Lady Antebellum to Perform New Single on Conan

Lady Antebellum will perform their new single, I Run to You, on NBC's Late 
Night With Conan O'Brien on Thursday night (Jan. 8). The song comes from the 
group's self-titled debut album released in 2008. Their previous hits include 
Love Don't Live Here and Looking for a Good Time. The group is nominated 
for two Grammys. Their next concert will be Wednesday (Jan. 7) at Joe's Pub in 
New York City.

Big Kenny, James Otto Join Benefit for Homeless Veterans

Big  Rich's Big Kenny, James Otto and Randy Houser (Anything Goes) are among 
the musicians performing at a benefit concert for Nashville's homeless veterans 
on Tuesday night (Jan. 6) at the Cannery. Other performers include Brad Arnold 
and Todd Harrell of 3 Doors Down, Jon Nicholson, Shannon Lawson, Damien Horne 
and Danny Salazar. Proceeds will benefit We Are Building Lives, which supports 
Nashville homeless veterans.

Eli Young Band Sells Out 16 Consecutive Shows

The Eli Young Band (When It Rains) sold out 16 shows in six weeks at the end 
of 2008, including a concert at Billy Bob's Texas in Fort Worth. Other sold-out 
performances took place in Denver, Kansas City and San Antonio. It's 
incredible to see the size of our audience growing so quickly, said Mike Eli. 
There's nothing like the feeling you get when you're playing one consecutive 
sold out show after another! The band's current single is Always the Love 
Songs.

Swiss Broccoli Barley Soup

1 1/2 cups water
1 3/4 cups chicken broth
1/2 cup chopped onion
1/3 cup pearled barley
1 small clove garlic, peeled and minced
1/2 tsp. salt
1/8 tsp. pepper
10 ounce package frozen, thawed broccoli
1 cup peeled, thinly sliced carrots
1 1/2 cups milk, divided
1/4 cup all purpose flour
1 cup shredded Swiss cheese

Combine water, chicken broth, onion, barley, garlic, salt and pepper
in a large saucepan. Heat to a boil over medium high heat, stirring
occasionally. Reduce heat, cover and simmer 40 minutes, stirring
occasionally. Add broccoli and sliced carrots. Simmer 15 to 20
minutes until vegetables are tender. Whisk together 1/2 cup milk and
flour in a small bowl until smooth. Whisk the flour mixture into the
soup and simmer 5 minutes, stirring frequently, until thickened. Stir
in remaining 1 cup milk and Swiss cheese. Simmer about 5 minutes
until cheese is melted. Serve hot.

Serves 4 to 6.

2 c. cubed soft bread
1/2 c. shredded sharp Cheddar cheese
2 tbsp. butter, melted
1 c. cooked peas
2 tbsp. chopped onion
3 tbsp. butter
3 tbsp. flour
1 tsp. salt
1/8 tsp. pepper
1 1/2 c. milk
1 c. cut-up meat, cooked (use leftovers!)
1 lg. tomato, sliced
Heat oven to 350 degrees. Mix bread cubes, cheese, and 2 tablespoons
melted butter. Spread half of the mixture in a greased 1-quart casserole
and top with peas. Cook and stir onions in 3 tablespoons butter until
tender. Blend flour and seasonings. Cook over low heat, stirring until
mixture is bubbly. Remove from heat.
Stir in milk, heat to boiling, stirring constantly. Boil and stir for 1
minute. Stir in meat. Pour over peas. Arrange tomato slices on top and
sprinkle with remaining bread crumb mixture. Bake uncovered 25 minutes.
4 servings.

8 oz. pkg. lasagna noodles
1 lb. Mozzarella
1 lb. mild cheddar or American cheese
3 lb. lean ground beef
1 med. onion
1 1/2 tsp. Italian seasoning
1/2 tsp. garlic powder
3 tsp. salt and sugar
1/4 tsp. black pepper
1 (12 oz.) can tomato paste
4 (12 oz.) cans water
1 (#3) can tomatoes
May use oregano, sweet basil, and garlic to taste instead.
Brown ground beef with onion, seasonings, tomato paste, water, and
tomatoes. Grate cheese. Cover bottom of 9 x 13 cake pan with sauce. Lay
a layer of UNCOOKED lasagna noodles over the sauce then cover with the
grated cheeses. Then repeat the three layers. Finish with meat over the
cheese.
Make this the day before or early morning and let stand in refrigerator
for noodles to soak up juices.
Cover with foil and bake 2 hours at 325 degrees. Remove foil the last
1/2 hour. Cool 15 minutes before serving. Then cut and serve

