Crockpot Pork Chops with Mushroom Sauce

(From The Best Of Electric Crockery Cooking) 
8 to 10 small, thick porkchops 
2 tsp salt 
1/4 tsp pepper 
1/8 tsp sage 
1 can (12 oz) cream of mushroom soup 
1 Tbsp dried onion flakes 
Trim the excess fat from the chops and use it to grease a large skillet.
Over high heat, brown each chop lightly on both sides.  Salt and pepper
each as it finishes and place it in the crockpot.  Add the sage.  Turn
the soup (undiluted) and the onion flakes into the still hot skillet.
Scrape the pan juices and turn them into the cooker.  Cover and cook on
Low for 8 to 10 hours. 
Makes 6 to 8 servings.

8 1 inch thick pork blade chops or sirloin chops 
salt and freshly ground pepper 
All purpose flour 
1 tablespoon unsalted butter 
2 tablespoons vegetable oil 
3 large onions, thinly sliced 
3 large garlic cloves, minced 
1 cup (about) Guinness stout or other dark beer 
1 cup (about) chicken stock 
1 tablespoon (or more) coarse-grained mustard 
1 tablespoon chopped fresh parsley 
1 1/2 teaspoons (or more) balsamic vinegar 
Season pork with salt and pepper.  Dredge in flour, shake off excess.
Melt butter with 1 tablespoon oil in heavy large deep skillet over
medium-high heat.  Add pork in batches and brown well, about 6 minutes
per side.  Transfer pork to plate.  Set aside. 
Dredge onions in flour; shake off excess.  Heat remaining 1 tablespoon
oil in same skillet over medium heat.  Add onions and garlic.  Season
with salt.  Cover and cook 5 minutes, stirring once.  Uncover and cook 4
more minutes, stirring occasionally.  Add 1/4 cup stout and 3/4 cup
stock and bring to a boil, scraping up any browned bits.  Return pork to
skillet.  Spoon some of onions over pork.  Add enough additional stout
and stock to bring liquid halfway up sides of pork.  Cover skillet with
foil, then lid.  Reduce heat and simmer 20 minutes.  Turn pork over and
cook until very tender, about 25 more minutes.  Transfer pork and onions
to platter using slotted spoon. 
Degrease pan juices.  Boil juices until thickend slightly, about 10
minutes.  Whisk in 1 tablespoon mustard.  Add chopped parsley and 1 1/2
teaspoons balsamic vinegar.  Taste, adding more mustard or vinegar if
desired.  Pour gravy over pork.  Garnish with parsley and serve.

1 Reynold's Oven cooking bag, large size 
2 tbsp flour 
1 cup thick and chunky salsa 
2 tbsp lime juice 
3/4 tsp chili powder 
1/2 tsp garlic powder 
4 pork chops, 1/2 inch thick, fat trimmed 
1 can (16 oz.) light red kidney beans, drained 
2 med. green, yellow, orange, or red sweet peppers, cut into cubes 
Preheat oven to 350 degrees F.  Shake flour in cooking bag;
place in 13x9x2-inch baking pan.  Add salsa, lime juice, chili powder
and garlic powder to bag.  Squeeze bag to blend ingredients.  Place pork
chops in bag.  Spoon bans and peppers around pork chops.  Close bag with
nylon tie; cut 6 half-inch slits in top.  Bake until pork chops are
tender, 35 to 40 minutes.  Let stand in bag 5 minutes.  Makes 4
servings.

OVEN BAKED PORK CHOPS
 
1 egg, beaten 2 Tbs soy sauce 
1 Tbs dry sherry or water ground ginger and garlic powder 
4 lean pork chops dry breadcrumbs to coat 
Beat together egg, soy sauce and sherry, with ginger and garlic powder
to taste. Dip chops in egg mixture; coat evenly with breadcrumbs.
Arrange single layer in baking sprayed with non-stick vegetable oil.
Bake in mod. oven 30 mins,turn, and bake until tender, about 20 mins.

