  SWEET POTATO PUDDING TOPPED WITH
  MARSHMALLOWS   

  2 lbs. sweet potatoes
  1/2 stick butter
  3/4 to 1 1/4 c. sugar, depending on sweetness of potatoes
  3 eggs
  3/4 c. evaporated milk
  2 tsp. vanilla extract
  1 tsp. powdered cinnamon
  3 tbsp. dark rum (opt.)
  1 lb. marshmallows

  Wash and boil sweet potatoes in their jackets until tender. Peel, then 
add butter while potatoes are still hot, and mash with a potato masher until 
mixture is smooth. Add sugar, stir until well mixed. Then add eggs, one at a 
time, beating mixture well until all 3 eggs have been added. 
  Stir in evaporated milk, vanilla, cinnamon and rum if desired. Pour into 
a buttered 2 quart casserole and bake in a preheated 375 degree oven for 30 
minutes. Top with whole marshmallows and continue baking until browned. Serve 
hot. Yield: 8 servings.  Enjoy.

  MARSHMALLOW SWEET POTATO CASSEROLE   

  8 med. sweet potatoes
  2 tbsp. butter
  1/2 c. hot milk
  1/2 tsp. salt
  1/2 tsp. cinnamon or nutmeg
  1/4 tsp. paprika
  1 c. chopped walnuts
  1/2 lb. marshmallows

  Cook sweet potatoes until tender. Remove skins and mash. When smooth, 
beat in butter, milk, salt, spices. Beat well. Fold in walnuts and turn into 
buttered baking dish. Top with marshmallows and bake at 350 degrees until 
marshmallows puff and become golden brown.

  2 bars chocolate-covered toffee candy
  1 pkg. (sm.) butterscotch pudding  pie filling (instant)
  2 c. milk
  2 c. Cool Whip

  Put candy bars in refrigerator. Prepare pudding mix with milk as per 
package directions. Cover bowl with plastic wrap to prevent film from forming. 
Chill about 2 hours. 
  To serve, in each 8 ounce parfait or dessert dish, layer 1/2 cup pudding, 
1/4 cup toffee bar, broken in small pieces, 1/2 cup Cool Whip, topping with 1/4 
toffee bar pieces. Serve immediately or prepare ahead and keep refrigerated 
until serving. Makes 4 servings.

CLOISTERED HAMBURGER SOUP 

   1/2 pounds lean ground beef
   1 each medium.
   Onion chopped
   1 cup carrots sliced
   1 cup celery sliced
   1 cup cabbage sliced
   6 ounces (1 can) tomato paste
   2 teaspoons Worcestershire sauce
   3 cups beef bouillon or stock

   
In skillet, brown hamburger and drain thoroughly. Add onion, carrots, celery 
and cabbage. Combine tomato paste, Worcestershire sauce and beef stock/bouillon.
Add to crock pot, with hamburger an stir to blend. Cover and cook on low 
setting for 8 to 10 hours, or high setting for 3 to 4 hours.

  BROCCOLI RICE CHEESE CASSEROLE   

  1 (6 oz.) box UNCLE BEN'S® long grain and wild rice (long cooking)
  1/2 lb. fresh sliced mushrooms
  1 (10 oz.) box frozen chopped broccoli
  10 to 12 oz. Monterey Jack cheese (shredded)
  1 3/4 qt. casserole dish
  Recipe can easily be double for party size crowd.

  Wash, drain and dry mushrooms. Slice mushrooms and cook over medium high 
heat in butter and garlic salt. Cook rice according to package directions. Cook 
frozen broccoli according to package. In a casserole dish arrange layers of 
rice, mushrooms, broccoli, and cheese until all ingredients are used. Heat 
casserole in 350 degree oven for 20 minutes or until cheese is melted.

I am wondering what the size can of milk would be.

  BROCCOLI CAULIFLOWER CASSEROLE   

  1 bunch of broccoli
  1 head of cauliflower
  1 can of (evaporated) milk
  1 can of cream of mushroom soup
  1 can of cream of chicken/celery soup
  2 cloves of garlic
  pinch of salt
  1 tbsp. of paprika
  1 tbsp. of oregano
  1/2 tsp. of cayenne pepper (if desired)
  1/2 cup of Parmesan cheese
  *1/4 cup of softened butter is optional (to be mixed with soup and milk)

  Cut broccoli and cauliflower into edible-sized pieces of and set aside 
for the moment. Crush/mince the garlic and add the pinch of salt to the garlic, 
for this will help the mincing if you're doing it by hand. 
  In a mixing bowl, combine milk and both cans of soup and mix well. You 
may mix the spices in with the soup mix at this time, as well as with the 
garlic, or you can add the spices at the end to top off the casserole. 

