, chicken and white beans.

Simmer 15 minutes, stirring occasionally.

Remove the mixture from heat. Slowly stir in the cheese until

melted. Serve warm.

Stir-Fried Hot and Sour Cabbage

 

1 head cabbage, medium (about 1 lb.)

3 green onions (with tops)

1 Tbsp cornstarch or arrowroot powder

1 Tbsp cold water

3 Tbsp vegetable oil

2 large cloves garlic, finely chopped

¼ cup tomato sauce

1 tsp sea salt

1 tsp red pepper sauce

½ cup chicken broth

Cut the cabbage into 1½ inch pieces. Cut the green onions into 2

inch pieces. Mix cornstarch and water and set aside.

 

Heat wok until 1 or 2 drops of water bubble and skitter when

sprinkled in wok. Add vegetable oil; rotate wok to coat side.

Add cabbage and garlic; stir-fry 1 minute. Add tomato sauce,

salt and pepper sauce; stir-fry 1 minute. Stir in chicken broth;

heat to boiling. Stir in cornstarch mixture; cook and stir until

thickened, about 10 seconds. Stir in green onions and cook 1

minute longer, stirring constantly.

Johnny's CHICKEN CHILI VERDE

 

In New Mexico, chili verde is prepared with lots of meat --

and no beans. This recipe uses chicken, and you can make it

spicier by adding jalapeño chilies. Serve it with the Layered

Rice Salad and the Toasted Jalapeño Corn Bread.

 

3 pounds skinless boneless chicken thighs, cut into 1/2-inch

pieces

5 tablespoons all purpose flour

7 tablespoons olive oil

3 cups chopped onions

3 tablespoons chopped garlic

1 1/2 cups chopped fresh Anaheim chilies* (about 4)

2 green bell peppers, cut lengthwise into 1/4-inch-thick strips

5 cups frozen corn kernels, thawed

6 cups canned low-salt chicken broth

12 tomatillos,** husked, coarsely chopped

2 tablespoons chopped fresh oregano or 1 tablespoon dried

2 tablespoons chili powder

1 tablespoon ground cumin

1 teaspoon paprika

2 cinnamon sticks

1 cup chopped fresh cilantro

Tortilla chips

 

*Also known as California chilies. Available at Latin American

markets and many supermarkets.

**A green tomato-like vegetable with a paper-thin husk.

Available at Latin American markets and some supermarkets.

 

Sprinkle chicken with salt and pepper. Coat with flour. Heat 1

tablespoon oil in heavy large skillet over medium-high heat.

Add half of chicken to skillet and sauté until golden brown,

about 10 minutes. Transfer to large pot.

Repeat with 1 tablespoon oil and remaining chicken.

 

Heat 2 tablespoons oil in same skillet over medium-high heat.

Add onions and garlic; sauté until onions are tender,

about 5 minutes. Transfer to pot with chicken. Heat 1

tablespoon oil in same skillet over medium-high heat.

Add Anaheim chilies and green bell peppers. Sauté until tender,

about 4 minutes. Transfer to pot with chicken. Heat 1 tablespoon

oil in same skillet. Sauté half of corn until tender,

about 2 minutes. Transfer to pot with chicken. Repeat with

remaining 1 tablespoon oil and corn.

 

Add chicken broth, tomatillos, oregano, chili powder, cumin,

paprika and cinnamon sticks to pot. Bring liquid to boil.

Reduce heat and simmer until mixture thickens and flavors blend,

stirring occasionally, about 2 hours. (Can be prepared 1 day

ahead.

Refrigerate until cool.

Cover and keep refrigerated. Rewarm over medium heat before

continuing.)

 

Mix cilantro into chili. Transfer to large serving bowl. Garnish

with tortilla chips and serve.

 

Serves 12.