Here are two variants on grilled pork chops that I have tried in the
past couple weeks.  
Grilled pork chops with Blue Cheese 
Thick lean pork chops (or pork steaks) 
A-1 Sauce 
Kitchen Bouquet 
Garlic powder (opt.) 
Crumbled Blue Cheese 
Healthy Choice Blue Cheese Salad Dressing (or equiv.) 
Coat chops with Kitchen Bouquet and A-1 sauce and sprinkle with garlic
powder if desired.  Allow to marinate for 30 min. or so while getting
the barbie going.  Grill chops over medium heat about 10 min. per side.
Time will depend on thickness of chops.  During last 5 min. sprinkle
crumpled blue cheese over chops and then cover with the blue cheese
dressing.  Cover grill and allow the cheese to melt.  Enjoy with good
friends and a bottle of good cab. 
Grilled Pork Chops Dijonaise 
Thick lean pork chops (or pork steaks) 
Garlic powder 
White pepper 
Kitchen Bouquet 
Dijonaise (Dijon mustard sauce from Heilmanns) 
Coat chops all over with Kitchen Bouquet and sprinkle with garlic powder
and white pepper to taste (optional).  Coat one side of chops with
Dijonaise and allow to marinate for 30 min. while getting the grill up
to temp.  Grill chops over medium heat until done ~10min./side. Serve
with additional Dijonaise and a nice bottle of chard.

Brad Paisley ranks first among listeners' favorite country artists in a 
newly-released survey undertaken by the Country Radio Broadcasters Inc. and 
Edison
Research. More than 13,000 listeners, who cited a country station as their 
primary station, took part in the poll. Paisley earned a 4.5 on a scale of 1-5.
He was trailed by Brooks  Dunn and George Strait (4.4), as well as Trace 
Adkins, Kenny Chesney, Alan Jackson, Toby Keith and Tim McGraw (4.3). The most
popular emerging artists that survey participants first learned about in the 
last year or two were Taylor Swift, Lady Antebellum, Sugarland, Carrie 
Underwood
and the Zac Brown Band. All-time favorites named by survey respondents were

Idol's Grand Ole Opry week on Wednesday (March 18). Paisley will perform
his new single, Then, for the first time on national television. The single 
is from his forthcoming album, American Saturday Night. In addition, Travis
and Underwood will perform a duet of I Told You So, which Travis wrote. His 
version reached No. 1 on the country charts in 1988. Underwood's solo version
is her current single. A new studio duet version of I Told You So will be 
available digitally the next day. American Idol contestants will select and
perform songs popularized by Grand Ole Opry members on the episodes airing

Cherry Upside Down Cake From Scratch

Cherry upside down cake is made with cherry pie filling and a from scratch
cake batter.

Cook Time: 55 minutes
Ingredients:

. 1 can (20 ounces) cherry pie filling
. 1 1/2 cups all-purpose flour
. 2 teaspoons baking powder
. 1/2 teaspoon salt
. 1/4 cup butter
. 2 eggs
. 3/4 cup granulated sugar
. 1/2 teaspoon almond extract
. 1 teaspoon vanilla extract
. 1/2 cup plus 2 tablespoons milk


Preparation:
Heat oven to 350°.

Generously butter an 8-inch square baking pan. Spread the cherry pie filling
over the bottom. Sift together the flour, baking powder, and salt; set
aside.
In a mixing bowl, cream butter and sugar. Beat in eggs and flavorings. Beat
in the sifted dry ingredients, alternating with the milk. Beat until well
blended.


Spoon over the cherry pie filling; spread to cover.

Bake for 40 to 50 minutes, or until cake springs back when lightly touched
with finger.
Let cool for about 10 minutes. Loosen sides and carefully invert on a
serving plate or cake server.

Cherry Muffins

Use fresh or canned cherries in these tasty muffins.

Cook Time: 30 minutes
Ingredients:

 1/2 teaspoon salt
 1 tablespoon baking powder
 2 cups all-purpose flour
 1/4 cup sugar
 1 cup pitted fresh cherries or canned cherries, drained
 1 egg
 3/4 cup milk
 1/4 cup melted butter


Preparation:
Directions for cherry muffins
Sift together the flour, salt, baking powder and sugar; add cherries and
stir gently to blend. In a separate bowl, beat egg until thick and light in
color;
stir in the milk and melted butter. Quickly stir egg and milk mixture into
the dry mixture. Butter and flour 12 muffin cups. Pour batter into prepared
muffin tins. Bake cherry muffins at 375° for 25 to 30 minutes. Makes 12
cherry muffins.

