Chicken and Spinach Cakes
These will remind you of crab cakes (no crab, of course); this recipe is
well worth the effort. Smaller cake would make a wonderful appetizer for
a party and larger one for a luncheon entree. Peggy
Ingredients
1/4 cup plus 2 Tablespoons olive oil
1/4 pound shallots, thinly sliced, divided
1/4 pound bacon, coarsely chopped
1-1/2 pounds boneless, skinless chicken breasts
One 10-ounce package frozen chopped spinach, thawed  squeezed dry 
6 Tablespoons heavy cream
1-1/3 cups fresh bread crumbs, divided
1-1/2 teaspoons freshly ground black pepper
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
In a large saucepan, heat 2 tablespoons olive oil. Add the sliced
shallots and cook over moderate heat until light golden, 5 to 7 minutes.
Set aside.
Place bacon in food processor and pulse until finely chopped. Transfer
bacon to a large bowl. Add chicken (in 2 batches) to the food processor
and pulse until minced. Add to the bowl with the bacon. Next add thawed
spinach, heavy cream, 1/3 cup bread crumbs, cooked shallots, 1 teaspoon
black pepper, salt and cayenne. Mix to thoroughly blend the ingredients.
Form 1/4 cup if mixture into little round cakes. (May freeze at this
point for future use.)
Preheat oven to 400 degrees. In a shallow bowl, mix 1 cup bread crumbs
with the remaining 1/2 teaspoon black pepper. Coat the cakes with the
bread crumbs.
Heat 2 tablespoons olive oil in a large skillet over moderately high
heat. Add 8 of the cakes and fry, turning once until browned, about 3
minutes per side. Transfer to a baking sheet. Repeat with remaining
chicken cakes. Bake the cakes for about 10 to 12 minutes until firm and
done. Serve warm.
Serves: 12

Huerta Verde's Famous Beer Batter
This batter can be used for fish and shrimp tacos, fried fish or shrimp,
chile rellenos, and veggies or cheese fried and served as an appetizer.
Ingredients
1 can of beer
1 cup (plus) flour
1/2 garlic glove or pinch garlic powder
3 eggs
1 teaspoon salt
1 teaspoon pepper
1 pinch dry mustard or teaspoon of plain mustard
1 teaspoon maggi (this seasoning is very important)
1 pinch oregano
Mix all together in a large bowl and whip ingredients so they are well
blended. Dip shrimp, fish or whatever in batter and then deep fat fry or
pan fry to a golden light brown. This batter can stored in the
refrigerator for 2 days if it is sealed in a jar or plastic container
with a tight lid.
Prepare exactly as above and you can't go wrong.

Guava Whip Icebox Cake
Ingredients:
1 package lady fingers or 1 pound cake
1 small package lemon Jello gelatin
1 cup boiling water
One 6-ounce can frozen guava nectar (makes 1 cup)
1 egg white
1 cup whipping cream
grated coconut or cinnamon for topping
Lightly oil a standard Pyrex (glass) loaf pan and decorate sides and
bottom with split lady fingers or pound cake. Dissolve gelatin in
boiling water. Add cold water to 6 ounces of guava to make 1 cup.
Combine with gelatin and mix thoroughly. Chill until stiff. Beat egg
white until stiff, but not dry. Whip chilled guava until light pink and
fluffy. Fold guava with egg carefully. Spoon into pan. Chill in
refrigerator 4 to 6 hours. Unmold. Top with whipping cream and sprinkle
with coconut or cinnamon.

Lemon Lush
Ingredients
1 cup flour
1 stick butter
1/2 cup chopped nuts (plus more for garnish)
2 teaspoons flavorings (1 each lemon and orange extract)
8 ounces cream cheese, softened
1 cup Cool Whip dessert topping (plus more for garnish)
1 cup powdered sugar
1 teaspoon lemon peel
One 3.5-ounce package lemon instant pudding
1 teaspoon orange peel 
Crust: In small bowl, mix butter, flour, flavorings, and nuts. Press
into 9 x 13-inch pan and bake at 350 degrees for 15 minutes. Let cool.
When crust cools, then mix and spread each layer separately. 
1st Layer: Beat cream cheese, dessert topping, powdered sugar, and lemon
peel until smooth and creamy.
2nd Layer: Prepare pudding per package directions; add the orange peel.
3rd Layer: Spread desert topping over top; garnish with nuts.
Variations: You may use any type of pudding, just match the flavors to
blend. For instance, I use pistachio pudding and creme de menthe, both
green and white. Use strawberry with a strawberry liqueur or creme de
cacao...let your imagination fly!