  Finally, put the broccoli and cauliflower in a casserole dish, then pour 
the soup mix and spices over top, distributing evenly. 

  Sprinkle the Parmesan cheese over the top and bake (covered)for about 
30-40 minutes at 350F, or until vegetables are soft enough to eat. 

  A variation of this recipe might include red peppers or sauteed chicken 
breast (both are quite good), which can be mixed in with the soup mix.

  Remove lid from Cheez Whiz and microwave for 30 seconds. Place 
ingredients in casserole dish. Pour melted cheese over and mix. Bake at 350

  2-3 apples, unpeeled and sliced
  1/3 c. chopped pecans
  1/2 c. brown sugar, packed
  1 tsp. cinnamon
  2 (17 oz.) cans sweet potatoes or yams, drained
  1/4 c. butter
  2 c. marshmallows, reg. or miniature

  Toss apples and nuts with combined brown sugar and cinnamon. Alternate 
layers of apples and sweet potatoes in 1 1/2 quart greased casserole dish. Dot 
with butter. Cover. Bake at 350 degrees 35-40 minutes. Sprinkle marshmallows 
over sweet potatoes and apples. Continue baking until lightly browned.

  TURKEY POT PIE   


  6 tablespoons butter
  6 tablespoons flour
  2 cups turkey or chicken broth
  1 cup milk or heavy cream
  salt, to taste
  2 cloves garlic, pressed
  1/2 teaspoon black pepper
  4 cups cubed cooked turkey or chicken
  1 lb. frozen peas, carrots and onion mixture
  2 Pillsbury pie crusts or 9 home-made

  Preheat oven to 425°F. 
  In a medium saucepan, melt butter over medium-low heat with the pressed 
garlic cloves. Whisk in the flour and cook for several minutes, stirring 
occasionally. Gradually stir in the broth until absorbed. Add the milk or cream 
slowly, stirring constantly so that lumps don't form. Season with salt and 
pepper. Cook, uncovered, over low heat (low simmer) until the sauce has 
thickened, stirring occasionally. Allow to cool for at least 30 minutes (may be 
made a day ahead). 

  Thaw the frozen peas, carrots and onions for 15 minutes. (Note: If you're 
unable to find peas, carrots and onion combination, use 12 oz peas and carrots 
with 1 whole fresh onion, chopped). 

  Lightly butter or spray with non-stick spray a deep dish pie pan or 
shallow casserole. Line the bottom of the pie plate or dish with one of the pie 
crusts. Add cooked cubed turkey and the vegetables. Pour in the gravy mixture. 
Cover with the upper pie crust and flute or crimp the edges, if desired. 

  Bake for about 40 minutes or until golden brown.

  TOMATO PIE   

  CRUST:

  2 c. Bisquick
  1/2 c. milk

  Mix and roll between wax paper and fit in sprayed 9 or 10 inch pie pan. 
Turn edge under and flute. 
  Peel about 6 large tomatoes. Cut in thick slices and place on crust to 
fill shell. Sprinkle with salt, pepper, chives and basil and a little sugar. 
Cover with topping:


  1 c. grated sharp cheese
  1 c. mayonnaise

  Bake at 400 degrees for 25-30 minutes. Can be made ahead of time and 
stored in refrigerator for 1/2 a day. Remove 1 hour before baking.

  1/2 c. mayonnaise or salad dressing
  2 tbsp. all-purpose flour
  1 c. milk
  1 1/2 c. chopped cooked turkey
  1 (10 oz.) pkg. frozen mixed vegetables, thawed and drained
  1 tsp. chicken-flavored bouillon granules
  1/8 tsp. pepper
  1 (4 oz.) pkg. refrigerated crescent rolls

  Melt mayonnaise in a heavy saucepan over low heat; add flour, stirring 
until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over 
medium heat, stirring constantly, until mixture is thickened and bubbly. Stir 
in turkey, mixed vegetables, bouillon granules, and pepper; cook over medium 
heat until thoroughly heated. Spoon into a 9-inch quiche dish or pie plate. 
  Unroll crescent rolls, and place rectangular pieces side by side on a 
lightly floured surface, firmly pressing perforations to seal. Roll dough to a 
10-inch square; cut into 1-inch strips, and arrange in a lattice design over 
chicken mixture. Bake at 375 degrees for 15 to 20 minutes or until golden 
brown. Let pot pie stand 10 minutes before serving. Yield: 4 servings.