1 1/2 lb. ground beef
1/4 c. chopped onion
2 tsp. salt
1/4 tsp. pepper
1 tbsp. Worcestershire sauce
1 c. milk
1/2 tsp. sage
1/2 tbsp. liquid smoke
Mix all ingredients thoroughly. Pack in 9 x 5 x 3 inch pan. Blend: 1/4
c. catsup 1/4 tsp. nutmeg 1 tsp. dry mustard
Spread over meat loaf and bake at 350 degrees for 1 hour.

LORD PROP US UP...

Every time I am asked to pray, I think of the old deacon who always prayed,
'Lord, prop us up on our leanin' side.' After hearing him pray that prayer many
times, someone asked him why he prayed that prayer so fervently.

He answered, 'Well sir, you see, it's like this... I got an old barn out
back. It's been there a long time; it's withstood a lot of weather; it's gone
through a lot of storms, and it's stood for many years.

It's still standing. But one day I noticed it was leaning to one side a bit.

So I went and got some pine poles and propped it up on its leaning side so it
wouldn't fall.

Then I got to thinking about that and how much I was like that old barn. I've
been around a long time.

I've withstood a lot of life's storms. I've withstood a lot of bad weather in
life, I've withstood a lot of hard times, and I'm still standing too. But I
find myself leaning to one side from time to time, so I like to ask the Lord to
prop us up on our leaning side, 'cause I figure a lot of us get to leaning at
times.

Sometimes we get to leaning toward anger, leaning toward bitterness, leaning
toward hatred, leaning toward cussing, leaning toward a lot of things that we
shouldn't . So we need to pray, 'Lord, prop us up on our leaning side, so we
will stand straight and tall again, to glorify the Lord.''

If you stare at this barn for a second you will see who will help us stand
straight and tall again

1 c. raw grated potatoes
1 c. Italian bread crumbs
1 egg, slightly beaten
1 pkg. dry onion soup mix
Mix all ingredients except dry soup mix. Form into small meatballs.
Brown in a skillet. Place browned meatballs in a casserole dish. Follow
directions on soup package to make gravy. Cover meatballs with gravy.
Bake covered at 350 degrees for 30-45 minutes.

10 1/2 oz. can cream of mushroom soup
1 c. water
1 lb. ground chuck
1/3 c. fine bread crumbs
2 tbsp. minced onion
2 tbsp. minced parsley
1 egg
Salt and pepper to taste
Blend soup with water. Measure 1/4 cup soup mixture and combine with
ground beef, bread crumbs, onion and parsley, egg, salt and pepper.
Shape into oblong patties and brown.
Pour remaining soup mixture over patties. Cook covered over low heat
about 20 minutes.

1/2 lb. lean ground beef
1/2 c. chopped onion
4 c. shredded cabbage
3 tbsp. flour
1 tsp. salt substitute
1/4 tsp. paprika
1/2 tsp. celery seed
3/4 c. low fat milk
Salt to taste
Melt butter in large skillet. Add ground beef and onions. Cook stirring
frequently until meat looses it's pink color and begins to brown. Add
cabbage and continue to cook over moderate heat stirring frequently
until cabbage is wilted and starts to brown. Sprinkle flour and
seasonings over cabbage, stir until flour disappears. Add milk, reduce
heat, cover skillet. Simmer 25 minutes or until cabbage is tender.
Taste, add salt if needed.

Keep 2 airtight containers in freezer. Add leftovers as you have them
(vegetables, rice, plain pasta, are perfect). When you have enough, peel
and dice 2 large potatoes. Dice 1/2 onion, peel and slice 1 or 2
carrots. Combine potatoes, onion, and carrots in about 1 1/2 inches of
water in a heavy pot. Boil until tender, about 20 minutes. Next add
leftovers, salt to taste, and 1 1/2 quarts tomato juice and simmer until
vegetables are separated and heated through.