Clone of a Cinnabon

INGREDIENTS
· 1 cup warm milk (110 degrees F/45 degrees C)
· 2 eggs, room temperature
· 1/3 cup margarine, melted
· 4 1/2 cups bread flour
· 1 teaspoon salt
· 1/2 cup white sugar
· 2 1/2 teaspoons bread machine yeast
· 1 cup brown sugar, packed
· 2 1/2 tablespoons ground cinnamon
· 1/3 cup butter, softened
· 1 (3 ounce) package cream cheese, softened
· 1/4 cup butter, softened
· 1 1/2 cups confectioners' sugar
· 1/2 teaspoon vanilla extract
· 1/8 teaspoon salt

DIRECTIONS
1.  Place ingredients in the pan of the bread machine in the
order recommended by the manufacturer. Select dough cycle; press
Start.
2.  After the dough has doubled in size turn it out onto a
lightly floured surface, cover and let rest for 10 minutes. In a
small bowl, combine brown sugar and cinnamon.
3.  Roll dough into a 16x21 inch rectangle. Spread dough with
1/3-cup butter and sprinkle evenly with sugar/cinnamon mixture.
Roll up dough and cut into 12 rolls. Place rolls in a lightly
greased 9x13 inch-baking pan. Cover and let rise until nearly
doubled, about 30 minutes. Meanwhile, preheat oven to 400
degrees F (200 degrees C).
4.  Bake rolls in preheated oven until golden brown, about 15
minutes. While rolls are baking, beat together cream cheese,
1/4-cup butter, confectioners' sugar, vanilla extract and salt.
Spread frosting on warm rolls before serving.

   1 pound powder sugar, (3 3/4 +cup)

   1/4 cup milk

   1 tablespoon vanilla

   1 cup miniature marshmallows

   1/2 cup cocoa

   1/2 cup margarine

   1/2 cup nuts chopped.

   Any kind would both english and black, and pecans

 

   1. Melt margarine, add powdered sugar, milk, vanilla, marshmallows (packed 
tightly into cup and a little overflowing), cocoa. 2. Cook on high (650 watts)

for 2 to 3 min. Stir, put in nuts, pour in greased pan, cool about 1 hour, cut 
before completely cool.

   3 cups water

   1/4 cup minced onions, instant

   2 teaspoons salt

   1/2 teaspoon black pepper

   2 envelopes french instant mashed potato granules

   1 cup mayonnaise

   1 tablespoon prepared mustard

   2 cups thinly sliced celery

   1/2 cup diced green bell pepper

   1/4 cup pickle relish, drained

   1/4 cup chopped pimiento

   4 eggs, hard boiled

 

   Bring water, onion, salt, black pepper and celery to a boil. Remove from 
heat and add instant potato, whipping briskly. Chill. Blend in mayonnaise and

mustard. Stir in remaining ingredients until evenly distributed. Pack in 1-1/2 
quart greased ring mold or other mold. Chill, turn out on lettuce leaves.

3/4 cup shortening (part butter or oleo)

1 cup brown sugar

1/4 cup molasses

1/2 teaspoon cloves

1 egg

Grated rind of orange

2 teaspoons soda

1/4 teaspoon salt

1 teaspoon cinnamon

1 teaspoon ginger

2 1/4 cups flour

 

Cream shortening, add sugar, molasses, egg and rind. Stir in the dry 
ingredients which have been sifted together. Chill and mold into balls the size 
of

walnuts. Roll in sugar, sprinkle tops with water and bake at 375 degrees for 10 
minutes or until done. They will have crackle tops.

4 cups flour

1/4 teaspoon cream of tarter

1/2 teaspoon salt

1-1/2 cups soft margarine

1 cup ice water

1/4 cup sugar

1/4 teaspoon cinnamon

 

Mix flour, cream of tarter and salt in mixing bowl stirring with knife and 
fork. Continue stirring adding 1 cup margarine and dry ingredients along with

cold water a few tablespoons at a time. Continue to stir with fork until dry 
ingredients are kneaded in. Roll out pastry into a large round. Spread on

a little margarine and sprinkle with a small amount of sugar. Fold over 4 times 
spreading more margarine and sugar each time. Fold over 2 or 3 more times

each time rolling dough out to its original size. Cut into 2-inch squares then 
place on a baking sheet and cook for 15 minutes at 350.

