APPLE CRISP

4 apples
3/4 cup flour
1 cup sugar
1/4 tsp  cinnamon
1/2 cup butter, cut into small pieces

Preheat oven to 400.  Grease 8x8 pan. Peel and core apples. Slice thinly. 
Spread in prepared pan.  Mix flour, sugar, and cinnamon. Cut in butter. 
Spread evenly over apples.  Bake 40-45 minutes.

SLOW COOKER MUSHROOM BEEF STEW

1 lb beef stew meat
1 can cream of  mushroom soup
2 cans sliced mushrooms, drained
1 envelope dry onion  soup mix
hot cooked noodles

Combine stew meat, soup, mushrooms, and  soup mix in crock pot. Cover and 
cook on low for 8-10 hours. Serve over hot  cooked noodles.

Buffalo Chicken Casserole

1/2 cup uncooked regular long-grain white  rice
1 cup water
1 tablespoon olive or vegetable oil
1 pound boneless  skinless chicken breasts -- cut into thin strips
1 cup (2 stalks) celery --  thinly sliced
1 cup onions chopped
14 1/2 ounces undrained stewed tomatoes
1/2 cup  buffalo wing sauce
1/4 cup blue cheese salad dressing

Cook rice in  water 20 minutes as directed on package. Meanwhile, heat oven 
to 350 deg F. In  12 inch skillet, heat oil over medium-high heat. Add chicken 
and celery,and  onionsty; cook 5 to 7 minutes stirring frequently, until 
chicken is no longer  pink in center. Remove from heat. Open can of tomatoes; 
cut 
up tomatoes in can.  Stir tomatoes and wing sauce into chicken mixture.

Spray 8-inch square  baking dish with coking spray. Spoon cooked rice into 
dish. Spread chicken  mixture over rice (do not stir).

Bake 25 to 30 minutes or until hot in  center. Drizzle dressing over top.

1 pound lean ground beef 
1 onion, chopped 
1  (8 ounce) package processed cheese, cubed 
1 (10 ounce) can diced tomatoes  with green chile peppers, drained 
Place ground beef and onion in a large,  deep skillet. Cook over medium high 
heat until beef is evenly brown and onions  are soft. Drain and set aside. 
In a medium saucepan over low heat, melt the  cheese. Mix in the ground beef, 
onion and diced tomatoes with green chile  peppers. Serve warm. Double recipe 
for larger  groups.

Cheese Lasagna
 
1 (16 ounce) package lasagna noodles 
4 cups ricotta cheese 
1/4 cup  grated Parmesan cheese 
4 eggs 
salt and pepper to taste 
1 teaspoon  olive oil 
3 cloves garlic, minced 
1 (32 ounce) jar spaghetti sauce 
1  teaspoon Italian seasoning 
2 cups shredded mozzarella cheese 
Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly  
salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al  
dente; drain and lay lasagna flat on foil to cool. 
In a medium bowl, combine  ricotta, Parmesan, eggs, salt and pepper; mix 
well. 
In a medium saucepan,  heat oil over medium heat and saute garlic for 2 
minutes; stir in spaghetti  sauce and Italian seasoning. Heat sauce until 
warmed 
through, stirring  occasionally, 2 to 5 minutes. 
Spread 1/2 cup of sauce in the bottom of a  9x13 baking dish. Cover with a 
layer of noodles. Spread half the ricotta mixture  over noodles; top with 
another noodle layer. Pour 1 1/2 cups of sauce over  noodles, and spread the 
remaining ricotta over the sauce. Top with remaining  noodles and sauce and 
sprinkle 
mozzarella over all. Cover with greased foil.  
Bake 45 minutes, or until cheese is bubbly and top is golden.

Dr. Pepper Texas Chocolate Cake

2 cups sifted all-purpose flour  
1 cup each granulated sugar, dark brown sugar, unsweetened dry cocoa  
1-1/2 tsp each baking soda, vanilla 
1 cup Dr Pepper
1/2 cup chocolate  chips 
2 large eggs 
1 cup each buttermilk, vegetable oil  

Frosting

3/4 cup butter-flavored vegetable shortening 
6 tbsp  unsalted butter or margarine, softened 
4 cups sifted confectioners' sugar  
1/4 cup each unsweetened dry cocoa, Dr Pepper 
1-1/2 tsp vanilla  

Directions

Heat oven to 350º F. (175º C)

Grease and flour  2 (9) round cake pans, tapping out any extra flour.

