  25  g butter, (1oz)
   1  Tbs   oil
   1onion, chopped
   1carrot, chopped
 250  g parsnips, chopped (8oz)
 250  g cooked gammon or shoulder joint, cubed (8oz)
   2  quartsvegetable stock
freshly ground black pepper
   1  Tbs   freshly chopped parsley
croutons to serve

1. Heat the butter and oil in a large pan.  Add the onion, carrot and
parsnip and cook gently for 5-6 minutes.

2. Add the gammon and stock and bring to the boil.  Simmer gently for -30
minutes.

3. Puree the soup in a blender until smooth and return to the pan.

4. Add pepper to taste and serve hot with croutons and sprinkled with
chopped parsley.


Author Note: A delicious soup using left over gammon and traditional winter
vegetables.

   2  Tbs   oil
   1large onion, finely chopped
 500  g frozen sliced carrots, (16oz)
   1 1/4  litersvegetable stock, (2 pints)
juice and zest of 1 orange
salt and freshly ground black pepper

1. Heat the oil in a large pan, over a moderate heat fry the onion and
carrots until softened, this will take approximately 10-15 minutes.

2. Add the stock and bring to the boil, reduce the heat and simmer for 20
minutes.  Remove from the heat and pour the soup into a blender along with
the juice and zest of the orange.  Blend until smooth.

3. Return to the heat, season with salt and pepper and heat through, adding
a little water if the consistency looks too thick.  Serve with chunks of
crusty bread.

Author Note: A lovely combination of flavours, with a zesty backnote of
orange.

Curried Parsnip Soup

   2  Tbs   butter
   2large onions, finely sliced
   1  Tbs   curry paste, (medium madras style)
   5parsnips, peeled and sliced
   1  liter chicken stock
one lemon, juice of
   4  tsp   plain yoghurt
   1  tsp   mint sauce
   4poppadums

1. Melt the butter in a saucepan and add the onion and cook until soft.  Add
the curry paste and cook for five minutes.  Then add the parsnips, chicken
stock and a seasoning of salt and pepper, bring to the boil and simmer for
20 minutes.

2. Liquidise and pass through a sieve, return to the pan, add the lemon
juice, check seasoning and keep warm.

3. Combine the yoghurt and mint sauce, season and set aside.  To serve
divide into four four bowls, garnish with the yoghurt and a poppadum.

I didn't know anyone else ate this sauce,I has to be a Southern  mix,, 
everyone here says that its gross when I mix it up, lol,, also  ketchup and 
mustard 
mix is a good sauce for fish sticks and corndogs. Add  other spices for your 
taste buds. Its Great to be a Southerner !! 

Comeback Sauce
Equal Parts Mayonnaise and Ketchup 
Black Pepper 
Combine mayo and ketchup in a bowl. Completely cover the top with  black 
pepper by sprinkling it on. Stir. Repeat once more. Serve!  
This sauce is excellent with burgers, chicken,  fries, and pretty much any 
other dippable or spreadable food  :).

Chicken and Broccoli Alfredo 
 
6 oz. uncooked fettuccine 
1 cup broccoli flowerets 
1 tsp. margarine  
6 oz (2) skinless boneless chicken breast halves, cut into cubes 
*1 can  10 3/4 oz. cream of mushroom soup
1/2 c. skim milk 
1/3 cup grated  parmesan cheese  
Prepare fettuccine according to directions, add broccoli for the last 4  
minutes of cooking time. Drain in colander. 
In skillet over medium high  heat, heat margarine, add chicken add cook until 
browned, stirring often.. In  same pan mix soup, milk cheese and fettuccine 
mixture and cook
through,  stirring occasionally.

Noodle Skillet

Serves: 4

5 cups uncooked egg noodles
3/4  pound ground beef
1 medium onion, chopped
1 1/4 cups water
1 6-ounce  can tomato paste
2 teaspoons chili powder
1 clove garlic, minced
3/4  teaspoon salt
1/4 teaspoon pepper

Cook noodles according to package  directions. Meanwhile, in a large skillet, 
cook beef and onion over medium heat  until meat is no longer pink; drain.

Stir in the water, tomato paste,  chili powder, garlic, salt and pepper. 
Bring to a boil. Reduce heat; simmer,  uncovered, for 5
minutes. Drain noodles; stir into  skillet.