1 to 3 lbs. (1 1/2 inch thick) chuck steak 
1/4 c. vinegar
2 tbsp. Worcestershire sauce
2 tbsp. (polyunsaturated) oil
1 1/2 tsp. meat tenderizer
1/2 tsp. each marjoram, rosemary  thyme leaves, crushed
Mix vinegar, Worcestershire sauce, oil, meat tenderizer, marjoram,
rosemary and thyme leaves. Combine all ingredients, pour over steak and
marinate for at least 1 hour.
NOTE: Marinating also tenderizes meats. For best results first pierce
meat on all sides with long pronged fork before pouring marinade.

 60Milk chocolate kisses
3/4 c  Butter; softened
1 2/3 c  Sugar
3Eggs
1 tsp. Vanilla
2 c  Flour
2/3 c  Cocoa
1 1/4 tsp. Baking soda
1 tsp. Salt
1/4 tsp. Baking powder
1 1/3 c  Water

Remove wrappers from candies; set aside. Heat oven to 350~. Line muffin
cups with 2-1/2 papers. In large mixer bowl, combine butter, sugar, 

eggs
and vanilla. Beat on high speed of electric mixer for 3 minutes. Stir
together flour, cocoa, baking soda, salt and baking powder; add 

alternately
with water to the butter mixture. Beat just until combined. Fill 

prepared
muffin cups about 1/2 full with batter. Place chocolate kiss in center 

of
each. Bake 20 minutes. Remove to wire rack. Cool. Frost as desired. 

Place
another kiss on top of each cupcake.

High Hat chocolate cupcakes with cream cheese filling
Makes 12.

FOR THE CUPCAKES
1/2  cup unsweetened cocoa powder
1  cup boiling water
1  cup plus 6 tablespoons flour
1  teaspoon baking soda
1/4  teaspoon baking powder
1/4  teaspoon salt
1/2  cup (1 stick) unsalted butter, at room temperature
11/4  cups granulated sugar
2  eggs
3/4  teaspoon vanilla extract

1. Set the oven at 350 degrees. Line a 12-cup muffin tin with cupcake
liners. Lightly grease outside the cups, on top of the tin.

2. In a bowl, combine the cocoa and water; stir well and set aside to

cool.

3. In another bowl, sift the flour, baking soda, baking powder, and

salt.

4. In an electric mixer, beat the butter and sugar until light and

fluffy.
Add the eggs and vanilla and beat for 5 minutes or until light.

5. With the mixer set on low speed, add the flour mixture alternately

with
the cocoa mixture, beginning and ending with flour. After the last of

the
flour is mixed in, beat for 1 minute, until smooth. Divide the batter

among
the 12 liners.

6. Bake the cupcakes for 20 to 25 minutes or until the tops spring back

when
pressed lightly and a toothpick tester comes out clean. Take care not

to
overbake. Cool the cupcakes in the pan for 5 minutes. Carefully loosen

the
cupcakes from pan and cool on wire rack.

FOR THE FILLING AND GARNISH
1/2  cup (1 stick) unsalted butter, at room temperature
8  ounces cream cheese, at room temperature
11/2  teaspoons vanilla extract
1/2  cup confectioners' sugar, sifted
 Extra confectioners' sugar (for sprinkling)

1. In an electric mixer, beat the butter for 3 to 4 minutes or until

light
and fluffy. Divide the cream cheese into 4 pieces and add them to the

butter
one piece at a time, beating well after each addition.

2. Beat in the vanilla, followed by the sugar. Mix just until smooth.

If the
frosting is too thin, refrigerate until firm.

3. When the cupcakes are cool, use a sharp knife to cut out the tops

about ½
inch from the edge, cutting at an angle to produce a cone shape in each
cupcake. Set each top beside its cupcake.

4. Use a pastry bag, a plastic bag (with a hole snipped out of one

corner),
or a spoon to fill each cavity with the cream cheese mixture.

5. Replace each lid and sprinkle with confectioners' sugar.

Hot Cocoa Marshmallow Cupcakes
1 pkg. (2-layer size) devil's food cake mix
4 cups  Miniature Marshmallows, divided
1 cup  Semi-Sweet Chocolate Chunks
1/4 cup milk
1 tub (8 oz.)  Whipped Topping, thawed
1 Tbsp. unsweetened cocoa

PREPARE and bake cake mix as directed on package for cupcakes in 

paper-lined
muffin pan. Cool completely.
MEANWHILE, place 2 cups of the marshmallows, chocolate chunks and milk 

in
large saucepan; cook on low heat until marshmallows and chocolate are
completely melted and mixture is well blended, stirring constantly. 