  Crumble together. Mix well and sprinkle over bottom of large (10 inch) 
pie pan. Bake at 350 degrees for 15 minutes.

  2ND LAYER:

  1 c. powdered sugar
  1 (3 oz.) pkg. cream cheese
  1 c. Cool Whip

  Beat until creamy and spread over first layer.

  3RD LAYER:

  2 sm. boxes instant butterscotch pudding
  3 c. milk

  Beat until thickened and spread over second layer.

  4TH LAYER:

  Spread with Cool Whip and sprinkle with chopped nuts. Chill. Rich and

  2 c. butterscotch chips
  1 c. dark Karo syrup
  4 eggs
  1/2 tsp. salt
  1 c. pecan halves
  9 inch unbaked pie shell

  Preheat oven to 350 degrees. Melt butterscotch chips over very low flame; 
set aside. In a large bowl, combine Karo corn syrup, eggs, and salt; beat well. 
Gradually blend in melted butterscotch. Beat until smooth. Stir in pecans. Pour 
into unbaked pie shell. Bake 50 minutes.  Enjoy.

  6 tbsp. melted butter
  2 lg. pkgs. frozen broccoli spears, partially cooked
  4 tbsp. diced onion
  4 tbsp. diced celery
  4 tbsp. Parmesan cheese
  1/2 c. bread crumbs
  1 tsp. salt
  1/4 tsp. pepper
  1/4 tsp. oregano

  Put melted butter in oblong baking dish. Line bottom of dish with 
broccoli. Mix rest of ingredients together and sprinkle over broccoli. Cover 
with foil and bake at 375 degrees for 45 minutes.

  1 lb. ground beef
  1/2 c. chopped onion
  3/4 tsp. oregano
  1/2 tsp. paprika
  1 tsp. garlic salt
  1/2 tsp. pepper
  1/2 tsp. chili powder
  1 c. grated Colby cheese

  CRUST TOPPING:

  3/4 c. Bisquick
  3 eggs
  1 1/2 c. milk

  Grease deep pie dish. Saute hamburger and onion. Add spices and press in 
pan. Put on cheese. Blend topping and pour over top. Bake 30 minutes. Let set 5 
minutes before cutting.

  FRUIT  NUT BREAD PUDDING   

  16 slices bread, 3 or 4 days old, torn into 1 pieces
  2 c. sugar
  4 eggs
  3 c. milk
  2 tsp. cinnamon
  1 tsp. salt
  2 tbsp. vanilla
  1 (21 oz.) can apple pie filling, slices cut in half
  2 c. chopped pecans (opt.)
  1 c. golden raisins
  3/4 c. melted butter

  In a large bowl, combine bread and sugar. Set aside. In another bowl beat 
eggs, milk, cinnamon, salt and vanilla until foamy. Pour over bread and sugar; 
mix well. Cover and refrigerate 2 hours. Stir in all remaining ingredients. 
Pour into greased 13x9x2 baking pan. Bake at 350 degrees for 45 to 50 
minutes or until firm. Cut into squares. Serve warm or cold. Serve with whipped 
cream or Butterscotch Sauce. 


  HOT BUTTERSCOTCH SAUCE   

  1 1/2 c. brown sugar
  1/4 c. white corn syrup (Karo)
  2/3 c. evaporated milk

  Combine brown sugar and syrup. Cook to soft ball stage. Cool slightly and 
add milk. Stir in thoroughly. Serve over ice cream.  Enjoy.

  APPLE BUTTERSCOTCH CRUMB PIE   

  Unbaked pie pastry
  4-6 c. pared, sliced crisp apples
  1 1/2 tsp. lemon juice
  1/2 - 3/4 c. sugar
  1/4 c. flour
  1 tsp. cinnamon
  1/8 tsp. salt
  6 oz. butterscotch chips
  1/4 c. butter
  3/4 c. flour
  1/8 tsp. salt

  Line 9 1/2 inch pie plate with pastry. Toss apples, lemon juice, sugar, 
1/4 cup flour, cinnamon and salt together. Spoon into pie crust. Cover edge of 
pie crust with aluminum foil to prevent over browning. Bake at 375 degrees for 
20 minutes. 
  While baking - prepare crumbs. Melt butter and butterscotch chips in 
double boiler or microwave. Add 3/4 cup flour and 1/8 teaspoon salt with a fork 
until uniformly crumbly. 