Anytime Pudding Dessert
This is so easy to make ... and everyone will want the recipe.
Ingredients
1 stick (1/2 cup) butter or margarine
1 cup flour
Dash of salt
2 small boxes of your favorite pudding (either instant or cook and
serve)
3-1/2 cups milk
One 8-ounce block of cream cheese
1 cup powdered sugar
Small container frozen whipped topping (thawed)
Place stick of butter in a medium mixing bowl. Cream cheese in large
mixing bowl. Let each come to room temperature (about 30 minutes). Note:
if you are using pudding that needs to be cooked, this is a good time to
prepare it. Prepare (using the 3-1/2 cups milk) and then chill.
Lightly grease a 9 x 12-inch baking pan. Preheat oven to 350 degrees. To
the mixing bowl with butter, add flour and salt. Mix with pasty blender
until crumbly. (Add a little more flour if not crumbly like meal.)
Sprinkle into the baking pan, then press into place to make the crust.
Bake for about 10 minutes. Remove and set aside to cool.
In the large mixing bowl with cream cheese, add the powdered sugar and
mix until blended, then stir in 1/2 of the container of the whipped
topping.
Now is the time to prepare the pudding if you are using instant. Prepare
using the 3-1/2 cups milk.
Spread the cream cheese mixture over the crust, then the pudding. Finish
with a layer of the whipped topping. Refrigerate until very well chilled
(about 4 hours) before serving.

Almond Fudge Topped Shortbread

2 sticks butter, softened

1/2 cup powdered sugar

1/4 teaspoon salt

1 1/4 cups all-purpose flour

2 cups semi-sweet chocolate chips

1 (14 ounce) can sweetened condensed milk, not evaporated milk

1/2 teaspoon almond extract

1/2 cup sliced almonds, toasted

Preheat oven to 350 degrees. Grease 9x13 inch baking pan. In bowl, combine 
butter,

powdered sugar and salt. Beat with mixer until fluffy. Add flour, stir until 
well

blended. With floured hands, press evenly into prepared pan. Bake for 20 
minutes,

or until lightly browned. Shortly before end of baking time, melt chocolate 
chips

with sweetened condensed milk in heavy saucepan over low heat, stirring 
constantly

until chips are melted. Remove from heat. Stir in almond extract. Spread evenly 
over

baked shortbread. Sprinkle with almonds, press down firmly. Cool. Refrigerate 
for

3 hours, or until firm. Cut into bars. Store covered at room temperature. 24 to 
36

bars.

Palm Court Cake
Ingredients:
2 cups sugar
2 cups flour
2 teaspoons baking soda
2 eggs
One 20-ounce can crushed pineapple
1/2 cup chopped pecans
4 ounces sultanas
1 cup coconut
Amaretto Syrup: 
1-1/2 cups sugar
1-1/2 cups water
1/2 vanilla bean (split and scrape the seeds into the liquid)
Preheat oven to 325 degrees. Line the bottom of a 9 x 12 x 2-inch pan
with parchment paper (or butter and flour the pan). Combine sugar, flour
and baking soda. Add eggs, pineapple, pecans, sultanas, and coconut. Mix
until blended and pour into prepared pan. Bake for 50 minutes.
Amaretto Syrup: Place ingredients in heavy duty saucepan and place over
low heat until the sugar is dissolved. Bring to a boil and continue to
boil for 3 to 4 minutes. Remove from heat and add two Tablespoons of
Amaretto. (You may substitute 1 Tablespoon of almonds extract.)
To Serve: Cut the warm cake into desired size pieces, place on a dessert
plate, and spoon the warm Amaretto syrup over the cake. Top with a slab
of vanilla ice cream and ENJOY!!

