John Rich's new solo album, Son of a Preacher Man, will be released in May on 
Warner Bros. Nashville. Rich, whose father is a minister, will release the 
album's first single, Another You, on Jan. 12, according to his official Web 
site. Rich recently completed production of the third season of CMT's Gone 
Country which features funk musician George Clinton, TV personality and Miss 
USA Tara Conner, pop vocalist and actress Taylor Dayne, actor, musician and 
Monkees lead vocalist Micky Dolenz, entertainer and musician Sheila E, actor 
and musician Richard Grieco and American Idol runner-up Justin Guarini. The new 
season begins Jan. 24.

Bob Dylan's Nashville Skyline Outtakes Sold on eBay

An original master recording of outtakes from Bob Dylan's Nashville Skyline 
sessions has apparently sold on eBay for $30,000. The tape was offered by a 
consortium of Ampersand Records USA, Lake Carmel Music and Navybob LLC. The 
auction was for the recording itself -- not the intellectual rights that would 
allow it to be commercially released. The one-inch, eight-track analog tape 
runs for 27 minutes and includes five outtakes of Dylan's hit, Lay Lady Lay, 
and an unreleased jam session of Going Back to Chicago. The recording was 
made on Feb. 14, 1969 at the Columbia Studio on Nashville's Music Row and has 
been stored in a New Jersey warehouse for almost 18 years.

Singer, Songwriter and Producer Delaney Bramlett Dies in Los Angeles

Delaney Bramlett, a roots music singer, songwriter and producer best known as a 
founder of Delaney  Bonnie  Friends, died Saturday (Dec. 27) at a Los Angeles 
hospital of complications from gallbladder surgery. He was 69. The 
Mississippi-born musician found national success in the mid-'60s on the TV 
music series, Shindig, as a member of the Shindogs, the house band that also 
featured guitarist James Burton and keyboardist Glen D. Hardin. He and his 
then-wife Bonnie Lynn later formed Delaney  Bonnie  Friends, opening a 
concert tour for Blind Faith, a British supergroup that included Clapton. 
Clapton briefly joined the couple's band for a series of live shows and a 1970 
album titled On Tour With Eric Clapton. Bramlett also produced Clapton's first 
solo album, a self-titled project released in 1970, featuring Let It Rain, a 
song they wrote together. He is also credited with teaching Harrison how to 
play slide guitar and to write gospel songs, an endeavor that led to Harrison's 
My Sweet Lord. Bramlett's most successful song on the country charts, Never 
Ending Song of Love, was a Top 10 hit for Dickey Lee in 1971. Other versions 
were recorded by Crystal Gayle, the Osmonds, along with two noteworthy duos -- 
Conway Twitty and Loretta Lynn, George Jones and Tammy Wynette. Bramlett and 
Leon Russell co-wrote Superstar, a major hit for the Carpenters. Delaney and 
Bonnie Bramlett dissolved their personal and professional relationship in 1973. 
In recent years, he joined Jerry Lee Lewis to sing Lost Highway, a track on 
Lewis' 2006 album, Last Man Standing. In addition to his wife, Susan 
Lanier-Bramlett, he is survived by four children, including Bekka Bramlett, a 
singer-songwriter based in Nashville.

Blueberry-Banana Bread
Get two tastes in one great-tasting quick  bread. 

2 cups Original Bisquick mix 
3/4  cup quick cooking oats
2/3 cup sugar
1 cup mashed very ripe bananas (2  medium)
1/4 cup milk
2 eggs
1 cup fresh or frozen (thawed and drained)  blueberries

Heat oven to 350ººF. Grease bottom of loaf pan, 9x5x3 inches. 
Stir  Bisquick, oats, sugar,bananas, milk and eggs in large bowl until 
moistened.  Beat
vigorously 30 seconds. Gently stir in
blueberries. Pour into pan.  
Bake 45 to 55 minutes or until toothpick inserted in center comes out clean.  
Cool 10 minutes.
Loosen loaf from sides of pan; remove from pan and place top  side up on wire 
rack. Cool
completely, about 2 hours, before slicing. Wrap  tightly and store at room 
temperature up to 4
days, or refrigerate up to 10  days.

I just love Fried Chicken, and this recipe makes it the  best.
 
Buttermilk Fried Chicken
 
A buttermilk marinade will result in tender, juicy chicken. 