   1 can french style green beans

   1 can cream of celery soup

   1 can chow mien vegetables

   1 can french fried onions

   1/4 teaspoon salt

   1/2 cup chopped almonds

 

   Drain the green beans and chow mien vegetables. Mix all ingredients into 
casserole dish and cover, saving some french fried onions, then bake at 350

degrees for 20 minutes. Remove cover, add onions and bake 10 minutes more.

1 cup butter softened

3/4 cup granulated sugar

1-1/2 tablespoons dark molasses

2 teaspoons ground cinnamon

1/2 teaspoon ground cardamom

1 tablespoon water

1 teaspoon baking powder

2-1/2 cups all-purpose flour

1 egg white lightly beaten

Sugar

 

Beat butter at medium speed with an electric mixer until creamy then add sugar 
beating until smooth. Add molasses, cinnamon and cardamom beating until blended.

Combine water and baking powder stirring until baking powder is dissolved then 
add to butter mixture. Gradually add

flour to butter mixture beating until blended. Turn dough out onto a lightly 
floured surface then roll to 1/4 thickness. Cut with a round cookie cutter.

Place 2 inches apart on lightly greased baking sheets then brush evenly with 
egg white and sprinkle with sugar. Bake at 375 for 8 minutes then cook on

baking sheets for 5 minutes then remove to wire racks and cool completely.

2 cups flour

2 cups granulated Sugar

1/2 cup butter

1/2 cup shortening

1 cup strong brewed coffee

1/4 cup dark unsweetened cocoa

1/2 cup buttermilk

2 eggs

1 teaspoon baking soda

1 teaspoon vanilla

Frosting:

1 stick butter

2 tablespoons dark cocoa

1/4 cup milk

3-1/2 cups powdered sugar

1 teaspoon vanilla

 

In a large mixing bowl combine flour and sugar. In heavy saucepan combine 
butter, shortening, coffee and cocoa then stir and heat to boiling. Pour boiling

mixture over flour and sugar in the bowl. Add buttermilk, eggs, baking soda and 
vanilla then mix well using a wooden spoon then pour into well buttered

jelly roll pan and bake at 400 for 20 minutes. While brownies bake prepare the 
frosting. In a saucepan combine butter, cocoa and milk then heat to boiling

stirring constantly. Mix in powdered sugar and vanilla until frosting is smooth 
then pour warm frosting over brownies as soon as you take them out of oven.

Cool and cut into bars.

3/4 teaspoon baking soda

1-1/2 tablespoons water

1 cup shortening

1 cup firmly packed light brown sugar

1/2 cup sugar

2 large eggs

10 orange candy slices chopped

3/4 cup chopped pecans

1/2 cup flaked coconut

2 cups all-purpose flour

1-1/2 cups uncooked quick-cooking oats

3/4 teaspoon baking powder

2 cups powdered sugar

1/4 cup orange juice

 

Stir together soda and water until dissolved. Beat shortening at medium speed 
with an electric mixer until creamy. Gradually add sugars beating until fluffy.

Add soda mixture, eggs and next 3

ingredients and beat until blended. Combine flour, oats and baking powder then 
gradually add to shortening mixture beating until blended. Drop by rounded

tablespoonfuls onto lightly greased baking sheets. Bake cookies at 350 for 12 
minutes. Remove to wire racks to cool. Stir together powdered sugar and orange

juice then drizzle over cookies.

Well, old Mare is feeling better.  My back really kicked up this time and put 
me out of commission for a few days.  I'll have to start going to Columbus 
again for those 3 injections.  I get them every six months.

I have had several back surgeries, and I know a lot of people say that wouldn't 
do that, however, when you lie in bed for 15 days and can't walk, unless you 
have the surgery, then you don't have much choice.

Anyway, I'm back and I thank everyone for their nice comments and best wishes.  
I'm lucky to have such wonderful friends.