Pork Confit with Onion Marmalade
Ingredients:
1/2 head green cabbage
Pork loin roast or pork roast tenderloin
Marmalade:
2 medium onions, thinly sliced 
olive oil 
1/4 cup sherry 
1/4 cup diced dried dates 
1 medium apple, peeled and diced 
Thinly slice 1/2 head green cabbage. Blanch in boiling water 2 minutes,
drain and reserve. Saute onion in olive oil until soft. Add vinegar,
sherry, dates, and apples, cook until fruit is soft. Add chicken stock
if necessary to obtain desired consistency.
Cook a pork loin roast (3 pounds at 325 degrees for 1-1/2 to 2 hours),
or pan saute sliced pork tenderloin.
Cook reserved cabbage slices in a little olive oil until soft but
crunchy. Plate up - Mound cabbage on plate, fan pork slices over and top
with marmalade. Sprinkle parsley on top or a sprig of fresh sage for
garnish.
Serves:  4

Glazed Pork Loin with Garlic Potatoes
Ingredients:
1 pork loin, about 5 pounds
Salt
Freshly ground pepper
18 small new potatoes
3 Tablespoons red currant jelly
2 teaspoons minced fresh rosemary (or 3/4 teaspoon dried)
3/4 cup dry white wine
2 to 3 teaspoons Dijon mustard
1 clove garlic, minced
Preheat oven to 325 degrees. Sprinkle pork loin with salt and pepper and
place on rack in shallow roasting pan. Bake in the center of the oven
for 2 to 2-1/2 hours (about 25 to 30 minutes per pound) or until meat
thermometer reads 165 degrees.
Bring a large saucepan of lightly salted water to a boil. If potatoes
are small, leave them whole; otherwise, cut in half. Cook in boiling
water until almost tender, about 10 minutes, and drain in colander. When
roast has cooked for about an hour, add potatoes to roasting pan,
turning them in the juices to coat well. Turn potatoes occasionally so
they brown evenly.
In a small saucepan, combine jelly, rosemary, and 2 tablespoons of wine
and warm over low heat until the jelly melts. Stir in mustard. About 1/2
hour before pork is done cooking, brush with the glaze. Brush with glaze
about every 10 minutes.
About 10 minutes before the roast is done, sprinkle garlic over
potatoes. When meat has reached an internal temperature of 165 degrees,
remove meat to a cutting board, cover lightly with foil, and let rest 15
minutes. Remove potatoes from pan and keep warm.
Skim fat from juices in pan. Stir in remaining wine and boil sauce on
top of stove for 2 to 3 minutes. Carve meat and arrange slices on
serving platter. Surround with potatoes and garnish with sprigs of
rosemary. Turn sauce into sauce boat and pass with the pork.

FUDGY FUDGE BROWNIES
A chocolate lovers delight!
Brownies:
1 1/4 c. flour
1/4 c. cocoa
1 tsp. baking powder
1/2 tsp. salt
3 eggs
2 c.
sugar
3/4 c. butter, melted
1 tsp. vanilla
1 c. chopped walnuts (optional)
Stir together flour, cocoa, baking powder, salt and walnuts. Mix well. Set 
aside.
In large bowl, combine eggs, sugar, butter and vanilla. Beat with wooden spoon 
until
smooth. Stir in dry ingredients; mix well. Spread batter evenly in 13 X 9 inch 
pan.
Bake in 350ºF oven for about 25 minutes. Do not over bake. Brownies are ready 
when
edges are just set and center is still soft.
Cool on wire rack.
Vanilla Icing:
1/3 c. butter
2 c. icing sugar
2 tbsp. milk
1/4 tsp. vanilla
Beat ingredients together. Spread on top of brownies. Cut into squares.
*TIP* Drizzle melted semi-sweet chocolate over frosted brownies for a more 
decorative
effect!