  Remove foil from pie, spread crumbs over top. Return pie to oven and bake 
additional 25 minutes or until bubbly.

  2 (17 oz.) cans sweet potato halves, drained
  1 c. cranberries
  1/4 c. chopped pecans
  1/2 c. Kraft orange marmalade
  1 1/2 c. Kraft miniature marshmallows

  Arrange sweet potatoes in 10x6 baking dish. Top with cranberries and 
nuts. Dot with marmalade. Bake at 350 degrees 30 to 35 minutes. Sprinkle with 
marshmallows. Broil until lightly browned. 6 to 8 servings.

  1/4 c. butter
  1/4 c. Bisquick baking mix
  2 tbsp. chopped onion
  1/8 tsp. pepper
  1 1/4 c. chicken broth
  1 c. frozen mixed vegetables
  1 1/2 c. cut-up cooked chicken
  1/2 c. Bisquick baking mix
  1/3 c. milk
  1 tbsp. melted butter

  BOTTOM CRUST:

  2 tbsp. firm butter
  1 c. Bisquick baking mix
  2 tbsp. milk

  Prepare bottom crust. 
  Heat butter in 2-quart saucepan until melted; stir in 1/4 cup baking mix, 
the onion and pepper. Cook, stirring until mixture is bubbly; remove from heat. 
Stir in chicken broth; add vegetables. Heat to boiling, stirring constantly. 
Boil and stir 1 minute. Stir in chicken; heat thoroughly. 

  Pour chicken mixture into bottom crust. Mix remaining ingredients until 
smooth. Pour evenly over chicken mixture; spread gently to edge. Bake 25 
minutes or until golden brown. Let stand 10 minutes before serving.

  2 pkg. (10 oz.) frozen chopped broccoli
  1 (8 oz.) pkg. Velveeta cheese, diced
  1 sleeve Ritz crackers
  1/2 c. melted butter
  1/4 c. melted butter (for the base of casserole)

  Cook broccoli as directed on package. Crush crackers and mix with 1/4 cup 
melted butter in bottom of casserole dish; cover with 1/2 of the diced cheese, 
followed by 1/2 of the broccoli and 1/2 of the crumbs. Add another layer of 
broccoli and cheese; top with crumbs. 
  Bake at 375 degrees for 30 minutes.

  1 (16 oz.) bag frozen broccoli cuts
  1 (8 oz.) jar Cheez Whiz
  1 sm. onion, chopped
  1 can cream of chicken soup
  1 egg
  1 carton low cal cottage cheese
  1 roll low salt Ritz crackers
  1 stick butter
  9 x 12 inch greased casserole dish

  Cook broccoli and drain. Put in bottom of dish. Melt Cheez Whiz and mix 
well with soup, egg, onion and cottage cheese. Pour over broccoli. Melt butter 
and mix with crushed Ritz crackers. Put on top of casserole. Bake at 350 
degrees for 25 to 30 minutes.

  Whipped cream

  Combine sugar, flour and salt and stir in milk slowly. Cook over boiling 
water until thickened, stirring constantly. Cover and cook 10 minutes longer, 
stirring occasionally. Add mixture to egg yolks, stirring vigorously; cook 1 
minute longer. Add butter and vanilla and cool. Place filling in the pastry 
shell and cover with whipped cream. Makes 1 (8 inch) pie.

  BUTTERSCOTCH MERINGUE PIE   

  1 prebaked 10 inch pastry shell or flaky pastry for 10 inch pie

  BUTTERSCOTCH FILLING:

  1 1/2 c. brown sugar, light
  2/3 c. cornstarch
  1/2 tsp. salt
  4 c. milk
  6 slightly beaten egg yolks (separated, save egg whites)
  6 tbsp. butter
  2 tsp. vanilla extract

  In saucepan, combine sugar, cornstarch and salt; gradually stir in milk. 
Cook and stir over medium heat until bubbly. Cook and stir 2 minutes. Remove 
from heat. 
  Stir small amount of hot mixture into slightly beaten egg yolks; 
immediately return to hot mixture; cook additional 2 minutes, stirring 
constantly. Remove from heat. Add butter and vanilla. Pour into cooled pie 
shell. Spread meringue on top of pie and bake at 350 degrees for 12-15 minutes. 
Cool before serving.