3 pounds frying chicken pieces 
2 cups buttermilk 
1-1/2 teaspoons salt  (or to taste) 
1/2 teaspoon freshly ground black pepper (or to taste)  
1-1/2 to 2 cups Crisco (or other shortening) 
1 cup all-purpose flour  

At least 3 hours (and up to 12 hours) before frying your chicken, 
combine  the buttermilk with half the salt and pepper. Pour mixture 
over chicken  pieces, turn all pieces to coat well, and refrigerate. I use a 
large freezer  ziplock bag that way all the chicken gets coated good.

Melt the  shortening in a heavy skillet over high heat. While the 
shortening is  melting, mix the flour and other half of the salt and 
pepper. Drain marinade  from chicken pieces. Using either the paper 
bag or shallow dish method, coat  the chicken pieces in the flour 
mixture, shake off the excess, and place in  a single layer on a sheet 
of waxed paper. 

When the melted shortening  reaches a temperature of 360°F on a frying 
thermometer, carefully place the  chicken pieces, skin side down, 
starting with the dark meat, in the center  of the skillet. Reduce the 
heat to medium-high, and cover loosely.Cook for  15 minutes or until 
chicken is dark golden. 

Lower heat to medium and  remove cover. Turn the pieces over carefully 
and cook, uncovered, for  another 15 minutes. 

Remove chicken pieces, and drain on paper towels.  Serve hot with 
Cream Gravy, or refrigerate and take with you on a picnic.  

Variations: Add 1 teaspoon Tabasco or your favorite hot sauce to the  
buttermilk marinade; OR 1 or 2 pickled jalapeños with a few tablespoon  of 
their juice.

1/2 cup  celery and leaves, chopped fine 
1/2 _tablespoon_

_Salt and pepper _

Hot sauce, to taste  
4 cups cooked rice (approx 3/4 cup per person) 
Cornbread and cooked  greens, optional 

Wash and sort black eyed peas. Cover with water, place in refrigerator and  
soak overnight. NOTE - TO QUICK SOAK: cover peas with 6-8 cups hot water; bring 
 to a boil, reduce heat and boil 2 minutes. Remove from heat and allow to 
stand 1  hour. 
Drain beans and cover with 6 cups fresh water. Add ham hock, bay leaf, thyme, 
 onion, celery, and bell pepper. Bring to a boil, reduce heat to simmer, 
cover  and simmer 2-3 hours or until black eyed peas are tender. Remove bay 
leaf,  
season with salt, pepper, and hot sauce to taste. Serve over hot cooked rice, 
 with cornbread, cooked greens and with a cold glass of milk.

1/4 cup lemon juice

Zesty Vegetable Lasagna



Yields: 15 servings

Prep Time: 40 minutes

Total Time: 2 hours 10 minutes



  2 1/2 cups ricotta cheese

 1 cup grated Pecorino Romano cheese

 3 cloves garlic, finely chopped

 1 tablespoon each dried oregano and dried basil

 1 large egg

 1 teaspoon each salt, pepper, and crushed red pepper

 2 tablespoons extra-virgin olive oil

 1 pound Cremini mushrooms, roughly chopped

 1 large onion, peeled and sliced 1/4-inch thick

 2 each red and yellow bell peppers, seeded and sliced into 1/4-inch-thick

strips

 12 ounces fresh baby spinach

 4 1/2 cups marinara sauce

 1 pound no-boil lasagna noodles, such as Barilla

 1 1/2 pounds fresh mozzarella cheese, sliced 1/4-inch thick



 1. Make the fillings: Combine the ricotta and Pecorino Romano cheeses,

garlic, herbs, and egg with 1/2 teaspoon each of salt and pepper, and the

crushed

red pepper, in a bowl and set aside. Heat 1 tablespoon oil in a large

skillet over medium-high heat. Add the mushrooms and cook until golden --

about 3

minutes. Add the remaining tablespoon of oil, onions, and peppers and cook

until slightly softened -- about 4 more minutes. Add the spinach and

remaining

1/2 teaspoon each of salt and pepper. Toss and cook until spinach is wilted

and tender -- about 2 minutes. Set aside.