[RecipesAndMore] My Supper Tonight: QUICK AND EASY STROGANOFF AND NOODLES

QUICK AND EASY STROGANOFF AND NOODLES

Ingredients:

. 1 pound lean thin steak, cut in strips
. 1 medium onion, sliced
. 1 clove garlic, minced
. 1 can (10 3/4 ounces) cream of mushroom soup
. 1 cup sour cream
. 2 tablespoons ketchup
. 2 teaspoons Worcestershire sauce
. 1 can (4 ounces) mushrooms, undrained
. 6 ounces noodles, cooked and drained
. 1 tablespoon butter

Preparation:
In a skillet in a small amount of oil, brown meat. Add onion and garlic and
cook just until tender. Combine soup, sour cream, ketchup, Worcestershire
sauce,
and mushrooms with liquid; stir to blend. Pour over the meat and heat
through. Toss noodles with the butter. Serve in separate serving bowls or
chafing
 dishes. Serves 4.

Well, we're home.  Frank had a cancerous tumor removed from his bladder.  He 
has a type of cancer that seems to come back over and over.  We don't know if 
he will have to have chemo or radiation until next week, after we see his 
surgeon and they get the reports back.  

He did well during the surgery and still has a good outlook on things.

Call to Another Church
A pastor places his order at the pet store. I need at least 50 mice, 
2,000
ants and as many of
those little silverfish you can get
The clerk replies, We can probably do that, but it might take some time.
Mind if I ask why you are
placing such an unusual order?
The pastor replies, I've accepted a call to another church and the 
pastor's
council told me to
leave the parsonage the way I found it.

Farewell Offering
During the last Sunday service that the visiting pastor was to spend at 
the
church he served for
some months, his hat was passed around for a goodwill offering.
When it returned to the pastor, it was empty. The pastor didn't flinch. He
raised the hat to Heaven
and said, I thank You, Lord, that I got my hat back
from this congregation.

Hot Air Hand Dryers
My pastor friend
put sanitary hot air hand dryers in the rest rooms at his
church and after two
weeks, took them out.
I asked him why and he confessed that they worked fine, but when he went 
in
there he saw a sign that

I will continue to pray for Frank,, that's goods that he has high  spirits. I 
just wish someone with all them brains would find someway to kill the  Cancer 
cells. I have lost so many family members and friends from it.  I am  scared 
for my children cause its on both sides of our families. so glad that  Frank 
is home and doing good.

  He did well during the surgery and still has a good outlook on things.

Short Ribs  Lima Beams
Ingredients
1-1/2 lb.  beef short ribs, cut into serving pieces
1 tsp. salt
1/4 tsp.   each pepper, paprika
1-1/2 tbsp.  shortening
1    small onion, thinly sliced
1/4 cup   brown sugar
1/2 tsp.   dry mustard
1-1/2 tsp.    flour
1 tbsp.   each vinegar, lemon juice
1/8 tsp.   each grated lemon zest, thyme
1/4 cup   water
2 cups   dried limas, cooked and drained
Directions
   Heat oven to 400° F. (200º C).  Sprinkle ribs
with salt, pepper and paprika.  Brown ribs in shortening.  Remove
ribs to a 1-1/2 qt. baking dish.  Sauté onion in drippings until
golden brown.  Drain and add to dish.  In a saucepan combine brown
sugar, mustard and flour.  Stir until blended.  Add vinegar, lemon
juice, rind, thyme and water.  Stir.  Bring to a boil, stirring
constantly until slightly thickened.  Pour over ribs.  Bake
uncovered for 1 hour until meat is almost tender.  Stir in beans. 
Cover and bake 25 more minutes.  Makes 4-6 servings.

Green Chili-Stuffed Chicken Breasts
Ingredients:
With the cheese mixture in the center, these chicken breasts come out
tender and moist.
4    boneless, skinned chicken breast
halves, pounded thin
3 oz. cream cheese
3/4 cups shredded cheddar or Monterey Jack cheese
4 oz. green chilis
1/2 tsp.   chili powder
to taste   salt and pepper
1 can cream of mushroom soup
1/2 cup   hot enchilada sauce
Directions:
   Combine cream cheese, shredded cheese, chilis, chili
powder and salt and pepper.
Place a generous dollop on each flattened chicken breast, and then roll
up.  Place chicken rolls in the slow cooker or crockpot, seam-side
down.  Top chicken breast rolls with remaining cheese mixture, soup,
and enchilada sauce.  Cover and cook on Low for 6 - 7 hours.  Makes
4 servomgs.