1 pound lean ground  beef
1 chopped onion
1 packet taco seasoning mix
2 cups water
1  15-ounce can diced tomatoes
1 15-ounce can tomato sauce
1 cup frozen whole  kernel corn
8 ounces (2 cups) elbow macaroni
1 cup shredded cheddar  cheese

1. In a 12 skillet, brown beef and onion over medium-high  heat;
drain. Stir in seasoning mix, water, diced tomatoes, tomato  sauce,
and corn. Bring to a boil. Add pasta. Reduce heat to low;  cover.
Cook, stirring occasionally, 12  minutes.

Sift dry ingredients well. Store in container. To  serve 3-4 people, use 1 
1/2 cups dry mix and add remaining ingredients. For  thinner pancakes, add more 
milk.

Crockpot Stuffed Peppers 

Cooking Spray
6 medium  sweet green or red bell peppers
3/4 pound ground beef or turkey
1/3 cup  chopped onion, minced
1/4 teaspoon garlic paste (minced garlic in a jar  is good to use)
1/2 teaspoon oregano
1/2 teaspoon salt
1 can (12 ounce)  corn, drained
1 teaspoon prepared mustard
1 10-3/4-ounce can condensed  tomato soup
1 can (14.5 ounces) diced tomatoes, drained 
Lightly spray slow cooker with cooking spray. Clean the  inside of peppers 
and cut off tops In a small bowl, combine ground beef or  turkey, onion, garlic 
paste, oregano, salt, and corn. Spoon mixture into  peppers. Transfer to slow 
cooker, stacking peppers in layers. 
Combine  mustard, tomato soup and diced tomatoes. Pour tomato mixture over 
peppers. Cover  and cook on low for 8-10 hours.

Corn Dog Casserole 
1 c. fine minced  celery
2 tbl. butter
1 to 1 1/2 c. sliced green onions OR
1/2 large  sweet onion, chopped
1 pkg. beef hot dogs
1 egg
3/4 c. milk
1/4 tsp.  black pepper
1 tsp. sage - optional
salt to taste
1 8.5 oz Jiffy corn  muffin mix
6 to 8 oz. shredded sharp cheddar cheese 
Saute celery, and onion in butter for 5 minutes. Meanwhile  cut up hot dogs 
in small pieces; add to skillet and saute till the hot dogs are  browned. 
Slightly beat eggs and milk till blended. Add salt, pepper muffin mix,  pepper 
and 
cheese. Add sauteed vegetables and hot dogs to the corn muffin  mixture. Pour 
in a 8 x 12 x 2 greased baking dish. Bake uncovered at 375º F for  30 to 45 
minutes. 
This is a very good dish and does taste like a corn dog! I  put some 
ketchup/mustard mix on my plate and dipped my bites in it! Yummo  Very Good!

PEPPER AND ONION STEAK OVER RICE
Steak:
1 lb. steak  (sirloin-round/rib eye-cube), cut in strips
1 lg. sweet green pepper,  cut in strips
3 cloves garlic, minced
1 lg. onion, sliced
1 tbsp.  Worcestershire sauce
1/2 c. brown sugar
1/2 tsp. ground black  pepper
1/4 tsp. crushed hot peppers (optional)
1 1/2 c. water
1  tablespoon ketchup
Brown steak in skillet. Add onion and sauté  until translucent. Add remaining 
ingredients. Cover; cook on low 15  minutes. While cooking, make rice and 
gravy (below).
Rice:
1 c. rice
2 c.  water
1/4 tsp. salt
1/2 tsp. butter
Place the above 4 ingredients into a 2 quart  saucepan. Heat over high heat 
until water boils. Cover and reduce heat to  low; cook 15 minutes or until rice 
is tender.  
Remove from heat, leaving covered (stir with fork before  serving).
Gravy:
2 cups water
1/2 cup  flour
1-2 beef bouillon cubes or 1 teaspoon beef soup base
1/4 tsp.  garlic powder
1 tablespoon ketchup 1 tablespoon onion soup  mix (optional) 1/4 tsp. Gravy 
Master or soy sauce (optional)  
While rice is cooking, in a separate saucepan, combine 2 cups water and  
bouillon cube or soup base. Stir in 1/2 cup flour; whisk until smooth. Add  
remaining ingredients. Simmer, uncovered, over medium heat (about 15  minutes). 
 