Cool at
least 30 minutes. Gently stir in whipped topping.
FROST cupcakes with whipped topping mixture; sprinkle with remaining 2 

cups
marshmallows and cocoa. Cover. Refrigerate until ready to serve.

Lemon Danish Cupcakes
1 box lemon cake mix (see note below)
1/2 cup sour cream
1 (4 oz.) jar apricot baby food
1/4 cup freshly squeezed lemon juice
2/3 cup water
2 eggs
1 teaspoon poppy seeds
1 (8-ounce) carton cheesecake flavored cream cheese
2 to 3 tablespoons confectioners' sugar
Confectioners' sugar glaze

Preheat oven to 350 degrees. Combine cake mix, sour cream, apricot
baby food, lemon juice, water, eggs, and poppy seed. Beat on low
speed of electric mixer just until mixed (about 30 seconds). Then
beat on medium speed for about a minute or until well mixed. In a
small bowl, combine the cream cheese and confectioners' sugar. Mix
well. Line muffin pans with paper cupcake liners. Spoon the batter
into liners, filling about 1/2 full. Drop a small dollop (about a
teaspoon) of cream cheese mixture in center of cupcake. Spoon about a
tablespoon of batter over the top, covering the cream cheese. This
will make the liners about 3/4 full. Bake for about 20 minutes or
until top will spring back when lightly touched. The cupcakes will
not be brown on top. Remove from muffin pans and cool on a rack.
Drizzle the cooled cupcakes with the confectioners' sugar glaze.
Makes 24.

Confectioners' sugar glaze: Combine 1 cup confectioners' sugar and 1
tablespoon milk. Mix well and drizzle over cupcakes. If the glaze is
too thin, simply add more confectioners' sugar. If too thick, add a
little more milk.

Note: Cake mixes can not always be interchanged so, contrary to what
I usually do, I will share a brand name. I used Pillsbury lemon cake
mix and it works great for this recipe.

Hi friends
well, I am typeing from my pac mate, and I am so happy, in boohooboohoo tears, 
and sniffling because my baby JJ, is on his way back home...
after a very long observation, several MRI's, tests, and what not's, 
everything, absolutely every test came out negative, and normal, yes all, and 
everything came out normal..not a thing wrong with him.
Doc. said he was constipated, big time, and because of that, it was causeing 
pressure on the bladder, resulting in a U T I(urinary track infection(, but 
that is all cleared up and now, he is ok.
now, the issue about him, not digesting his milk right, and he not being able 
to resist swallowing, and that blockage thing, is now a mystery, and 
according to the doctor's, a misunderstanding, or a unexplained theory as the 
doc's said...but you and I know very well, that it was all the prayers, and 
warm thoughts that was going out to him...
he needs no more antibotics, or extra vitamins, his immune system, and all 
blood counts are so normal, and shows a great of imporvement, he has gained his 
2 ounces he has lost, and then another one in al half, ...oh, forgive me, for 
blabbering, but sniffle,sniffle, I am just so happy that he is going home now, 
as I type this..he is here near me, and trying to push the keyboard, and is so 
adorable..
Oh God is so good, I can't thank you all for the warmth and prayers that has 
been shown to me and my family, and my baby JJ.

I will lite a tender candle for all my extended family that I have found in you 
all.

Orange-filled Cupcakes
This is pretty much the self filled cupcakes but with a twist for
Halloween.

1 box of Dark Choc. Cake Mix(or your favorite homemade cake)
8 oz. cream cheese, softened
1 egg
1/3 cup sugar
Yellow and red food coloring
6 oz. choc.chips
Your favorite frosting (homemade or from a can)

Prepare cake mix or cake batter and spoon into paper lined cupcake
tins about
half full with batter. Blend cream cheese,egg, sugar until smooth.
Add 2 drops
red food coloring and 1 drop yellow food coloring to make orange
filling(may
need to add more to reach desired shade of orange) Stir in choc.
chips. Place
1 tsp of filling on top of batter and top this with remaining
batter. Bake
according to directions for cupcakes. Frost with orange or chocolate
frosting
and decorate with Halloween candies or sprinkles. Should make about
24
cupcakes.