Sift together flour,  granulated sugar, brown sugar, cocoa and baking 
soda into a bowl and set  aside.

Pour Dr Pepper into a saucepan and add chocolate chips. Heat on  low, 
stirring often, until chips are just melted. Remove from heat and  
set aside.

Combine eggs, buttermilk, oil and vanilla in a mixer bowl;  mix on 
medium speed until combined, about 2 minutes. With mixer running,  
slowly pour in Dr Pepper-chocolate mixture, continue beating until  
combined -- about 1 minute. With mixer on low speed, gradually add 
dry  ingredients. Increase speed to medium and beat 2 minutes more. 
Divide batter  between 2 pans.

Bake 30 - 35 minutes or until a wooden pick inserted into  center 
comes out clean. Cool layers in pan for 10 minutes, then run a knife  
around edges and flip pans over onto a cooling rack. Gently lift off  
pans and let cake layers cool completely. 

Frosting: Beat shortening  and butter in a mixing bowl until soft and 
fluffy. Add confectioners' sugar  and cocoa, Dr Pepper and vanilla. 
Ice cakes when frosting is smooth.  

Makes 8 servings.

Chicken and Sausage Meatloaf
Ground chicken spiced with pork breakfast  sausage, onion and red bell 
pepper.  
1¼ hours | 15 min prep  

SERVES 4 -6 

Meatloaf
1 lb ground chicken 
1 lb bulk  breakfast sausage (I use Jimmy Dean) 
2 tablespoons finely chopped onions  
2 tablespoons finely chopped red bell peppers 
2 tablespoons coarsely  chopped pine nuts 
1/2 cup breadcrumbs 
1/4 cup evaporated milk 
1 egg,  beaten 
salt and pepper 
Sauce
1 (10 3/4 ounce) can cream of chicken  and mushroom soup 
1/2 can evaporated milk 
1/2 can water 
2 pinches  poultry seasoning 
Preheat oven to 350°F. 
Meatloaf: Place chicken,  sausage, onion, pepper, pine nuts and bread crumbs 
in a large bowl. 
Mix  together, evaporated milk and egg and pour over bowl ingredients. 
Season  with salt and pepper and mix with fingers. 
Place in a loaf pan and bake 60  minutes. 
Drain off fat and let sit 5-10 minutes before slicing. 
Sauce:  While the meat is sitting, combine sauce ingredients in a small pan, 
stir over  medium high heat until smooth and hot.

Chicken Romano Meatloaf 
SERVES 8 

1/2 cup romano  cheese (freshly grated) 
1/2 cup plain dried breadcrumbs 
1 large egg  
1 cup marinara sauce 
2 lbs ground chicken 
Preheat oven to 400°F.  
Line 13x9-inch metal baking pan with foil. Spray foil with nonstick cooking  
spray. 
In large bowl, stir Romano, bread crumbs, egg, 1/2 cup marinara  sauce, and 
1/2 teaspoon salt. Add chicken and mix just until combined. 
Spoon  chicken mixture into center of prepared pan; shape into 9x5-inch loaf, 
pressing  firmly. Spread remaining 1/2 cup marinara over top. 
Bake meatloaf 1 hour and  5 to 10 minutes or until temperature on instant-rea
d thermometer inserted in  center of meatloaf reaches 165° F (temperature will 
rise to 170°F upon  standing). Let meatloaf stand 10 minutes for easier 
slicing.

Palmer, Usher and Shaquille O'Neal. Hill is scheduled to appear at The 
Neighborhood Ball: An Inauguration Celebration, a special airing Tuesday (Jan.