Season with salt and pepper to taste.  
Add gravy to steak.  
Heat on high 2 minutes.  
Serve over  rice.

MARYLAND SEAFOOD STEW
2 tbsp. butter
1 tbsp.  olive oil
2 onions, chopped
1/2 lb. carrots, sliced thickly
3-4  stalks celery, chopped
1/2 gallon stock, fish or chicken (see  note)
1-2 bay leaves
3 cloves garlic, minced
3-4 potatoes, peeled   chopped
1 c. peas, fresh or frozen
1 c. corn, fresh or  frozen
1 c. green beans, cut, fresh or frozen
1 (28 oz.) can  tomatoes, chopped  undrained or 3-4 fresh tomatoes, peeled  
 chopped
1/2 lb. smoked sausage, sliced (optional)
1/2 lb. pancetta,  1/4 inch dice
2 tbsp. Old Bay Seasoning
2 tsp. ground black  pepper
1 lb. shrimp, peeled
1 lb. crab meat
1/2 lb.  scallops
NOTE: This stew has the richest flavor when a  stock is prepared from the 
steaming liquid used for lobster, adding the  discarded shells and water to 
cover, simmering until the volume has  reduced by half, then straining and 
freezing 
until needed. Shrimp shells  may be used in a similar fashion to prepare a 
seafood broth. In a pinch,  substitute lobster, clam or fish soup base.  
In a large stock pot, melt butter, add olive oil, and sauté onion with  
sausage and/or pancetta until onions are translucent and meat has browned.  Add 
carrots, celery and stir for about 5 minutes. Add garlic, stir briefly  and add 
stock (can be added while still frozen). Add potatoes and  remaining 
vegetables. Add water if necessary to bring liquid to top level  of food. Add 
1-2 bay 
leaves.  
When vegetables are cooked, remove from the heat, cool and refrigerate  
overnight, which does much to improve the flavor. Like most stews, this  tastes 
better when served the next day.  
About 45 minutes before serving, heat slowly on medium-low heat,  bringing 
soup to a simmer. Add Old Bay Seasoning and black pepper, cook  for about 10 to 
15 minutes, adjusting seasoning to taste, as needed.  Remove bay leaves before 
serving. Ten minutes before serving, with broth  simmering, add the seafood, 
stirring to blend.  
Serve with Milk Lunch or chowder crackers.  
Makes 5 to 6 quarts. Recipe may be  doubled.

Wine-Basted Pork Loaf
For 4 to 6 servings you will need:
1 1/2 lbs. lean ground pork
1 small french roll
1/4 cup milk
1/4 cup minced onion
1 small carrot, grated
1/2 tsp. salt
1/4 tsp. pepper
1 tsp. mustard
1/2 tsp. dried theyme leaves
1 egg, slightly beaten
For Wine Baste:
1 Tbsp. melted butter
4 Tbsp. dry white wine 
Directions
1. Place ground pork in mixing bowl. Shred french roll into small bits.
Moisten with milk. Add to meat with the remaining ingredients.
2. With a spoon or hands, lightly mix mixture until evenly blended.
3. Shape into a roll, about 10 inches long. Place on a rack in a
roasting pan. Brush with some of wine baste.
4. Bake at 375 degrees F for 1 hour and 10 minutes until crusty.
Continue to baste while baking.
5. Remove from oven. Serve hot with a pan gravy or serve room
temperature as a summer night supper.

Directions
Season chicken with 1/2 tablespoon chile powder, salt and pepper. Heat
oil in a large skillet over medium high heat and saute seasoned chicken
for 3 to 4 minutes, or until no longer pink. Remove from skillet with a
slotted spoon and keep warm. 
In same skillet, stir fry bell pepper and onion until soft. 
Add jalapeno peppers, tomatoes, remaining 1/2 tablespoon chile powder
and hot pepper sauce. Cook, stirring, for an additional 3 to 5 minutes;
add chicken and stir fry for 2 minutes more.