Ham and Herb Scones
1 box biscuit mix 
3 tablespoons finely chopped rosemary 
1/2 cup cream** 
2-3 pinches salt 
3 pieces deli-sliced glazed smoked ham, chopped, about 1/8 pound 
1 tablespoon orange zest 
2 teaspoon sugar 
Preheat oven to 375º degrees. Mix together biscuit mix, rosemary,
cream, salt, ham and orange zest. 
Pile mixture into 4 large mounds or 8 small mounds onto a nonstick
cookie sheet. 
Sprinkle with a little sugar and bake. Bake scones for 10 to 12 minutes
for large scones, 7 to 8 minutes for small scones. 
**You might need slightly more cream if the mixture is dry.

Serves 6 
1 1/2 pounds small red or new potatoes, scrubbed, unpeeled and quartered 
2 tbsp olive oil 
2 tbsp minced fresh parsley 
1 tbsp chopped fresh oregano or 1 tsp dried oregano 
1/2 tsp paprika 
1/2 tsp garlic powder 
Fresh ground black pepper to taste 
Garnish: 
2 tbsp minced fresh parsley 
Preheat oven to 350 F. In a 2-quart casserole, toss potatoes in oil to
coat each piece. Add remaining ingredients, except parsley for garnish. 
Toss to coat evenly. Bake 30-40 minutes, or until lightly browned.
Garnish with parsley.

Greek Cheese Pastries (Tiropites)
8 oz (225 g) ricotta or cottage cheese 
8 oz (225 g) feta cheese, crumbled 
3 eggs, lightly beaten 
3 Tbs (45 ml) finely chopped fresh parsley 
Salt and freshly ground pepper to taste 
3/4 lb (340 g) phyllo dough (about 20 sheets) 
1/2 lb (225 g) butter, melted 
Mix together the cheeses, eggs, parsley, salt, and pepper. Cut the
phyllo sheets crosswise into 3 rectangles. Place a rectangle on a work
surface and gently brush with melted butter. Place 1 tablespoon (15 ml)
of the cheese mixture in one corner. Fold the rectangles in half
lengthwise to cover the cheese mixture. 
Fold the corner with the cheese mixture diagonally to make a point, and
continue folding and rolling the triangle until the entire piece of
dough is wrapped around the filling. Repeat with the remaining dough and
filling. (The tiropites may be frozen at this point and baked directly
from the freezer.) 
Place on a lightly greased baking sheet and brush with melted butter.
Bake in a preheated 425F (220C) oven until golden brown, 15 to 20
minutes. Serve warm or at room temperature. 
Makes about 60.

2 cups flour 
1 teaspoon baking powder 
1/2 teaspoon salt 
1/4 teaspoon baking soda 
2 cups golden brown sugar 
3/4 cup unsalted butter 
2 large eggs 
2 teaspoon vanilla 
1 cup coarsely chopped pecans 
1-1/2 pints fresh raspberries 
Preheat oven to 350°. Line 9x13x2 baking pan with aluminum foil,
extending foil over sides by 2 inches. Butter and flour foil. 
Combine flour, baking powder, salt and baking soda in a medium bowl; set
aside. In a large bowl, beat brown sugar and butter until light and
fluffy. Beat in eggs one at a time, them add vanilla. Add flour mixture
and beat until blended. 
Stir in chopped pecans. Spread batter evenly over prepared pan. Sprinkle
raspberries over top. Bake 40-50 minutes or until top is golden and cake
tester comes out clean.