Hall of Fame Member Little Jimmy Dickens Recuperating From Brain Surgery

Country Music Hall of Fame member Little Jimmy Dickens is recuperating after 
undergoing brain surgery Tuesday (Jan. 13) in Nashville. The 88-year-old Grand 
Ole Opry member had been diagnosed with a subdural hematoma, a clot created 
when blood vessels tear and blood accumulates in the space between the brain 
and its protective covering within the skull. Another Country Music Hall of 
Fame member, Charley Pride, underwent similar surgery in 2004. Dickens was 
inducted into the Hall of Fame in 1983 and recently celebrated his 60th 
anniversary as an Opry member.

Country Weekly Goes Weekly (Again), Drops Subscriptions

Country Weekly magazine will return to a weekly format starting in February, 
but it will discontinue all current subscriptions, AdAge.com reports. Instead, 
the periodical will be sold exclusively on retail racks for $2.49 -- a dollar 
less than its current issue price. It is projected to sell approximately 75,000 
copies per issue on newsstands, according to AdAge.com. The periodical, which 
has been published every two weeks over the last few years, is owned by 
American Media, which also publishes National Enquirer, Shape and Star 
magazines.

Kenny Chesney Will Perform on Grammy Awards

Amaretto-Amaretti Chocolate Fudge Pie

 

4 ounces unsweetened chocolate

1 3/4 sticks (14 tablspoons) unsalted butter

1 1/2 cups plus 2 tablespoons sugar

30 amaretti (Italian almond macaroons, available at specialty food

shops and some supermarkets), crushed

4 large eggs at room temperature

1/4 teaspoon salt

3 tablespoons light corn syrup

1/4 cup heavy cream

1 teaspoon vanilla

2 tablespoons Amaretto

whipped cream as an accompaniment

In the top of a double boiler melt 1 ounce of the chocolate with 6

tablespoons of the butter and let the mixture cool. In a 9 x 3 inch

springform pan combine 2 tablespoons of the sugar with the amaretti,

stir in the chocolate mixture, and combine the mixture well. Press

the crumb mixture onto the bottom and one-third of the way up the

side of the pan and chill the crust.

 

In the top of a double boiler melt together the remaining 3 ounces

chocolate and the remaining 8 tablespoons butter and let the mixture

cool. In a bowl with an electric mixer beat together the eggs and the

salt, add the remaining 1 1/2 cups sugar, a little at a time, and

beat the mixture until it is thick and pale yellow. Beat in the corn

syrup, the heavy cream, the vanilla, the amaretto, and the chocolate

mixture. Pour the filling into the crust, bake the pie in the middle

of a preheated 350 deg. oven for 50 minutes and let it cool on a

rack. Run a thin knife around the edge of the pan, and serve the pie

with the whipped cream.

Cocoa Fudge Cookies
1 cup all-purpose flour
1/4 teaspoon baking soda
1/8 teaspoon salt
5 tablespoons butter
7 tablespoons unsweetened cocoa
2/3 cup granulated sugar
1/3 cup packed brown sugar
1/3 cup plain low-fat yogurt
1 teaspoon vanilla extract
Cooking spray
Preheat oven to 350F. Lightly spoon flour into a dry measuring cup;
level with a knife. Combine flour, soda, and salt; set aside. Melt
butter in a large saucepan over medium heat. Remove from heat; stir in
cocoa powder and sugars (mixture will resemble coarse sand). Add yogurt
and vanilla, stirring to combine. Add flour mixture, stirring until
moist. Drop by level tablespoons 2 inches apart onto baking sheets
coated with cooking spray.
Bake at 350F for 8 to 10 minutes or until almost set. Cool on pans 2 to
3 minutes or until firm. Remove cookies from pans; cool on wire racks.
Yield:  2 dozen.

JAMAICAN BEEF PATTIES (from the New York Times)

 

Yield: 12 patties;  Cook  Prep Time: 1-1/2 hours

 

For the crust:

4 cups AP Flour

2 tsp. Salt

2 tsp. Turmeric

1 tsp. Curry Powder, preferably West Indian

11/2  cups Cold Vegetable Shortening or Chopped Beef Suet (~ 12

oz.)