2 eggs

1 tsp vanilla

3/4 c bacon grease

1 c sugar

2 c flour, divided

1/2 tsp baking soda

1 tsp allspice

1/2 c raisins

Cream together bacon grease  sugar until smooth. Add egga  vanilla  beat 
well, until mixed. Measure 1 c unsifted flour  sift together with baking soda

 allspice. Add to creamed mixture. Stir until well mixed. Mix in remaining 
flour a little at a time. Add raisins  mix well. Drop by heaping teaspoonsufl

of dough onto ungreased cookie sheet. Bake at 350°F 12 min or until lightly 
browned. Cookies will be soft to touch when removed from oven. Serve with 
coffee.

 3 1/2-4 dozen 2 cookies

1 cup shortening

1 egg

1 vanilla

1 cup cooked mashed yams

2 cups flour

1/4 teaspoon allspice

1/2 teaspoon salt

1/2 teaspoon nutmeg

1/2 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon cinnamon

1 cup raisins

Preheat oven to 350. Combine dry ingredients and set aside. Cream shortening, 
eggs and vanilla then add yams and mix well then stir in dry ingredients and

raisins. Mix well then drop by rounded spoonfuls on greased cookie sheets. Bake 
for 12 minutes. Allow to cool a few minutes on cookie sheet then transfer

to wire rack to cool completely.

Orange-Scented Chocolate Thins

  1cup  butter flavor all-vegetable shortening

  1cup  confectioners' sugar

  1   teaspoon  orange zest

  1   teaspoon  orange extract

  1   teaspoon  vanilla extract

  1 1/2   cups  all-purpose flour

 1/2   cup  unsweetened cocoa powder

  1   teaspoon  cardamon

 1/2  teaspoon  salt

 1/8  teaspoon  ground cinnamon

Chopped toasted hazelnuts -- optional

 

In a medium bowl, beat shortening and sugar at high speed with an electric 
mixer until light and fluffy, about 3 minutes.  Add zest and extracts, beating

well.

 

In a medium bowl, combine flour, cocoa, cardamon, salt, and cinnamon, sift.  
Gradually add flour mixture to shortening mixture, beating on low speed until

mixture is combined.  Shape dough into a 1 1/2 x 14-inch log.  Wrap in 
parchment paper.  Refrigerate for 2 hours.

 

Preheat oven to 350º.  Line baking sheet with parchment paper.

 

Slice dough into 1/4-inch-thick cookies.  Roll edges in chopped toasted 
hazelnuts, if desired.  Bake for 12 to 15 minutes.  Cool on pan for 5 minutes. 

Remove from pans, and cool completely on wire racks.  Store in an airtight.

Donna Beck sent these sweet cookies that feature white chocolate and 
cranberries for a delightful taste from Scottdale, Pennsylvania. And the red 
and white

coloring add a great holiday feel to any cookie tray.

 

SERVINGS: 24

CATEGORY: Lower Fat

METHOD: Baked

TIME: Prep: 20 min. Bake: 10 min./batch

 

Ingredients:

1/3 cup butter, softened

1/2 cup packed brown sugar

1/3 cup sugar

1 egg

1 teaspoon vanilla extract

1-1/2 cups all-purpose flour

1/2 teaspoon salt

1/2 teaspoon baking soda

3/4 cup dried cranberries

1/2 cup vanilla or white chips

 

Directions:

In a large mixing bowl, beat butter and sugars until crumbly, about 2 minutes. 
Beat in egg and vanilla. Combine the flour, salt and baking soda; gradually

add to butter mixture and mix well. Stir in cranberries and chips.

Drop by heaping tablespoonfuls 2 in. apart onto baking sheets coated with 
cooking spray. Bake at 375° for 8-10 minutes or until lightly browned. Cool

for 1 minute before removing to wire racks. Yield: 2 dozen.

Yield: Makes 2 drinks.

 

4 pieces DOVE® Dark Chocolate

1 tablespoon cocoa powder

4 ounces vodka

2 ounces coffee liqueur

1 tablespoon instant espresso

Special Equipment:

Resealable plastic bag

Shaker

2 martini glasses

 

1. Heat DOVE® Dark Chocolate in plastic bag in microwave until

melted, about 10-15 seconds. Snip corner of bag and drizzle

inside chilled martini glasses. Rim edge of glass in cocoa and

chill until ready to serve.