2. Assemble the lasagna: Heat oven to 350° F. Pour 1 1/2 cups sauce into a

deep-dish lasagna pan. Layer 5 lasagna noodles over the sauce. Top with half

of the cooked vegetables and a third of the mozzarella. Layer with 5 more

noodles and spread half the ricotta mixture over the noodles. Top with 1 cup

of sauce and add another layer of noodles. Add the remaining vegetables,

another third of the mozzarella, and a layer of noodles. Spread on the

remaining

ricotta mixture, 1 cup of sauce, and the last layer of noodles. Add the

remaining sauce and mozzarella. Cover with foil and bake until bubbly --

about

1 hour, 20 minutes. Let the lasagna cool slightly before serving.

Veggie Lasagna



1 cup carrots, shredded

1 cup zucchini, shredded

1 cup mushrooms, sliced

1/3 cup onions, diced

1 pkg cooked spinach or 1 pkg frozen spinach (wash and rinse)

2 cups (500ml) 1% cottage cheese

1 tsp (5ml) garlic powder (if you have fresh garlic use that)

1 tbsp (15ml) warm water

1/2 cup partly skimmed mozzarella cheese, shredded

1 pkg (375g) Whole Wheat Lasagna Noodles

1 jar (700g approx.) Low Fat Pasta Sauce



Cook lasagna as per instructions on box. In a nonstick skillet, heat water 
and steam carrots, onions, mushrooms and zucchini (use more water if 
necessary).

Stir in 1/3 of the pasta sauce, garlic and heat thoroughly. In a bowl, 
combine cottage cheese, drained spinach and 1/3 of the mozzarella cheese. 
Spread

3 tbsp of sauce in a 13 x 9 inch baking dish. Layer with 4 noodles, spread 
vegetable combination, 4 noodles, cheese/spinach mixture, 4 noodles, 
remaining

pasta sauce and mozzarella cheese. Bake, covered, at 350 F (180 C) for 30 
minutes and uncovered for 8 to 10 minutes more. Let stand for 10 minutes to 
cool

before serving.

Two Cheese Vegetable Lasagna

1 spray cooking spray

1/2 cup onions, diced

2 cup button mushrooms, or cremini mushrooms, sliced

2 medium garlic cloves, minced

16 oz. chopped frozen spinach, thawed and well drained

15 oz. fat free ricotta cheese

1 cup shredded fat-free mozzarella cheese

1 large egg white

1/8 tsp. ground nutmeg

2 cans (8 oz. ea.) tomato sauce

1 can (14 oz.) diced tomatoes, with basil, garlic and oregano, undrained

8 oz. uncooked whole-wheat pasta, lasagna noodles (9 noodles)

2 TB SoyaKaas Grated Parmesan Style Soy Cheese, or similar product



Preheat oven to 350º F.



Coat a large nonstick skillet with cooking spray and set pan over

medium high heat. Add onion, mushrooms and garlic; sauté until

mushroom liquid cooks off, about 5 to 7 minutes. Add spinach; cook

until liquid evaporates, about 2 minutes more. Remove skillet from

heat and transfer mixture to a large bowl. Add ricotta, mozzarella,

egg white and nutmeg; mix well to combine.



Mix together tomato sauce and diced tomatoes in another bowl. Spoon

3/4 cup of tomato mixture into bottom of an 7 x 11 baking dish.



Top with 3 uncooked lasagna noodles. Top with 3/4 cup more of tomato

mixture and 1/2 of cheese mixture; spread cheese mixture to make an

even layer. Top with 3 more noodles and press noodles slightly into

cheese mixture. Top noodles with 3/4 cup more of tomato mixture and

remaining cheese mixture. Top with remaining 3 noodles, pressing

noodles slightly into cheese mixture.



Top with remaining tomato mixture. Sprinkle with grated cheese topping.



Bake until lasagna filling is bubbly and top is golden, about 40

ROASTED VEGETABLE LASAGNA





12 pieces Lasagna, uncooked

Vegetable oil cooking spray

8 oz. mushrooms, halved

2 zucchini or yellow squash, halved lengthwise and cut crosswise into

1/2-inch pieces

2 yellow or red bell peppers, cut into 1-inch pieces

1 small red onion, cut into 1-inch pieces

2 tbsp. balsamic vinegar

1 tsp. olive or vegetable oil

2 cloves garlic, minced

1/2 tsp. dried rosemary, crushed

1 (26-oz.) jar fat-free spaghetti sauce

1 (15-oz.) container part-skim ricotta cheese

1 (10-oz.) package frozen chopped spinach, thawed, squeezed dry

1 large egg white

1/4 tsp. hot red pepper flakes

1 cup shredded part-skim mozzarella cheese

1/4 cup grated Parmesan cheese



Prepare lasagna according to package directions.