 

For the filling:

2 Tbsp. Vegetable Oil

5 Scallions, finely chopped

1 medium Onion, finely chopped

4 Cloves Garlic, finely chopped

1 Scotch Bonnet Chili Pepper, seeded and finely chopped

1/2 tsp. Paprika

1/4 tsp. Ground Allspice

1 lbs. Ground Beef, about 80% lean

2 tsp. Thyme Leaves

1 tsp.

Salt

1 tsp. Black Pepper

1 tsp. Sugar

Coco bread, Hamburger Buns or Soft Potato Buns, for

serving

 

1. Mix flour, salt, turmeric and curry powder in a large bowl.

Add shortening or suet and use your fingertips to rub it

together with flour. When shortening is in small pieces and

covered with flour, pour in 1/2 cup ice water and mix with your

hands. Keep adding ice water, a few tablespoons at a time, until

mixture forms a dough. It may be slightly sticky. Knead dough

for two minutes, form into two disks, wrap in plastic and

refrigerate while you make filling.

2. Heat oil in a deep skillet over medium heat and add

scallions, onion, garlic and half the chili pepper. Cook,

stirring, until softened but not browned. Add paprika and

allspice and stir to coat. Add beef and thyme and stir, breaking

up any clumps. Add water just to cover meat. Mix in salt, pepper

and sugar and bring to a simmer. Taste for seasonings, adding

salt, pepper and chili pepper, if necessary; mixture should be

quite spicy. Simmer about 30 minutes, until meat is soft and

water is reduced to a sauce. Set aside to cool slightly.

3. Heat oven to 375 degrees. Remove one disk of dough from

refrigerator and divide it in half. Roll out one half on a

lightly floured surface until large enough to cut three circles,

each about 6 inches across. (Use the rim of a bowl turned upside

down as a guide.) Repeat with remaining dough, setting aside the

circles. Use scraps to make additional small patties, if you

like.

4. When ready to fill, have ready a fork for crimping and a bowl

of water. Place two tablespoons of filling on lower half of one

circle. Dip a finger into water and moisten the edge of the

dough. Fold the top half over, pulling dough gently over filling

and making a thick edge all around. Crimp edge with a fork and

transfer to an ungreased baking sheet, preferably nonstick.

Repeat with remaining dough and filling. Bake about 25 minutes,

until top crust is firm and golden. Serve hot as is or inside

buns.

1 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese, divided 
1   red pepper, chopped 
1 egg white 
1 env.  GOOD SEASONS Italian Dressing Mix 
20 jumbo macaroni shells (for stuffing), cooked, drained and cooled 
1 jar  (13-1/2 oz.) spaghetti sauce 
Make It!
HEAT oven to 400°F. Mix spinach, cottage cheese, 1/2 cup
mozzarella, peppers, egg white and dressing mix until well blended;
spoon into shells, adding about 1 heaping Tbsp. to each shell. 
SPREAD half of sauce onto bottom of 13x9-inch baking dish. Arrange
shells, filled-sides up, in baking dish; top with remaining sauce and
mozzarella. Cover with foil. 
BAKE 40 min. or until heated through, removing foil after 30 min.

What You Need
1 large onion, finely chopped 
1/4 cup  KRAFT Light Zesty Italian Dressing 
2 lb. extra lean ground beef 
3/4 cup  ketchup, divided 
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken 
1 cup  water 
2 egg whites 
1/2 cup  KRAFT 2% Milk Shredded Sharp Cheddar Cheese 
Make It
HEAT oven to 375°F. Cook onions in dressing in skillet on medium
heat 8 to 10 min. or until golden brown, stirring frequently. Remove
from heat; cool slightly. 
MIX meat, onions, 1/4 cup ketchup, stuffing mix, water and egg whites.
Shape into 10x5-inch loaf in 13x9-inch baking dish; cover with remaining
ketchup. 
BAKE 55 min. to 1 hour or until done (160°F). Sprinkle with cheese;
bake 2 min. or until melted.