6 oz chocolate chips
Mix together all ingredients for batter by hand in a bowl. In separate 

bowl
mix together all ingredients for filling with mixer. Fill cupcake cups

2/3 full and drop 1 tsp of filling in the middle of each. Bake at 350 

degrees
F for 25 minutes. These can be made ahead of time and frozen.

Strawberry Jam Cake

 

2 cups white sugar2 cups strawberry jam

1 cup Crisco  1 cup raisins

1 tsp. ground cloves  1 cup pecans or walnuts

1 tsp cinnamon3 tsp baking soda

1 tsp nutmeg  4 cups flour

2 cups buttermilk 4 eggs, beaten

 

Mix as written down, adding the eggs last. Grease pans well.

Bake @ 350°degrees for 1 1/2 hrs.

This may be baked in a tube or angel food pan or mini loaf pans.

about 25 min for min loaf pans.   Mini bundt pans about 45 min.

You could hardly see for all the snow,
Spread the rabbit ears as far as they go.
Pull a chair up to the TV set,

My Mom used to cut chicken, chop eggs and spread mayo on

 same cutting board with the same knife and no bleach, but we didn't seem
 to
 get food poisoning.

My Mom used to defrost hamburger on the counter AND I used
 to eat it raw sometimes, too. Our school sandwiches were wrapped in wax
 paper in a brown paper bag, not in ice-pack coolers, but I can't remember
 getting e.coli.

Almost all of us would have rather gone swimming in the
 lake
 instead of a pristine pool (talk about boring), no beach closures then.

The term cell phone would have conjured up a phone in a
 jail
 cell, and a pager was t he school PA system.

We all t ook gym, not PE . and risked permanent injury 
 with
 a pair of high top Ked's (only worn in gym) instead of having
 cross-training
 athletic shoes with air cushion soles and built in light reflectors. I
 can't
 recall any injuries, but they must have happened because they tell us how
 much safer we are now.

Flunking gym was not an option, even for stupid kids! I
 guess PE must be much harder than gym.

Speaking of school, we all said prayers and sang the
 national anthem, and staying in detention after school caught all sorts 
 of
 negative attention.

We must have had horribly damaged psyches. What an archaic
 health system we had then. Remember school nurses? Ours wore a hat and
 everything .

I thought that I was supposed to accomplish something
 before
 I was allowed to be proud of myself.

I just can't recall how bored we were without computers,
 Play Station, Nintendo, X-box or 270 digital TV cable stations.

Oh yeah ... and where was the Benadryl and sterilization
 kit
 when I got that bee sting? I could have been killed!

We played 'king of the hill' on piles of gravel left on
 vacant construction sites, and when we got hurt, Mom pulled out the
 48-cent
 bottle of Mercurochrome (kids liked it better because it didn't sting 
 like
 iodine did) and then we got our butt spanked.

Now it's a trip to the emergency room, followed by a 
 10-day
 dose of a $49 bottle of antibiotics, and then Mom calls the attorney to
 sue
 the contractor for leaving a horribly vicious pile of gravel where it was
 such a threat.

We didn't act up at the neighbor's house either because if
 we did, we got our butt spanked there and then we got butt spanked again
 whe
 n we got home.

I recall Donny Reynolds from next door coming over and
 doing
 his tricks on the front step, just before he fell off. Little did his Mom
 know that she could have owned our house. Instead, she picked him up and
 swatted him for being such a goof. It was a neighborhood run amuck.

To top it off, not a single person I knew had ever been
 told
 that they were from a dysfunctional family. How could we possibly have
 known
 that?

We needed to get into group therapy and anger management
 classes? We were obviously so duped by so many societal ills that we
 didn't
 even notice that the entire country wasn't taking Prozac! How did we ever
 survive?

LOVE TO ALL OF US WHO SHARED THIS ERA, AND TO ALL WHO
 DIDN'T; SORRY FOR WHAT YOU MISSED. I WOULDN'T TRADE IT FOR ANYTHING.

Pass this to someone and remember that life's most simple