2. Shake vodka, coffee liqueur, instant espresso, and ice cubes.

Pour into prepared glasses and serve chilled.

3. * Not intended for creation or consumption by persons under

21 years of age.

Hello everyone
THANK THANK THANK YOU!!! for all the prayers and warm thoughts that you all 
have shown towards me and my family for the birth of my new nephew.
He and mamma are out of danger now, and I am a proud Auntie once again to a 
little baby boy!!

His name is Joshua James Casiano Jr
and he was born today about 2 hours ago, and he is
7 lbs, 8 ounces and 19 inches
wow!
and she still had 3 weeks to go:they said that if she was to give birth in 
December, as she was suppose to, the babe would of weighed 12lbs, geesh!!!
amazing...
God is so good and he is so awsome!!
each and every single positive thought and prayer indeed work, and out of all 
the trouble she had since I first posted about the problems and dangers, 
God has prevailed and everyone is just fine!!
so, on behalf of a proud, and rested auntie,
I thank you on behalf of Josh and mamma Allie

I'm sorry you didn't get as positive news as you would have liked.

Sometimes these types of things take a while.  And, I guess you kind
of knew that it wasn't quite back all the way if you were having pain
when typing on the computer.

I know what you mean about long drawn out appointments.  Sorry all
that stuff happened and I will pray that the next appointment is
uneventful.

 I had my appointment yesterday at the orthopedic clinic to see the surgeon
 who operated on my wrist.
 I had x-rays done and I thought I was doing quite well actually, doing
 dishes, putting laundry away, squeezing toothpaste and a whole bunch of
 other daily chores even chopping and cutting up stuff in the kitchen. And, I
 was hoping not to have to go back again! But, I was wrong! Lol. I found out
 that my right wrist is not quite as strong as my left one! The doctor put a
 piece of paper between my thumb and index finger, and yep? He was able to
 take it away quite easily, even though I thought I was hanging on to it for
 dear life! Lolololol. Then, I had to squeeze his finger first with one hand
 and then the other. The same thing happened. I guess I still have to work up
 the strength in my right wrist in order for me to be back to normal. So, he
 says he wants to see me in another month. But, that will depend on when they
 book me. It could be 6 weeks from now. And I was there for 3 hours! My
 appointment was for 2:15 and I didn't get out of there till after 5. All
 that waiting was just a pain. And my friends who took me, I hated like hell
 to put them out, but, they left for a doctor's appointment, for 4:30, but
 they came back to get me to take me home of course.
 Oh and in the meantime, there was a fire drill or the alarm went off, and my
 poor friends had to walk down 7 flights of stairs because the elevators
 didn't work at the time of the alarm going off. And then, of course, there
 were I don't know how many firetrucks approaching the hospital.
 Needless to say, it was a long afternoon. On the way home, we stopped so I
 could pick up some KFC for supper.
 My wrist still hurts to type for a long period of time.
 I still have to do wrist exercises to get the strength back in my wrist.

 Guess I'll just keep on keepin' on.

 In a medium saute pan, heat 2 tablespoons of butter over medium heat.
 Add onion and peppers and cook until softened, stirring occasionally.
 Remove from heat.

 Combine remaining 6 tablespoons butter, eggs, and sour cream in a
 large bowl. Whisk together until smooth. Mix in corn, cornmeal, salt
 and pepper. Stir in cheese and onion-pepper mixture.

 Turn into a 2-quart buttered baking dish. Bake in a preheated 350
 degree F. oven for 30 to 35 minutes, until puffed and golden.