  MERINGUE:

  6 egg whites, separated
  1 tsp. vanilla extract
  1/2 tsp. cream of tartar
  12 tbsp. granulated sugar

  Beat egg whites with vanilla and cream of tartar until soft peaks form. 
Beat on high speed of electric mixer. Gradually add granulated sugar, beating 
until stiff and glossy peaks form and all sugar is dissolved. Spread meringue 
over hot butterscotch filling, sealing to edge of pastry shell. Bake at 350 for 
12- 15 minutes or until meringue is golden brown.

  2 (16 or 18 oz.) can sweet potatoes, drained
  1 (8 oz.) can juice packed pineapple chunks, drained reserving juice
  30 marshmallows
  1/3 c. firmly packed light brown sugar
  3 tbsp. butter

  Preheat oven to 350 degrees. Arrange sweet potatoes and pineapple in 1 
1/2 quart shallow baking dish. In medium saucepan, combine pineapple juice, 10 
marshmallows, sugar and butter. Cook and stir until marshmallows melt. Pour 
over potatoes. Bake 40 to 50 minutes or until bubbly. Top with remaining 
marshmallows. Return to oven 5 minutes or until marshmallows are soft and 
lightly browned. Makes 6 to 8 servings.

more the better) mashed potatoes, gravy and baked sweet potatoes.  As 
for dessert I think it might be pecan pie  I should clarify things by 
saying almost anything but cranberry anything, mincemeat pie and 
probably others but can't think of right now.

Hi, My favorite holiday foods are turkey, dressing, or as it is also called, 
the stuffing, mashed potatoes, corn, no sweet potatoes or that green bean 
casserole, thank you!, and I love the dinner rolls, jelled, not the whole 
cranberry sauce. Desserts? Pumpkin anything! Pumpkin roll, pumpkin pie, 
pumpkin mousse, apple pie, cheesecake, chocolate cake, anything chocolate,

The Fastest, Easiest, Tastiest No-Roll Pie Crust Ever!

This is good, but I confess, I have never used 
olive oil. I have used corn and sunflower oil

with  great success.

  If you've always feared pie crust—here's your 
new best friend. And, if you're watching
your diet, the entire recipe (two crusts) is 
cholesterol-free, and contains just
2 to 4 teaspoons of good fat-olive oil-per serving.
3 cups (12 ounces) King Arthur Mellow Pastry Blend
1 tablespoon (1/2 ounce) sugar
1/2 teaspoon baking powder
1 1/8 teaspoons salt
1 teaspoon vanilla extract
2/3 cup (4 3/4 ounces) light olive oil*
1/3 cup (2 3/4 ounces) cold water
*For best flavor, use light or extra-light olive oil.
Stir together the dry ingredients. Stir together 
the wet ingredients. Combine the
two, stirring just to blend. Divide the mixture 
in half; it'll make two single crusts,
or one crust plus a streusel topping.
Press half the pastry into the bottom and up the 
sides of a 9 pie pan, crimping
the edges. Use the other half to make the bottom 
crust for another pie. Or put it
back in the mixing bowl, add 1/3 cup (2 1/2 
ounces) brown sugar and 1 teaspoon cinnamon,
and mix till it becomes moist/crumbly. Fill your 
prepared crust, spread the topping
over the filling, and bake as directed.

I also love the turkey, gravy, mashed potatoes, and stuffing!
I like almost every veggie. No minced meat pie or pumpkin pie for me. I'll 
just take cherry. I don't like pecans either.

My favorite holiday food is Glazed ham,Potato Salad, Dressing, Baked
Veggies,, Coconut Cream Pie, Coconut Cake,Yams baked with oranges(I use
Mandarin Orange Slices,Brown sugar,some times I put Marshmallows on top
and cinnamon..Dinner Rolls,and Cranberry Sauce..

more the better) mashed potatoes, gravy and baked sweet potatoes. As for
dessert I think it might be pecan pie I should clarify things by saying
almost anything but cranberry anything, mincemeat pie and probably