1 cup  frozen peas 
1/4 cup PHILADELPHIA 1/3 Less Fat Cream Cheese 
1/4 cup  KRAFT Light Classic Caesar Dressing 
1 Tbsp. flour 
1 cup  fat-free milk 
1 pkg. (6 oz.) OSCAR MAYER Smoked Ham, cut into short strips 
1/4 cup  chopped fresh parsley 
3 Tbsp. KRAFT Grated Parmesan Cheese 
Make It
COOK pasta as directed on package, adding peas to the boiling water for
the last 3 min. 
MEANWHILE, beat cream cheese, dressing and flour in medium saucepan with
whisk until blended. Gradually add milk, stirring constantly until
mixture is well blended. Add ham; cook on medium-low heat 5 min. or
until heated through, stirring occasionally. 
DRAIN pasta mixture; return to pan. Add sauce mixture; mix lightly. Cook

This easy meal-in-one dish is a real crowd-pleaser on chilly nights,
says Nancy Foust of Stoneboro, Pennsylvania. Because it bakes in two
pans, you could freeze one for later, depending on your needs. It's
creamy, and filling and has a wonderful ham-and-cheese flavor.

Ingredients: 
1 package (16 ounces) elbow macaroni 
4 cups fresh broccoli florets 
1/2 cup finely chopped onion 
1/2 cup butter, cubed 
1/2 cup all-purpose flour 
1 teaspoon ground mustard 
1 teaspoon salt 
1/4 teaspoon pepper 
6 cups milk 
1 jar (15 ounces) process cheese sauce 
2 cups (8 ounces) shredded cheddar cheese, divided 
4 cups cubed fully cooked ham 
Directions: 
Cook macaroni according to package directions, adding broccoli during
the last 3-4 minutes; drain. 
    In a Dutch oven, saute onion in butter for 2 minutes. Stir in
the flour, mustard, salt and pepper until blended. Gradually stir in
milk. Bring to a boil; cook and stir for 2 minutes or until thickened.
Stir in cheese sauce and 1 cup cheddar cheese until blended. 
    Remove from the heat; stir in the ham, macaroni and broccoli.
Divide between a greased 13-in. x 9-in. baking dish and a greased 8-in.
square baking dish. Sprinkle with remaining cheese. 
    Bake, uncovered, at 350° for 25-35 minutes or until
bubbly and heated through. Yield: 12 servings.

Cheesy Caramelized Onion Panini  All you need:
2 tsp Grand Selections olive oil
4 c. sliced onions
4 tsp honey mustard, divided
8 slices Hy-Vee bakery whole-wheat bread
4 slices reduced-fat Swiss cheese
All you do:  
Heat oil in a heavy skillet. Add onions; cook over low heat 30 minutes,
stirring occasionally, until onions reduce and turn a caramel color. 
Preheat indoor grill, panini grill or sandwich maker. Spread 1 teaspoon
of the honey mustard on each of 4 bread slices. Top evenly with
caramelized onions and 1 slice of cheese. Top with remaining bread
slices. 
Place sandwiches on grill; cover and cook 4 minutes or until cheese
melts. Cool Panini slightly; slice and serve.

Tangy Pan-Fried Potatoes
3 lbs. russet potatoes
1 small onion, chopped
2 cloves garlic, minced (optional)
3 jalapenos, seeded and minced
2 1/2 tsp. ground cumin
1 tsp. each ground coriander and salt
3 Tbsp. butter
1/3 cup NAKANO Seasoned Rice Vinegar Roasted Garlic 
or Original
3 Tbsp. water
This side dish adds spice and flavor to any meal.
Peel potatoes and cut into 1/2 inch cubes. Place in a large bowl; toss
with onion, garlic, jalapenos, cumin, coriander and salt. 
Melt butter in a large skillet. (Use two pans, if needed, dividing
butter and potatoes between pans.) Cook potatoes over medium to high
heat 10 to 12 minutes, stirring frequently and scraping browned bits
from pan. Add rice vinegar and water. Continue to cook until all liquid
is evaporated and potatoes are tender, 6 to 8 minutes. 
Serves 6 to 8. 
Tip: For a hearty main dish hash, add leftover chopped cooked chicken,
pork or beef to the skillet during the last 2 minutes of cooking.
Per serving (6 servings): 247 calories; 4g protein; 44g carbohydrate; 6g
fat; 16mg cholesterol; 676mg sodium