While lasagna is cooking, heat oven to 425 degrees F.



Coat a shallow metal roasting pan with cooking spray. Add mushrooms,

squash, bell peppers and onion.



In a small dish, combine vinegar, oil, garlic and rosemary; brush

evenly over vegetables.



Bake vegetables 15 minutes; toss vegetables. Continue baking 8 to 10

minutes or until vegetables are browned and tender.



Spoon 1 cup spaghetti sauce over bottom of 13 x 9-inch baking dish.

Arrange 4 pieces of lasagna (3 lengthwise, 1 widthwise) over the

sauce. Cover lasagna with 1 cup sauce.



In a medium bowl, combine ricotta cheese, spinach, egg white and hot

red pepper flakes. Drop half the cheese mixture by spoonfuls over

sauce; arrange half of the roasted vegetables between spoonfuls of

cheese mixture. Arrange another 4 pieces of lasagna over cheese and

vegetables, pressing lightly; top with 1 cup sauce. Repeat layering

with remaining cheese, roasted vegetables, 4 pieces of lasagna and

remaining sauce.



Reduce oven temperature to 375 degrees F. Cover lasagna with foil;

bake 45 minutes. Uncover; sprinkle with mozzarella and Parmesan

cheese; continue baking, uncovered, 5 minutes or until cheese is

melted. Let stand 10 minutes before serving.

1 1/2 cups spaghetti sauce -- (core made)

8 ounces whole wheat macaroni

3 cups frozen mixed vegetables -- (sugar snap peas, carrots, onions, and 
mushrooms)

2 teaspoons olive oil

1/4 teaspoon salt

1/8 teaspoon black pepper

1/2 cup fat-free ricotta cheese

2 tablespoons skim milk

1/2 teaspoon dried oregano -- crushed

1/4 teaspoon black pepper

3/4 cup fat-free mozzarella cheese -- shredded

1/4 cup fat-free Parmesan cheese -- grated



1. In a 10-inch skillet bring water and pasta sauce to boiling. Stir in 
uncooked pasta. Return to boiling; reduce heat. Cover and simmer for 12 
minutes,

stirring pasta occasionally.



2. Meanwhile, run water over vegetables in a colander to thaw. Press 
vegetables with a rubber spatula to remove excess liquid. Transfer 
vegetables to a

large bowl. Add the oil., salt, and the 1/8 teaspoon pepper; toss mixture 
gently to coat. Set aside.



3. In a small bowl stir the ricotta cheese, milk, dried oregano, and the 1/4 
teaspoon pepper. Stir in 1/2 cup of the mozzarella cheese and the Parmesan

cheese.



4. Spoon cheese mixture into center of skillet over pasta mixture, spreading 
slightly to make a 4-to 5-inch circle. Spoon vegetables evenly around edge

of skillet over pasta mixture (do not cover cheese in center). Cover and 
simmer for 10 minutes or until vegetables are crisp-tender.



5. Just before serving, sprinkle the remaining 1/4 cup mozzarella over 
vegetables and cheese mixture in skillet.

Caramelized Onion Tarts
Perfect for your next party!
 