Almost Fat Free Brownie Mix in a Jar

Ingredients: 
In a a medium bowl combine: 
1/2cup  unsifted flour 
  1cup  turbinado sugar 
1/4cup  Ghiradelli powdered chocolate 
1/4cup  Dutch Cocoa powder 
  1tbl  powdedred egg whtites plus 
  1tsp  powdered egg whites 
  2tbl  Cornstarch 
1/4tsp  baking powder 
1/4tsp  salt 
  8 oz  nonfat vanilla yogurt 
Method:
Stir together gently with a wire whisk until all ingredients are
combined. Store in a sealable container.
When it comes time to bake them, here are the instructions (which I
affixed to the top of the jars on an index card.)
You need: 1 8 oz. container of fat free vanilla yogurt (I like Dannon
the best)
Preheat oven to 350 degrees.
Empty dry contents into a medium bowl. Add the yogurt and stir well.
Mixture will be rather thick.
Lightly spray an 8 x 8 inch pan with cooking spray, and spread the
brownie mix into the pan.
Bake for 31-33 minutes, until brownies test ALMOST done.
Cool completely and enjoy!
Notes: Turbinado sugar is just like Sugar in the Raw, I think. I just
like it better than granulated white stuff. It can be found, along with
Ghiradelli chocolate at most grocery stores, but my favorite place to
shop is Meijer's. They never are out of what I need.
Also, I say remove from over when brownies are almost done because they
will continue to cook a bit out of the oven. The tooth pick will have a
little bit of residue on it, but nothing gooey.
Lastly, these brownies are best when totally cooled down. So resist the
temptation, because it's really worth it.
NOTES : This was just posted on 3FC's WW Dessert board. It looks like it
has potential. I haven't tried it myself, but Kaitlyn vouches for the
results. I haven't run this through Mastercook. I'll bet that the
calories aren't that low (considering that it calls for 1 1/2 cups of
sugar.
Here's a recipe for something I have been working on... fat free brownie
mix in a jar. Almost everyone I know is health conscious but are also
plagued by an insatiable sweet tooth (like me)! So I'm whipping up a few
batches of these, and putting them in jars and giving them away as
little gifts. Hope someone else out there tries this... they're really
good and fudgy (I like fudgy brownies better than cake-like). [Kaitlyn]

Method:
Preheat oven at 325. Place a baking sheet onto middle rack and remove
top rack from oven. Before starting batter, wash 8 (1 pint) wide mouth
canning jars with lids in hot soapy water and let drain, dry, and cool
to room temperature. Generously prepare jars with margarine. In a mixing
bowl, combine margarine, sugar, egg whites, vanilla, almond extract, and
applesauce. In another mixing bowl, combine flour, cocoa powder, baking
powder, baking soda, and salt. Mix wet ingredients with dry ingredients
just until moistened. Spoon 1 level cupful of batter into each jar.
Carefully wipe rims clean, then place jars on baking sheet (or they'll
tip over) in the center of oven. Bake 40 minutes. Keep lids in hot water
until they're used. When cakes are done, remove jars which are HOT from
oven one at a time. If rims need cleaning, use moistened paper towel.
Carefully put lids and rings in place, then screw tops on tightly shut.
Place jars on a wire rack; they will seal as they! cool.
Once jars are cool, decorate with round pieces of cloth and then glue on
flowers, ribbons, etc. on lid, ring and side of jar. Unscrew the ring
(the lid should be sealed by now) and place a few cotton balls on top of
the lid
(makes it poofy on top), then a piece of cloth (about 3 larger than the
lid) on top and screw the ring back on. Decorate as desired (example
pinking shears).
NOTES : There's no need to refrigerate them, they keep well in pantry
for 6 months.

Butterscotch Brownie Mix in a Jar

Yield: 2 dozen 
Ingredients: 
1/2cup  firmly packed flaked coconut 
3/4cup  chopped pecans 
  2cup  firmly packed brown sugar 
  2cup  flour mixed with 1 1/2 Tbsp. baking powder and 1/4
tsp. salt 
Method:
Layer ingredients in order given in a 1-quart wide-mouth canning jar.
Press each layer firmly in place before adding next ingredient. Attach
these instructions to the Jar:
Butterscotch Brownies
Makes 2 dozen brownies
1. Empty jar of brownie mix into large mixing bowl. Use your hands to
thoroughly blend mix.
2. Add: 3/4 cup (1 1/2 sticks) butter or margarine, very soft 2 eggs,
slightly beaten, 2 tsp. vanilla (optional)
3. Mix until completely blended.
4. Spread batter into a sprayed 9 x 13 metal pan.
5. Bake at 375 degrees F for 25 minutes. Cool 15 minutes in baking pan.
Cut brownies into 1 1/2 inch squares.