OLD-FASHIONED MACARONI SALAD
Ingredients:
8 oz Elbow macaroni
1/4 cup Black olives, sliced
1/4 cup Celery, thinly sliced
1/4 cup Red bell pepper, finely chopped*
1/4 cup Onion, chopped
1 tbl Fresh dill, minced*
1/2 cup Fat-free mayonnaise
1/4 cup Fat-free sour cream
1/8 tsp Ground black pepper
Salt, to taste
Method:
* shredded carrot may be substituted for the red bell pepper; chives for
the dill . If using dried herbs, use 1/3 as much.
Cook the macaroni al dente according to package directions. Drain, rinse
with cool water, and drain again.
Place the macaroni in a large bowl. Add the olives, celery, peppers or
carrots, onion and chives or dill, and toss to mix.
Combine the mayonnaise, sour cream, mustard, pepper, and salt (if using)
in a small bowl and whisk together to mix well.
Pour the dressing over the macaroni mixture and toss to mix well. Cover
and chill for several hours before serving.
Yield: 8 Servings

PHYLLO TURNOVERS WITH SHRIMP AND RICOTTA FILLING
A creamy filling of ricotta cheese and shrimp mixed with green peppers,
celery, and green onions and folded into bite-sized phyllo triangles is
always a popular party appetizer.
Prep Time: 40 Minutes
Cook Time: 25 Minutes
Ready In: 1 Hour 5 Minutes
Yields: 15 servings
INGREDIENTS
3 tablespoons butter
1 tablespoon canola oil
1/3 cup chopped celery stalk
1/3 cup chopped green pepper
2/3 cup chopped green onions
2 dashes hot sauce, such as Tabasco 
1 teaspoon salt
2 tablespoons all-purpose flour
1 pound large shrimp - peeled, deveined and chopped
1/2 cup ricotta cheese
1/3 cup milk
1 (16 ounce) package frozen phyllo dough, thawed
1/2 cup butter
DIRECTIONS
Melt 3 tablespoons butter in a large skillet over medium heat, and add
the canola oil. Stir in the celery and peppers; cook until tender, about
5 minutes. Add the green onions, hot sauce, and salt; cook and stir
until onions are wilted, about 3 minutes. Stir the flour, shrimp,
ricotta cheese, and milk into the pepper mixture; cook and stir until
the shrimp turn pink, about 3 minutes. Remove from heat and cool.
Preheat oven to 425 degrees F (220 degrees C).
Melt 1/2 cup butter in a small saucepan over medium heat. Remove from
heat and keep warm. Stack two sheets of phyllo on top of each other, and
cut into 3 strips about 3 inches by 12 inches. Brush the top of each
strip with melted butter, and place a teaspoon of the shrimp mixture at
one end. Fold phyllo dough over the filling, working back and forth from
side to side to make a triangle. Seal the end closed with a little water
or butter. Place triangle on an ungreased baking sheet. Repeat with
remaining phyllo sheets and filling.
Bake in preheated oven until tops are golden brown and flaky, 10 to 15
minutes. Cool on a wire rack.

1 pound ground sausage
1 tablespoon butter
1/3 cup chopped onion
3/4 cup milk
One 3-ounce package cream cheese
3 eggs
1 cup shredded Cheddar cheese
1/2 teaspoon Worcestershire sauce
1/2 teaspoon salt (use less if the sausage is salty)
1/8 teaspoon pepper
One 9-inch deep-dish pie crust, partially baked and cooled
Preheat the oven to 375 degrees. In a heavy skillet over medium heat,
crumble the sausage with a fork. Sauté the sausage until completely
cooked. Drain off the fat, remove the sausage, and set aside. Melt the
butter in another skillet over medium heat. Sauté' the onions in
the butter until tender. Add the milk and heat until steam rises, but do
not boil the milk. Cut the cream cheese into small pieces, add it to the
onion mixture, and remove the pan from the heat. In a large bowl, beat
the eggs, then add the Cheddar, the onion mixture, the Worcestershire,
salt, and pepper. Mix thoroughly and pour this into the piecrust. Top
with cooked sausage, and bake for 30 minutes, or until set.
Yield: 6 Servings