Cranberry Pork Chops
Ingredients:
6    pork chops
2 cups   fresh or frozen cranberries
3/4 cup   white sugar
1 tsp. salt
1/4 tsp.   ground black pepper
enough  water as needed
Directions:
   In a skillet, brown chops slowly in oil; drain. 
Add cranberries, sugar, salt and pepper to chops with 1/2 cup water to
start.  Bring to boil; reduce heat.  Simmer, covered, about 45
minutes or until tender but not dry.  Add water if necessary to keep
chops from drying out.

Quick Chicken Stew
Ingredients:
2 lb.  skinless chicken breasts cut in 1 inch cubes
2 cans   fat-free chicken broth
3 cups   potatoes; peeled and cubed
1 cup onion chopped
1 cup celery; sliced;
1 cup carrots; slice thin
1 tsp. paprika
1/2 tsp.   each pepper
1/2 tsp.   sage
1/2 tsp.   thyme
6 oz. no-salt added tomato paste
1/4 cup   cold water
3 tbsp.  cornstarch
Directions
   In crockpot, combine first 11 ingredients; cover and
cook on High 4 hours or Low for 8 hours.  A half hour before serving,
mix water and cornstarch until smooth; stir into stew.  Cook, covered,
30 minutes more on High or until vegetables are tender.

Beef Tenderloin With Roasted Shallots
Ingredients:
3/4 lb.    shallots, halved lengthwise and peeled
1-1/2 tbsp.  olive oil
to taste   salt and pepper
3 cups   beef broth
3/4 cup   port wine
1-1/2 tsp.    tomato paste
2 lb.  beef tenderloin roast, trimmed
1 tsp. dried thyme
3 slices   bacon, diced
3 tbsp.  butter or margarine
1 tbsp.   all-purpose flour
4 sprigs   watercress, for garnish
Directions:
   Heat oven to 375º F (190º C).  In 9 pie pan,
toss shallots with oil to coat.  Season with salt and pepper.  Roast
until shallots are deep brown and very tender, stirring occasionally,
about 30 minutes.  In a large saucepan, combine beef broth and
port.  Bring to a boil.  Cook over high heat until reduced to half
of volume, about 30 minutes.  Whisk in tomato paste.  Set aside. 
Pat beef dry; sprinkle with thyme, salt and pepper.  In a large
roasting pan, set over medium heat on the stovetop, sauté bacon until
golden.  Using a slotted spoon, transfer bacon to paper towels.  Add
beef to pan; brown on all sides over medium high heat, about 7
minutes.  Transfer pan to oven.  Roast beef until meat thermometer
inserted into center registers 125º F (50º C) for medium rare, about
25 minutes.  Transfer beef to platter.  Tent loosely with foil. 
Spoon fat off top of pan drippings in roasting pan.  Place pan over
high heat on stovetop.  Add broth mixture, and bring to boil; stir to
scrape up any browned bits.  Transfer to a medium saucepan, and bring
to simmer.  Mix 1-1/2 tbsp. butter and flour in small bowl to form
smooth paste; whisk into broth mixture, and simmer until sauce
thickens.  Whisk in remaining butter.  Stir in roasted shallots and
reserved bacon.  Season with salt and pepper.  Cut beef into 1/2
thick slices.  Spoon some sauce over, and garnish with watercress.

The Best Pineapple Cheesecake
Graham Cracker Crust:
Ingredients
enough    butter-flavored cooking spray
14  double graham cracker cookies, finely
crushed (1 cup)
2 tbsp.    butter or margarine, melted
Pineapple Cheesecake:
1/2 cup   non-fat buttermilk
1 slice   white bread
1/3 cup   part-skim ricotta cheese
1    large egg
2 tbsp.  natural vanilla
6 packets    Splenda®
1/4 cup   water
1 can (12 oz.) crushed pineapple, packed in natural juice,
well drained
Directions
  Heat oven to 350° F. (175º C). 
Lightly coat a 9 pie pan with cooking spray.  In a medium bowl,
thoroughly mix graham cracker crumbs and melted butter.  Press into
prepared pan.  Bake for 15 minutes, until lightly browned. (Since
ovens vary in temperature, check after 12 minutes.  Do not allow it to
over-brown.)  Cool before filling.  Filling:  In a food processor
or blender, combine everything except pineapple.  Process until
smooth.  Fold in crushed pineapple.  Bake for 45 minutes, until
set.  Cool in refrigerator.  Makes 6 servings.
Note:  The filling can be baked without the crust.