Baked Stuffed Shrimp
For stuffing 
1 cup chopped mushrooms (about 1/4 pound) 
3 tablespoons minced onion 
2 tablespoons minced celery ribs 
1 tablespoon minced garlic (about 3 cloves) 
3 tablespoons finely chopped fresh parsley leaves 
3 tablespoons unsalted butter 
1/2 pound scallops, chopped, or lump crabmeat, picked over 
1/2 cup chicken broth 
32 Ritz crackers (about two thirds of a 12-ounce package), crushed into
coarse crumbs 
18 jumbo shrimp (about 2 pounds), shelled, leaving tail and connecting
shell segment intact 
2 tablespoons unsalted butter 
1/4 teaspoon paprika 
Garnish: chopped fresh parsley leaves 
Accompaniment: lemon wedges 
Preheat oven to 375°F. and butter a large baking dish. 
Make stuffing: 
In a large heavy skillet cook mushrooms, onion, celery, garlic, and
parsley in butter over moderate heat, stirring occasionally, until
softened and liquid mushrooms give off is evaporated. 
Add scallops or crabmeat and cook over moderately high heat, stirring, 3
minutes. Stir in broth and cracker crumbs and remove skillet from heat. 
Butterfly shrimp by cutting lengthwise along inside curve, almost
completely through. Split open shrimp and devein. 
Mound about 2 tablespoons stuffing onto each shrimp, pressing gently,
and put shrimp, stuffed sides up, in baking dish. Melt butter and
drizzle over shrimp. Sprinkle shrimp with paprika and bake 20 minutes,
or until stuffing is golden. 
Garnish shrimp with parsley and serve with lemon wedges. 
Serves 6.

1 1/2 pounds grouper or other white fish fillets Cooking spray 
1 tablespoon fresh lime juice
1 tablespoon light mayonnaise
1/8 teaspoon onion powder
1/8 teaspoon black pepper
1/2 cup fresh breadcrumbs

Preheat oven to 425°. 
Place fish in an 11 x 7-inch baking dish coated with cooking spray. 
Combine lime juice, mayonnaise, onion powder, and pepper in a small
bowl, and spread over fish. 
Sprinkle with breadcrumbs; drizzle with butter. 
Bake at 425° for 20 minutes or until fish flakes easily when tested
with a fork. 
Sprinkle with parsley.

RANCHO CORN CASSEROLE
   6 slices bacon, cut up
   1 jar (4 1/2 ounces) mushrooms
   2 tablespoons diced onion
   2 tablespoons diced green bell pepper
   2 cans (12 ounces each) corn
   Salt and pepper, to taste
   3/4 cup grated cheddar cheese
   In
 a skillet, fry bacon then drain. Add mushrooms, onion and green pepper; saute 
lightly.
Drain corn and add to skillet mixture. Add salt and pepper and heat thoroughly. 
Place
in casserole dish, sprinkle top with cheese. Bake in 325 degree oven until 
heated
through and cheese is melted (20-30 minutes).

   1 cup sugar
   1 cup creamy peanut butter

 corn chips in a greased 15-inch x 10-inch x 1-inch baking dish. In a saucepan 
over
medium heat, bring corn syrup and sugar to a boil. Remove from heat and add the 
peanut butter.  Stir well.  Pour over chips. Cool. Break into
pieces.

RETAILER'S CREAM OF MUSHROOM SOUP
   4 tablespoons butter
   1/4 cup onion, finely chopped
   1/2 pound fresh mushrooms, finely chopped
   1 tablespoon unbleached flour
   2 cups chicken broth
   1/2 cup heavy cream
   Salt and pepper, to taste
   Melt
 the butter in a pot and add the onion and mushrooms. Cook over low heat for 15 
minutes,
stirring occasionally. Sprinkle with the flour and cook for a few minutes more. 
Slowly
add the stock, and heat, stirring, until it reaches the boiling point. Reduce 
the
heat and simmer for 20 minutes. Stir in the cream and season to taste. Reheat 
before
serving. Cold mushroom soup: Use an additional 1/4 cup of heavy cream and chill.
Adjust the salt and serve in cold soup bowls with chives sprinkled on top.