  FROSTED CARAMEL COOKIES   

  1 c. sugar
  1 1/2 c. lard (I use Crisco)
  1 1/2 c. molasses
  1 c. boiling water
  1 tbsp. soda
  1 tbsp. cinnamon
  1/2 tsp. ginger
  1 tbsp. vanilla

  Cream together sugar and lard or Crisco. Add molasses. Dissolve soda in 
water. Add to the mixture while still hot. Add spices. Then add enough flour to 
make a soft dough. Roll, cut and bake in a 350 degree oven until done, 10-15 
minutes. You can drizzle a powdered sugar frosting or make 7 minute frosting to 
put on the cookies. 


 
   
 

Royal Icing
Use caution when using raw egg whites.

Use this for decorative icing.

2 cups confectioners' sugar
1 egg white, unbeaten
1 teaspoon lemon juice
Dash of salt

Add sugar gradually to egg white. Work together well with wooden spoon until 
smooth and shiny. Add lemon juice and salt; stir well.  Enjoy.

Wilton Butter cream Icing
Courtesy of Wilton Industries, Inc. - used by Recipe Goldmine with permission.

1 cup solid vegetable shortening 
1/2 teaspoon butter extract 
2 tablespoons milk 
4 cups sifted confectioners' sugar

Cream shortening with electric mixer. Add butter extract. Gradually add sugar, 
one cup at a time, beating well on medium speed. Scrape sides and bottom of 
bowl often. When all sugar has been mixed in, icing will appear dry. Add milk 
and beat at medium speed until light and fluffy. Keep icing covered with a damp 
cloth until ready to use.

For best results, keep icing bowl in refrigerator when not in use. Refrigerated 
in an airtight container, this icing can be stored 2 weeks. Re-whip before 
using.

 Watch out! You nearly broad sided that car! My father yelled at me.

'Can't you do anything right?'

Those words hurt worse than blows. I turned my head toward the elderly man 
in the seat beside me, daring me to challenge him. A lump rose in my throat 
as
I averted my eyes. I wasn't prepared for another battle. I saw the car, 
Dad. Please don't yell at me when I'm driving.'

My voice was measured and steady, sounding far calmer than I really felt.

Dad glared at me, then turned away and settled back. At home I left Dad in 
front of the television and went outside to collect my thoughts. Dark, heavy
clouds hung in the air with a promise of rain. The rumble of distant thunder 
seemed to echo my inner turmoil. What could I do about him?

Dad had been a lumberjack in Washington and Oregon . He had enjoyed being 
outdoors and had reveled in pitting his strength against the forces of 
nature.
He had entered grueling lumberjack competitions, and had placed often. The 
shelves in his house were filled with trophies that attested to his prowess.

The years marched on relentlessly. The first time he couldn't lift a heavy 
log, he joked about it; but later that same day I saw him outside alone, 
straining
to lift it. He became irritable whenever anyone teased him about his 
advancing age, or when he couldn't do something he had done as a younger 
man.

Four days after his sixty-seventh birthday, he had a heart attack. An 
ambulance sped him to the hospital while a paramedic administered CPR to 
keep blood
and oxygen flowing.

At the hospital, Dad was rushed into an operating room. He was lucky; he 
survived. But something inside Dad died. His zest for life was gone. He 
obstinately
refused to follow doctor's orders. Suggestions and offers of help were 
turned aside with sarcasm and insults. The number of visitors thinned, then 
finally
stopped altogether. Dad was left alone.

My husband, Dick, and I asked Dad to come live with us on our small farm. We 
hoped the fresh air and rustic atmosphere would help him adjust.

Within a week after he moved in, I regretted the invitation. It seemed 
nothing was satisfactory. He criticized everything I did. I became 
frustrated and
moody. Soon I was taking my pent-up anger out on Dick. We began to bicker 
and argue.

Alarmed, Dick sought out our pastor and explained the situation. The 
clergyman set up weekly counseling appointments for us. At the close of each 
session
he prayed, asking God to soothe Dad's troubled mind.

But the months wore on and God was silent. Something had to be done and it 
was up to me to do it.

The next day I sat down with the phone book and methodically called each of 
the mental health clinics listed in the Yellow Pages. I explained my problem
to each of the sympathetic voices that answered in vain.

Just when I was giving up hope, one of the voices suddenly exclaimed, 'I 
just read something that might help you! Let me go get the article.'