I was chatting with a sister today and her daughter was making this
recipe. She sent it on to me, as she said it was a fabulous dish. This
can be halved very easy and freezes well.
Ingredient 
3 pounds Lean ground beef 
2 teaspoons Salt 
3/4 teaspoon Pepper 
2 teaspoons Celery salt 
1/2 cup Catsup 
2 Eggs 
1/2 cup Crushed unsalted crackers 
2 Heads green cabbage; (2lb ea 
6 quarts Boiling water 
3 cups Chopped onions 
2 Bottles chili sauce; (12oz ea) 
1 Jar grape jelly; (12oz)
Combine chuck, salt, pepper, celery salt, catsup, eggs, and crushed
crackers. Mix well with hands just until well combined. Cut out core of
cabbage. Place in large kettle. Pour boiling water over it; let stand
until leaves are flexible--about 5 min. (If necessary, return cabbage to
hot water to soften inner leaves.) Using a 1/4 c. measure, scoop up a
scant 1/4 c. meat mixture. With hands form into rolls 3 long and 1
wide, making about 28 rolls in all. Place meat rolls on drained cabbage
leaves, fold top of leaf over meat, then fold sides and roll up into
oblong. continue with remaining meat rolls and cabbage leaves. In bottom
of lightly greased roasting pan, spread chopped onion evenly. Arrange
cabbage rolls in neat rows on top of onions. In 2 qt. saucepan, combine
chili sauce and grape jelly with 1/4 c. water; heat, stirring to melt
jelly.
Pour over cabbage rolls. Cover pan tightly. Bake 2 hrs. Remove cover;
brush rolls with sauce; bake uncovered 40 min. longer or until sauce is
thick and syrupy and cabbage rolls are glazed.
Serve with sauce spooned over rolls.

2 medium firm pears

1-1/2 cups water

1 cup dry red wine or red grape juice

1/2 cup sugar

2 teaspoons vanilla extract

1/4 cup reduced-fat sour cream

2 teaspoons confectioners' sugar

1/2 teaspoon grated orange peel

1/8 teaspoon orange extract

Additional grated orange peel, optional

 

Directions:

Core pears from the bottom, leaving stems intact. Peel pears; cut a small slice 
from the bottom of each to level if necessary. Place pears on their sides

Remove pears with a slotted spoon; cool to room temperature. Discard 
cooking liquid. Place pears on dessert plates. Serve with orange cream. Garnish

with additional grated orange peel if desired. Yield: 2 servings.

TIME: Prep: 20 min. + chilling

 

Ingredients:

9 whole reduced-fat cinnamon graham crackers

1-3/4 cups cold fat-free milk

1 package (1 ounce) sugar-free instant cheesecake or vanilla pudding mix

1 large firm banana, sliced

1/2 teaspoon lemon juice

2 cups sliced fresh strawberries, divided

2-1/2 cups reduced-fat whipped topping, divided

Mint sprigs, optional

 

Directions:

Line the bottom of a 9-in. square pan with 4-1/2 graham crackers; set aside.

In a small bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 
minutes or until soft-set. Place banana slices in another small bowl; toss

with lemon juice. Stir bananas and 1 cup strawberries into the pudding. Fold in 
1-3/4 cups whipped topping.

Spread half of pudding over the graham crackers; repeat layers. Cover and 
refrigerate overnight. Refrigerate remaining berries and whipped topping.

Just before serving, top with remaining berries and topping. Garnish with mint 
if desired. Yield: 12 servings.

Ingredients:

1 can (14 ounces) light coconut milk

1-1/3 cups fat-free milk

1/2 cup uncooked long grain rice

1/4 cup packed light brown sugar

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

 

Directions:

In a large saucepan, bring the coconut milk, milk, rice and brown sugar to a 
boil over medium heat. Reduce heat; cover and simmer for 50-55 minutes or until

thick and creamy, stirring occasionally. Remove from the heat; stir in vanilla.

Spoon into dessert dishes. Sprinkle with cinnamon. Serve warm or cold. 
Yield: 4 servings.