Tiny Raspberry Cheesecake Tarts
Ingredients:
2 oz. bittersweet or semisweet chocolate, cut up
1/2 tsp.   shortening
1 pkg.    (2.1 oz.) baked miniature phyllo dough shells (fifteen
1-1/2 shells)
1 pkg.    (3 oz.) cream cheese, softened
2 tbsp.  each dairy sour cream, confectioners' sugar
2 tsp.    raspberry liqueur or milk
optional   15 fresh raspberries, fresh mint leaves
Directions:
   In a small saucepan, stir cut-up chocolate and
shortening over low heat until melted.  Remove pan from heat.  Using
a clean small paintbrush, brush inside (bottom and sides) of each phyllo
shell evenly with melted chocolate mixture.  Return each shell to
plastic tray included in pkg.  Chill phyllo shells in refrigerator
about 20 minutes or until chocolate is set.  Meanwhile, in a small
bowl, stir cream cheese, sour cream, and confectioners' sugar until
smooth.  Stir in liqueur or milk.  Transfer mixture to a small
resealable plastic bag; seal bag.  Snip off a corner of bag.  Pipe
about 1 tsp. of cream cheese mixture into each shell.  Cover tarts
loosely; chill 2 - 4 hours.  If desired, garnish each tart with a
fresh raspberry and mint leaves.  Makes 15.

Ingredients
2 pkg.    (11 oz.) Butterscotch chips
1 bag (16 oz.) chow mein noodles (optional)
Optional Ingredients
1/4 cup   creamy peanut butter
3-1/2 cups  mini marshmallows
Directions:
   Microwave butterscotch chips in large microwave safe
bowl on medium heat (70% power) for 1 minute.  Stir until smooth. 
Add additional time of 10 - 20 second intervals stirring until smooth
after each interval.  Once butterscotch chips are completely melted
smooth.  If you want to add peanut butte or mini marshmallows do that
now and stir to melt peanut butter and coat marshmallows.  Quickly add
chow mein noodles and stir to coat.  Mixture will start to harden
quickly so work fast! 
Drop rounded spoonfuls onto waxed paper lined (or buttered) cookie
sheet.  Chill until cool and set.  Makes about 6 dozen

Peppermint Meringues
Ingredients:
2    egg whites
1/8 tsp.   each salt, cream of tartar
1/2 cup   white sugar
2    peppermint candy canes, crushed
Directions:
   Heat oven to 225º F (110º C).  Line 2 cookie
sheets with foil.  In a large glass or metal mixing bowl, beat egg
whites, salt, and cream of tartar to soft peaks.  Gradually add sugar,
continuing to beat until whites form stiff peaks.  Drop by spoonfuls
1 apart on prepared cookie sheets.  Sprinkle crushed peppermint candy
over cookies. 
Bake for 1-1/2 hours,  Meringues should be completely dry on
inside.  Do not allow them to brown.  Turn off oven.  Keep oven
door ajar, and let meringues sit in oven until completely cool. 
Loosen from foil with metal spatula.  Store loosely covered in cool
dry place for up to 2 months.

One Pan Magic Cookie Bars
Ingredients
1/2 cup   butter or margarine
1-1/2 cups   graham cracker crumbs
1 can Eagle Brand® Sweetened Condensed Milk (not
evaporated)
1 pkg.    (6 oz. ) semi -sweet chocolate chips
1 can (3-1/2 oz.) flaked coconut
1 cup chopped nuts
Directions
   Heat oven to 350º F. (175º C).  In 13x9 baking
dish melt butter.  Remove from heat.  Sprinkle crumbs over
butter.  Pour sweetened condensed milk evenly over crumbs.  Top with
chocolate chips, coconut and nut pieces and press down gently.  Bake
at 350º F. for 25 minutes or until golden brown.  Cool, Cut into
squares and enjoy!