I listened as she read. The article described a remarkable study done at a 
nursing home. All of the patients were under treatment for chronic 
depression.
Yet their attitudes had improved dramatically when they were given 
responsibility for a dog.

I drove to the animal shelter that afternoon. After I filled out a 
questionnaire, a uniformed officer led me to the kennels. The odor of 
disinfectant stung
my nostrils as I moved down the row of pens. Each contained five to seven 
dogs. Long-haired dogs, curly-haired dogs, black dogs, spotted dogs all 
jumped
up, trying to reach me. I studied each one but rejected one after the other 
for various reasons too big, too small, too much hair. As I neared the last
pen a dog  in the shadows of the far corner struggled to his feet, walked to 
the front of the run and sat down. It was a pointer, one of the dog world's
aristocrats. But this was a caricature of the breed.

Years had etched his face and muzzle with shades of gray. His hipbones 
jutted out in lopsided triangles. But it was his eyes that caught and held 
my attention.
Calm and clear, they beheld me unwaveringly. I pointed to the dog. 'Can you 
tell me about him?' The officer looked, then shook his head in puzzlement.
'He's a funny one. Appeared out of nowhere and sat in front of the gate. We 
brought him in, figuring someone would be right down to claim him. That was
two weeks ago and we've heard nothing. His time is up tomorrow.' He gestured 
helplessly. As the words sank in I turned to the man in horror. 'You mean
you're going to kill him?' 'Ma'am,' he said gently, 'that's our policy. We 
don't have room for every unclaimed dog.' I looked at the pointer again. The
calm brown eyes awaited my decision. 'I'll take him,' I said.

I drove home with the dog on the front seat beside me. When I reached the 
house I honked the horn twice. I was helping my prize out of the car when

 pen a dog  in the shadows of the far corner struggled to his feet, walked 
 to
 the front of the run and sat down. It was a pointer, one of the dog

 Years had etched his face and muzzle with shades of gray. His hipbones
 jutted out in lopsided triangles. But it was his eyes that caught and held
 my attention.

  LIGHTNING GRAVY   

  1 1/2 tablespoons beef, chicken, or pork soup base
  1 tablespoon fresh or 1/2 as much dry parsley
  1/4 teaspoon black pepper
  2 tablespoons Wondra flour
  1-2 tablespoons butter
  1/2 tablespoon olive oil (or meat drippings)
  1/2 teaspoon onion powder (or onion soup mix)
  1/4 teaspoon garlic powder (or 2 cloves minced garlic)
  1 1/2 cups cold broth or water
  1/4 onion, thinly sliced or minced

  This is a casual, quick, gravy to help dress up weekday meals. Use it 
when you don't have the makings for gravy, or to top mashed potatoes or rice, 
or even to dress up a store-bought roast chicken. 
  Feel free to vary quantities as desired. Add more flour for a thicker 
gravy, or more broth to thin it out. Or try using vegetable broth for a 
different taste. 

  Stir all ingredients together in a large pyrex bowl or measuring cup and 
microwave for 5-7 minutes, stirring occasionally. Let stand until sauce 
thickens.

Professional Butter Cream Frosting
1 1/4 cups Crisco shortening (only use Crisco)
2 pounds confectioners' sugar
1 teaspoon salt
1/2 cup water
2 tablespoons Karo light corn syrup
1 teaspoon butter flavoring
1 teaspoon vanilla extract

Beat 5 to 10 minutes with an electric mixer until very smooth. Water down a 
small amount for a crumb coat if frosting a cake. After 20 minutes (when set), 
frost with remainder of frosting. When set, use paper towel or typing paper to 
set desired surface texture.

This is fluffy enough to frost easily, yet stiff enough for keeping its shape 
for decorating.

Source: From Learn to Bake.You'll Love it! a 1947 publication of General Foods 
Consumer Services Dept. 