Crab and Cream Cheese Mold
1 package softened cream cheese 
1 can crab meat 
a few strands of finely chopped green onion (to taste) 
salt and pepper to taste 
cocktail sauce 
Directions
Mix the cream cheese, crab meat, green onions, salt and pepper. Form
into a mound and plate. Pour cocktail sauce over the dip. Serve with
vegetables or crackers. Try both mild and spicy cocktail sauces for
different flavors.

Potato Poppy Rolls
For 12 to 15 rolls you will need:
1 large potato
4 Tbsp. butter or margarine
1 tsp. salt
1/4 cup warm water. 105 degrees F to 115 degrees F
1 package active dry yeast
1 egg
3 1/2 cups all-purpose flour
1 1/2 Tbsp. melted butter
2 Tbsp. poppy seeds
Directions
1. Pare potato. Cut into quarters. Boil until tender. Reserve 3/4 cup
potato water. 
Mash potato.
2. Mix butter and salt into the hot potato water. Let cool to lukewarm.
3. Dissolve yeast in 1/4 cup water.
Stir into potato water with 1/2 cup mashed potato and egg.
4. Stir in as much flour as is needed for a soft dough. Knead on a
lightly floured board. for 10 minutes until smooth.
5. Let rise covered, in a warm spot until doubled, about 1 1/2 hours.
6. Punch dough down. Shape into 12 to 15 small balls. Place in a
buttered 9 by 13 inch baking pan.
7. Let rise until doubled, about 30 minutes.
8. Brush with melted butter. Sprinkle with poppy seeds.
9. Bake at 375 degrees F for 20 minutes until golden.

Angel Hair with Gingered Beef
yield 1 serving 
1 cup dark stock 
1 tbsp very thinly sliced ginger root 
1/2 tsp minced garlic 
1 tbsp soy sauce 
1 1/2 tsp cornstarch 
3/4 lb flank steak, cut long thin strips 
1/2 tsp ginger powder 
1/2 tsp salt 
1 tbsp oil, for cooking 
1 cup sliced mushrooms, shiitakes 
1/4 cup Julienne carrots 
2 tbsp thinly sliced green onions 
2 cup cooked angel hair pasta 
1 tbsp sesame oil 
Directions
In a medium saucepan, bring the stock, ginger, and garlic to a boil.
Reduce for 3 minutes. Mix the cornstarch into the soy sauce. As you stir
the stock, pour the cornstarch mixture into the stock. It will begin to
thicken. Allow to boil for 1 minute, and remove from the heat. 
Toss the meat with powdered ginger and salt. Heat the cooking oil in the
wok until it is smoking. Add the meat, stirring, and searing it quickly
on all sides. 
Pull the meat up the sides of the wok and add the mushrooms and carrots. 
Cook for 2 minutes. Add the green onions and toss all together. Drop the
pasta by the handful into the fryer to create crazy noodles, fry for 45
seconds, remove and place in a bowl. 
Drizzle with the sesame oil. Place them on a big service platter. To the
stir-fry, add the sauce and completely coat everything. Taste and
adjust. Pour this over the noodles.

Warm Salad of Smoked Shrimp with  
Pickled Ginger and Wasabi Vinaigrette
Ingredients Dressing:
2 Tablespoons shallots, chopped finely
1 cup rice wine vinegar
2 Tablespoons salad or peanut oil
1 Tablespoon white sesame seeds, toasted
2 Tablespoons pickled ginger, chopped finely
1 Tablespoon wasabi powder
1 Tablespoon tamari
1 Tablespoon lime juice
sugar to taste.
Ingredients Salad:
pickled ginger and wasabi dressing (from above)
24 each 16-20 shrimp
assorted bitter salad greens
2 Tablespoons olive oil
2 cloves garlic, minced
1 cucumber, peeled seeded and thin sliced
2 carrots, julienned
Dressing: Combine all ingredients in a small non-reactive bowl. Allow
flavors to mingle for at least 40 minutes before using.
Salad: Smoke shrimp in the shell over hardwood just until done. Peel,
devein, and toss with olive oil and garlic. Let stand at least 5
minutes. To serve, divide salad greens among 8 plates. Place a small
mound of carrot julienne in center. Arrange 3 shrimp around each carrot
mound and sprinkle cucumbers around shrimp. Drizzle with dressing and
serve.
Serves:  8