These deliciously sweet and savory Caramelized Onion Tarts are a perfect
addition to almost any occasion or holiday party.
Loaded with flavor, not only do they melt in your mouth, but your guests
and friends will be clamoring for more.
One of the nice aspects of this simple appetizer is that you can make it
ahead of time - up to 1 day ahead - baked and all. Simply reheat them
when you are ready to serve. How easy is that?
What you'll need:
- 1 to 2 large onions* (chopped)
- 1/3 cup of packed brown sugar
- 2 Tablespoons of Canola oil
- 1/2 cup of water
- 2 large eggs (beaten)
- 1 cup of milk**
- 1 cup of shredded Swiss cheese (about 4-ounces)
- 1/4 teaspoon of salt
- 1/4 teaspoon of ground pepper
- 1 (2 crust) package (2 crusts) pie crust (ready-to-use)
*sweet Vidalias work well - should be about 3 cups when chopped
**for a richer flavor, substitute heavy whipping cream or baker's cream.
What to do:
Preheat your oven to 375 degrees F.
The second thing to do is cook the chopped oil and brown sugar onions in
a large skillet, stirring the mixture for about 3 minutes. Add the water
and cook and stir until the onions are tender and start to turn a golden
brown - another 5 minutes. Allow the onions to cool a bit.
While you are cooking the onions, you can also stir the following
ingredients in a medium-sized bowl: eggs, milk, cheese, salt and pepper.
Once that is mixed, take the cooled onion mix and stir into the egg
mixture and set aside.
Next, using a 3-inch round cookie cutter (or large glass if you don't
have one), cut the pie crusts into rounds. Any left over pie crust,
simply roll out and cut rounds.
Place each of your rounds in medium muffin cups - shaping to fit the
bottom and pressing about 1/2-inch up the side of each cup.
Here's the fun part, spoon about 2 Tablespoons of your caramelized onion
mixture into each pie crust cup. Then, bake the cups for about 20
minutes or until inserting a knife in the center of the tart comes out
nice and clean. Cool the tarts in the muffin cups for 5 minutes and then
remove and serve if you are serving them right away. Otherwise, store
them for up to one day and reheat when you are ready to serve.
You can serve these delicious little caramelized onion tarts warm or at
room temperature.
This easy appetizer recipe makes 30 to 32 tarts and is great for
holidays like Thanksgiving, Christmas and New Year's Eve.

7 Layer Guacamole Dip
7 Layer Guacamole Dip is one of those dips that gets devoured within the
first half hour, so make sure you have more than you need or you
supplement it with another appetizer, like Frijoles Refritos Dip or Mini
Tacos. You get the picuture! 
Not only is the dip wonderfully creamy, flavorful and the essense of
Super Bowl Sunday, it also pleases most people so it's hard to go wrong
with this appetizer!
What you'll need:
- 2 cans of bean dip
- 1 cup onion (chopped)
- 1 1/2 cups guacamole dip (see note below)
- Sour cream mix (see recipe below)
- 2 cup fresh plum tomatoes (chopped)
- 6 ounces black olives (chopped)
- 8 ounces cheddar cheese (shredded)
So easy you won't believe it! All you need to do is layer the
ingredients above in the order you read them. For instance, place a nice
layer of the bean dip on the bottom of a glass bowl, followed by a layer
of the chopped onion, etc...
Your dip will look beautiful through the glass bowl and should be topped
with the shredded cheese.
If you don't want to use prepared guacamole, make your own. It tastes
better in my opinion, although there are some good frozen quacamole dips
you can buy. Just make sure to completely unfreeze the dip before
layering.
Homemade Guacamole:
- 3 ripe avocados
- 2 tablespoons lemon juice
- Dash of Tobasco sauce
- salt and pepper (to taste)
Simply mash the peeled avocados with the other ingredients to make your
own guacamole.
Sour Cream Mix:
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1 envelope of taco seasoning
Mix all the ingredients together to add to the layer dip in the order
specified above.

Chiles con Queso Dip
Do you like fondue? Do you like Mexican food? Then try this scrumptious
Chiles con Queso dip. You won't go back to dip-in-a-can ever again
(unless you are desperate!)
Chiles con Queso is the perfect complement to tangy margueritas and
great conversation. Especially on cool, fall days. This warm, inviting
dip will not only warm your tummy, but warm your heart, too.
What you'll need:
- 2 Tbsp of unsalted butter
- 1 white onion 
- 2 large ripe tomatoes, finely chopped (reserve juices)
- 2 poblano or anaheim chiles roasted and finely chopped
- 1 jalapeño chile, seeded and minced
- 1/2 tsp of sea salt
- pinch of cayenne pepper
- 6 oz. monterey jack cheese
- 6 oz. sharp cheddar cheese, grated
- 3/4 cup heavy cream or half-and-half
- chafing dish
In a large skillet, over medium heat, melt the butter, add the onion,
and cook until the onion turns translucent - about 5 minutes. Stir often
so onion doesn't stick and burn. 
Add the tomatoes and their juices,chiles, salt, and cayenne pepper.
Reduce the heat to low and simmer for about 15 minutes.
Stir in the grated cheeses and continue to stir until the cheese begins
to melt and blend in. Slowly add the cream and cook for 10 more minutes.
Taste and add salt and more cayenne pepper if needed. Serve immediately
in a hot chafing dish.
You will not be disappointed. Spice up the flavor with a pinch or two of
cumin or add green chile peppers if you like. It's hard to go wrong with
this one! Enjoy!