*(clean inside of jar with a paper towel after this layer)
Layer ingredients in order given in a 1 quart wide mouth canning jar.
Press each layer firmly in place before adding the next ingredient.
Directions given to recipient:

1 stick soft butter, 1 egg slightly beaten and 1 tsp vanilla
(optional).Mix until completely blended-you will need to finish mixing
with your hands Shape into balls the size of walnuts Place 2 apart on
sprayed cookies sheets Bake 375 for 11-13 min til edges are lightly
browned - cool 5 min on baking sheet and remove cookies to racks to cool
completely.

1/2cup  white chocolate chips 
1/2cup  crisp rice cereal 
  1 1/2cup  all-purpose flour 
3/4tsp  baking soda 
1/4tsp  baking powder 
1/2cup  packed brown sugar 
1/2cup  semisweet chocolate chips 
1/2cup  rolled oats 
1/2cup  white sugar 
Method:
1 In a 1 quart jar, layer the ingredients in the order listed. Pack down
firmly after each addition.
2 Attach a tag that reads: Cream 2 tablespoons of water, 1/2 cup of
margarine, and 1 egg together until light. Add the entire contents of
the jar and stir until well blended. Drop by rounded spoon onto an
unprepared cookie sheet. Bake at 350 degrees F (175 degrees C) for 10 to
12 minutes.
Makes 2 1/2 dozen

Method:
Yes, you can can cakes. And it's easy and quick too. You should start by
doing just one so you can see how far it will rise (start with filling
the jar about 1/2 full). You don't want the cake to come above the tope
of the jar, only to about 1/4 or 1/2 inch from the lip. When you find a
recipe that works, be sure to note how far you filled the jars. Once you
have this established, you can do more than one at a time. The cakes
will be very moist since they will be sealed. They should be able to be
stored about 6 months - IF they last that long!!! Check the seal at
least once a week (instruct your gift recipients of this) by pressing on
the lid. If it moves up and down, the seal is broken. If you have
checked them, it should be safe to eat, otherwise, toss the cake out.
Most recipes will end up using about 8 jars, so this might help you with
how full to fill them. Sterilize as many jars as you think you will
need. You will want to use jellie jars or wide mouth jars (pint size) so
the cake will slide out (and it will too). It is absolutely necessary to
use new lids (flats). The rings don't have to be though.
You will want to use quick-bread type of recipes - like brownies,
gingerbread, and fruit cakes (applesauce, pumpkin). The light fluffy
cakes tend to fall after the jar is sealed. Baking times will vary. This
is something you will have to work with. Start with around 25-30
minutes.
Place jars on a cookie sheet in the center of the oven  bake until cake
tester inserted in center comes out clean. Have your sterilized lids
ready (keep them hot). Take one jar at a time from the oven, place a
lidEring on top and screw down tightly.
Note: be very careful doing this as the jars will be hot. Be sure to use
hot pads. And work fast. The process of screwing down the rings will be
a point where you could easily burn yourself. Do this fast because the
lids get HOT-use heavy-duty mitts! Allow to cool on countertop. You'll
know when they've sealed, you'll hear a plinking sound. If you're still
not sure, test them by allowing the jars to cool, then push down on the
lid, it shouldn't move at all.
Now decorate the jars how ever you choose. You can ask for the jars back
as they are expensive. You can include instructions. The cake will slide
out easily and it can be sliced into rounds and eaten with some whipped
topping or just plain. Or maybe a glaze drizzed over it. Let them know
they can do as they wish.
Note: Jars should be able to be purchased in any grocery store. The jars
can be reused, but check for any damage especially in the lip of the
jar.

a dear friend two CHRISTmas's ago and plan on giving these out every
CHRISTmas!

  1can  Sweetened Condensed Milk 
  1 1/3cup  Popcorn -- un-popped 
  1cup  Sugar 
  1cup  Brown Sugar -- packed 
Method:
Set aside can of milk. Layer sugar and brown sugar in a one quart
canning jar. Next, place popcorn into a small zip baggie. Seal baggie
and place on top of sugar. Place lid on jar, then using clear packaging
tape, attach the can of milk to the bottom of jar so they are firmly
connected for storage purposes  store in a cool, dry place until ready
to use. Attach the following instructions for later use, or for gift
giving: Caramel Popcorn
Remove popcorn from jar and using your preferred method, pop corn until
you have about 12 cups or 3 quarts of popped corn. Remove un-popped
kernels from corn, and set aside. In a large saucepan, mix sugar from
jar with 1/2 cup butter or margarine and the can of sweetened condensed
milk. Stirring constantly, bring mixture to a boil. Boil for one minute
and remove from heat. Working quickly, pour mixture over popped corn,
coating as much as possible while pouring, then using a large wooden
spoon, mix popcorn and caramel until all corn is well coated. Spread
onto cookie sheets which have been prepared with non-stick cooking
spray, or eat directly from bowl.