1/2 cup brown sugar
2 tablespoons Swans Down cake flour
1/4 cup melted butter
2 tablespoons water
1/2 cup finely chopped pecans

Mix together all ingredients. Spread carefully, a small amount at a time over 
hot cake in pan. Place in moderate oven (375 degrees F) and bake 5 minutes. 
Cool and cut cake in pan.

Makes topping for a 9-inch square or 13 x 9-inch cake.

Mock Twinkie Filling
1 cup milk
1 cup granulated sugar
1/2 cup Crisco (white)
1 teaspoon vanilla extract
5 tablespoons flour
1/2 teaspoon salt
1/2 cup butter

Mix flour with milk; boil until thick, then cool. After mixture has cooled, 
beat until fluffy (10 to 15 minutes). Add remaining ingredients, beating well 
as you add them individually, one at a time. Spread the filling between layers 
of cake.

NOTE: The longer the milk and flour mixture is beaten, the fluffier the filling 
will be.

 Four days after his sixty-seventh birthday, he had a heart attack. An
 ambulance sped him to the hospital while a paramedic administered CPR to
 keep blood

 At the hospital, Dad was rushed into an operating room. He was lucky; he
 survived. But something inside Dad died. His zest for life was gone. He

It's a lot of fun to let your guests think you're serving them a regular
holiday turkey. When you start to carve the turkey, they'll be quite
surprised to see you cut through its bones!

Since the Turducken takes about 8 hours to cook (and then it needs to
cool at least 1 hour before it's carved), you will need to plan your
time wisely. First, be sure your oven temperature control is accurate by
using (or purchasing) an inexpensive oven thermometer to monitor the
oven's temperature instead of relying on the oven temperature control.
Otherwise, your Turducken may take considerably less or more time than
you have planned. The quickest way to prepare your Turducken is to get
friends or family members to help make the dressings and de-bone the
fowl. (If you're on your own, you will need to allow more time for
preparation of the Turducken). We get letters every year from Turducken
Teams - friends and relatives who gather together to make (and eat!)
their Turduckens as a group activity!  It might be fun to take pictures
along the way so that you can look back and have Turducken memories
year-round! It's also nice to serve additional dressing in bowls at the
table, so our dressing recipe will make about 8 cups extra of each
dressing. If you do not want to serve extra dressing with your
Turducken, you can cut each dressing recipe in half. If you're
inexperienced at de-boning fowl, start with the turkey; because of its
size, you can more easily see the bone structure. After de-boning the
turkey, the duck and chicken will go much faster. And remember, each
time you do a Turducken it gets easier; it doesn't take magical cooking
abilities, it just takes care. What is magical is the way people eating
your Turducken will feel about your food!

1 (15 to 20 pound) turkey
1 (5 to 6 pound) domestic duckling
1 (3 to 4 pound) chicken
Andouille Sausage Dressing (recipe follows)
Cornbread Dressing (recipe follows)
Shrimp Dressing (recipe follows)
Sweet Potato Eggplant Gravy (recipe follows)
1 (15 x 11-inch) ungreased baking pan, at least 2½ deep
6 sheet pans
3 metal or bamboo skewers
1 pan, larger than the 15 x 11-inch pan, that the smaller pan will fit
inside with room to spare (NOTE: The 15 x 11-inch pan size is ideal
because the Turducken fits snugly in the pan and stays in the proper
shape while cooking.) 1 small hammer

STEPS FOR MAKING THE TURDUCKEN
An Important Note About Refrigeration:  As you complete the steps for
making the Turducken, you will be refrigerating the fowl and dressings.
It is very important to keep the meats as cold as possible before
preparing them, and to chill all the finished items as quickly as
possible after preparing. The best way to accomplish this is to spread
the prepared items (or lay them flat in the case of the de-boned fowl)
on a sheet pan and place them in the coldest part of your refrigerator.
While the items are chilling, keep the refrigerator door closed as much
as possible. STEPS TO BE DONE ONE DAY AHEAD  Prepare the Cornbread for
the Cornbread Dressing  De-bone the turkey, chicken and duck  Bring the
water to a simmer and prepare the Poultry Stock  Roast the vegetables