Frijoles Refritos Dip
Frijoles Refritos Dip can't be served without it's companion, tortilla
chips (and Margueritas!) Mexican cooking is characterized by spicy foods
and this dip is can be spicy - according to how hot of salsa you choose.
Tone it down by using mild salsa if you aren't a spicy fan.
A little bit about frijoles the spanish mexican word for beans - a
staple of Mexican food. When mashed beans are cooked to a smooth paste,
they are called frijoles refritos or refried beans. 
If you are watching the fat intake, you can make Frijoles Refritos Dip
into a low fat dip by substituting fat-free cream cheese, refried beans,
cheddar cheese, and baked (instead of fried) tortilla chips. Then, add
some fire with sliced jalapenos and hot salsa!
This yummy dip only takes about 15 minutes to prepare and the beauty of
it is, you can make it ahead of time (up to a day ahead) and store it
until you serve it to your hungry guests.
What you'll need:
- 2 8-ounce packages cream cheese (softened)
- 1 tablespoon dried cilantro leaves
- 1 16-ounce can refried beans
- 1 cup chunky salsa (mild or spicy to taste)
- 1 cup mild cheddar cheese (grated)
- 1 2-ounce can sliced black olives
- Corn Tortilla Chips
First, mix in a bowl the cilantro into the cream cheese with a wooden
spoon and set aside. Then, in another bowl, mix the salsa into the
refried beans with a wooden spoon and set aside. 
Next, spread the cream cheese mixture onto a serving plate with a
spatula. Spoon the bean mixture over the cream cheese mixture and smooth
it out with a spatula.
All you need to do next is sprinkle the grated cheese on top of the bean
mixture and then top with the sliced black olives.
Cover with the dip with plastic wrap and refrigerate one hour before
serving. Serve with a large bowl of tortilla chips. 
This recipe makes 8 servings.

you and I and everyone in this group are for a purpose, and God has brought 
us all together, yes, for the deliscious recepies, and friendships, but 
imagine, never ever having ever to know one another?
now, that is a blessing that I personally, would of never had. I mean, the 
times when I felt sad, or alone, I knew inside that I had a extended family 
where I can to to just be heard, or to find some advice, and, or 
suggestions.

Creamy Strawberry-Filled Angel Cake

As my Grandmother used to say, It's just a bit of fluff. But this 

angel food cake is really delicious and so low in calories. The recipe 

called for raspberries, but strawberries are our favorite, so use any 

berry you want!!! 

1 cup boiling water
1 package (4 ounces) sugar-free strawberry Jello
1/2 cup cold water
1 pint (2 cups) strawberries
1 container (8 ounces) frozen fat-free whipped topping, thawed
1 round (10 inch diameter) angel food cake
Additional berries, if desired

Pour boiling water over gelatin in large bowl; stir until gelatin is 

dissolved. Stir in cold water. Refrigerate about 1 hour or until
thickened but not set. Fold 1 pint of strawberries and half of the 

whipped topping into the gelatin mixture. Refrigerate 15 minutes or 

until thickened but not set. Split cake horizontally to make 3 layers. 

Fill layers with gelatin mixture. Spoon or pipe
remaining whipped topping onto top of cake. Garnish with extra berries. 

Cover and refrigerate until serving. Makes 12 servings.

1/3 cup softened margarine
1 beaten egg
1 can sweetened condensed milk
1 egg
1 teaspoon vanilla extract
1 cup chopped pecans or walnuts
1/2 cup Heath bits or 1 Heath bar, chopped

Mix together cake mix, margarine, and beaten egg. Pat into a greased 13 
x 9-inch cake pan and set aside.

Mix the condensed milk, egg and vanilla extract together. Beat well. 
Stir in the nuts and Heath bits. Pour over crust and bake at 350 
degrees F for 25 minutes. Cool and cut into bars.