MATERIALS REQUIRED
Quart Mason canning jar w/lid 6 to 7 inch diameter cloth circle Ribbon
Cookie ingredients (dry)
Paper or recipe card for baking directions
COWBOY COOKIES (oatmeal/choc. chip)
1 1/3 cup quick oats
1/2 cup firmly packed brown sugar
1/2 cup granulated sugar
1/2 cup chopped nuts
1 cup chocolate chips
1 1/3 cup flour mix with:
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
In Mason quart canning jar layer dry ingredients in order given,
Pressing each layer firmly in place before adding next ingredient. Place
jar lid on, cover with cloth circle, screw lid ring on. Put ribbon
through hole in recipe card, tie onto neck of jar.
BAKING DIRECTIONS:
Empty dry ingredients in large bowl. Blend thoroughly by hand.
ADD:
1 stick melted butter (or margarine)
1 egg slightly beaten
1 teaspoon vanilla extract
Mix by hand until completely blended. Shape into balls (size of
walnuts). Place 2 inches apart on GREASED cookie sheet. BAKE 350 degrees
11 to 13 minutes.
Barb Says: Same as with the Cake In A Jar, these are given as gifts. A
friend sent this to me last year!

Fudgy Brownie Gift Mix in a Jar 
Keys:  Cookies Bars Low Calorie Fat Free Diet Holidays Gifts Homemade
Mixes Yield: 12 
Ingredients: 
Dry Mix 
1/2cup  unsifted flour 
  1cup  turbinado sugar 
1/4cup  Ghiradelli powdered chocolate 
1/4cup  Dutch Cocoa powder 
  1tbl  powdered egg whites plus 
  1tsp  powdered egg whites 
  2tbl  Cornstarch 
1/4tsp  baking powder 
1/4tsp  salt 
  Extra Ingredients To Bake:   
  8 oz  nonfat vanilla yogurt Dannon preferred 
Method:
In a medium bowl, whisk together all dry ingredients
Package as a gift and include a recipe card which says the following:
Preheat oven to 350 degrees.
Empty dry contents into a medium bowl. Add the yogurt and stir well.
Mixture will be rather thick.
Lightly spray an 8 x 8 inch pan with cooking spray, and spread the
brownie mix into the pan.
Bake for 31-33 minutes, until brownies test ALMOST done.
Cool completely and enjoy!
Also, I say remove from over when brownies are almost done because they
will continue to cook a bit out of the oven. The tooth pick will have a
little bit of residue on it, but nothing gooey.
Turbinado sugar is just like Sugar in the Raw, I think. I just like it
better than granulated white stuff. It can be found, along with
Ghiradelli chocolate at most grocery stores, but my favorite place to
shop is Meijer's. They never are out of what I need.
Also, I say remove from over when brownies are almost done because they
will continue to cook a bit out of the oven. The tooth pick will have a
little bit of residue on it, but nothing gooey.
Lastly, these brownies are best when totally cooled down. So resist the
temptation, because it's really worth it. Enjoy! Kaitlyn
NOTES : Here's a recipe for something I have been working on... fat free
brownie mix in a jar. Almost everyone I know is health conscious but are
also plagued by an insatiable sweet tooth (like me)! So I'm whipping up
a few batches of these, and putting them in jars and giving them away as
little gifts. Hope someone else out there tries this... they're really
good and fudgy (I like fudgy brownies better than cake-like).

A THANKSGIVING PRAYER

Thank you, God, for everything
The big things and the small,
For every good gift comes from God,
The Giver of them all.

And all too often we accept,
Without any thanks or praise,
The gifts You send as blessings
Each day in many ways

And so at this Thanksgiving time,
We offer up a prayer;
To thank You, God, for giving us
A lot more than our share.

First, thank You for the little things
That often come our way;
The things we take for granted
And don't mention when we pray.

The unexpected courtesy,
The thoughtful, kindly deed,
A hand reached out to help us
In the time of sudden need.

Oh, make us more aware, dear God,
Of little daily graces,
That come to us with sweet surprise
From never-dreamed-of places.

Then, thank You for the miracles
We are much to blind to see,
And give us new awareness
Of our many gifts from Thee.

And help us to remember
That the key to life and living
Is to make each prayer a prayer of thanks