Cheese Onion Pie

4 cups thinly sliced onions 
1 T. butter 
2 cups shredded Cheddar cheese 
3 eggs 
2/3 cup light cream 
1 t. salt 
1/4 t. pepper 
6 tomato slices 
1 deep dish 9 pie crust, unbaked 

Saute onions in butter until golden.
Spread alternate layers of onion  cheese in crust, ending with cheese.
Combine next 4 ingredients, beating lightly.
 Pour over cheese  onion filling.
Bake at 400 for
25 minutes. Place tomato slices on top  bake for 5 more minutes.
 Serves 6

BERN'S CHOCOLATE CAKE
MIX TOGETHER:
1 package of devil's food cake mix
4 eggs
8oz. sour cream
1/2 cup vegetable oil
1 cup of warm water
12 oz. chocolate chips
1 large box of chocolate instant pudding
1. Mix all of the ingredients together, except the chocolate chip, until
smooth.
2. Fold in the chips until well incorporated.
3. Spray a Bundt pan with cooking spray made for baking.
4. Pour batter into pan and bake in a 350F degree oven for 50-55
minutes.
5. Ovens vary so begin checking after 45 minuets by inserting a
toothpick.
6. Cool on wire rack about 20 minutes. Invert onto a plate and let cool.  Enjoy.

Any flavor regular cake mix
8 ounce carton desert topping (such as Cool Whip), I use the house brand
1 egg
Blend together with spatula till all is smooth.  I tried using a mixer
but the recipe became very gummy and difficult to work with.
Drop by spoonful on cookie sheets sprayed with cooking spray.
Bake at 350F 17-20 minutes for chewy cookies
Bake at 350F 20-23 minutes for crisp cookies
Variations:
Chocolate cake mix, chocolate chips
French vanilla cake mix, toasted coconut
Lemon cake mix, poppy seeds
Spice cake mix, coarsely chopped dried fruit
CAKE MIX COOKIES - CHOCOLATE CHIP/PEANUT BUTTER
1 WHITE CAKE MIX
1/2 CUP PEANUT BUTTER
1/2 CUP SHORTENING
2 EGGS
2/3 CUP CHOCOLATE CHIPS
1/2 CUP SUGAR, SET ASIDE
PUT HALF THE CAKE MIX IN A BOWL, ADD PEANUT BUTTER, SHORTENING AND EGGS,
BEAT ON LOW 1 MINUTE THEN MEDIUM 2 MINUTES, ADD REST OF CAKE MIX AND
CHOCOLATE CHIPS AND STIR.  MAKE INTO 1 INCH BALLS, ROLL IN SUGAR AND
BAKE AT 375F FOR ABOUT 10-12 MINUTES UNTIL STARTING TO BROWN.  Enjoy.

INGREDIENTS:
1 1/2 pounds (4 to 5 medium) potatoes, peeled  diced
1/2 teaspoon salt
3 tablespoons butter or margarine
2 tablespoons flour
  salt and pepper
2 cups milk
2 hard-boiled eggs, peeled  sliced
2 tablespoons chopped onion
3 tablespoons dried bread crumbs

DIRECTIONS:
Place potatoes in large saucepan. Cover with cold water.
Add 1/2 teaspoon salt and bring to a boil. Reduce heat to
low and cook 20 to 25 minutes or until potatoes are tender.
drain; reserve. Melt 2 tablespoons butter in medium
saucepan. Add flour, salt, and pepper; cook until bubbly.
Add milk; stir well. Cook, stirring constantly, until
thickened. Combine potatoes, hard-boiled eggs, onion,
salt, and pepper in lightly greased 1 1/2 quart casserole.
Add white sauce; blend lightly with spatula. Melt remaining
1 tablespoon butter. Add bread crumbs; mix well. Sprinkle
buttered crumbs over casserole. Bake at 350 degrees for
30 minutes. Serve hot

YIELD: 4 servings

[RecipesAndMore] Vanilla Butter creams

Vanilla Butter creams
2 lbs. confectioners' sugar
1/4 lb. butter, softened
1 ( 8 oz. ) pkg. cream cheese, softened
1/2 tsp. vanilla extract
Chocolate chips, or chocolate wafers (for molded candy)
Cream butter and cheese, slowly add sugar and vanilla and mix well.
Pinch off small pieces and form into a round shape and refrigerate
overnight. Melt your chocolate carefully in a double boiler. Dip in
melted chocolate. Store in refrigerator but serve at room temperature.