Mustard Bacon Crisps
Mustard Bacon Crisps practically melt in your mouth! This is a great
recipe for any kind of gathering, but what a great one for St. Patty's
Day! 
This takes a little bit of time to put together, but the best part is,
you can do all the prep work ahead of time and bake them right before
you need them. 
The aroma is delectable and your guests and family will be chomping at
the bit once they know they are available!
What you'll need:
- 8 slices bacon (smoked)
- 1/2 cup of ice water
- 1/4 cup of Dijon mustard
- 2 cups flour (all-purpose)
- 1/2 teaspoon of salt
- 1 Tablespoon of baking powder
- 1 teaspoon of pepper (white)
- 6 Tablespoons cold butter (cut into 6 pieces)
First things first. Preheat your oven to 450 degrees F and put your rack
in the middle position.
Next, cook the bacon in a large skillet until it's crisp and place on
some paper towels to drain off the excess grease. Make sure you reserve
2 tablespoons of the bacon drippings to use later. Once the bacon has
cooled, chop it up into small pieces.
Then, in a food processor (use a metal blade) combine the cold water,
the mustard and the 2 tablespoons of reserved bacon drippings. Process
until the mixture is just blended and reserve.
Then again in the newly cleaned food processor combine the flour, salt,
the baking powder and the pepper. Process to combine this mixture first
and then slowly add cold butter. The best way to do this is put your
food processor on the pulse mode until the mixture looks like coarse
meal. 
Next, add the mustard mixture and pulse again until all of it is just
blended. 
Last thing to mix in is the chopped bacon. You'll only need to pulse a
couple of times - just enough to blend in the bacon.
Lastly, place the mixture on a lightly floured work surface and with a
floured rolling pin you'll roll the bacon dough to a 1/8-inch thickness. 
Dip a 2-inch round cutter (you can use a glass if you don't have one) in
flour and press into the dough. Place rounds on two ungreased baking
sheets. 
To make this recipe go further, gather up the scraps and roll out and
continue to cut out as many rounds as you can possibly do.
Bake the rounds for 10 to 12 minutes, or until they become a golden
color. Then, transfer to a couple of cooling racks. 
The best way to serve these yummy crisps is with cheese and fruit. 
This recipe makes about 80 crackers.

Wonton Chile Rellenos
Kids and adults love Wonton Chile Rellenos which makes it perfect for
those parties when both are present. 
I like serving this at holiday parties like Christmas or New Year's
since this is a time for families and friends to get together. 
But this easy appetizer works well as a snack for kids after school too.
Kids love them served warm or cold. And so do I! 
If you want to spice it up a bit, just use chili peppers that are
hotter. And what makes this especially easy to make is - there are only
2 ingredients!
What you'll need:
- 1 package of Chinese wonton wrappers (large if possible)- 1-2 cans of
green chilies (whole)- Cheddar cheese or Monterey jack cheese
Once you've opened the can(s) of chilies, slice them open and remove the
seeds. Make sure you rinse the chilies to get rid of any leftover seeds.
Next, slice the cheese into small slices that will fit easily inside of
the chilies. Put 1 slice of cheese into each of the chilies and then
fold the chili around the cheese.
Then, take one of the wontons and place the cheese-wrapped chili in the
middle. Next, with a pastry brush or your finger, wet the edges of the
wonton with water and then fold over and seal the edges making a little
envelope.
Heat a rather large pan, wok, or deep-fat fryer with enough oil to cover
the wontons. Then, using a slotted spoon, lower the wontons into the
oil. Fry until they are nice and golden brown; this doesn't take much
time at all.
Remove from the oil and drain on paper towels. Be careful, the wonton
chile rellenos are very hot when they come out.
You can then add your favorite topping of salsa, sour cream, grated
cheese, or whatever you like on your Mexican food. Yummy! Enjoy!

Low Fat 5-Layer Dip
Low fat appetizers don't have to be boring! Try this low fat 5-layer dip
in place of the regular mexican version next time you need an appetizer
for a party or event.
It's not only delicious, you won't miss the fat at all! 
What you'll need:
- 1 16-ounce can non-fat refried beans
- 1 1/2 cup non-fat sour cream
- Eight diced plum tomatoes
- 2 mashed avocados sprinkled with lime juice
- 3 Tablespoon mild green chili peppers (drained and chopped)- Baked
Tortilla Chips 
Start by getting out your 13x9x2 glass-baking dish or pan. Then, layer
the ingredients in order from the list above from beans to tomatoes. Dig
in with the baked tortilla chips . That's it! How easy is that?
