Easy Fudge

1 (12-ounce) package of baking chips—chocolate,  mint, butterscotch, white, 
or peanut butter
1 (16-ounce) tub of prepared  frosting
1/4 teaspoon salt
1/2 teaspoon extract of your choice
3/4 cup  nuts of your choice

1. Lightly butter an 8 x 8-inch baking pan or a  9-inch diameter pan. Set 
aside.
2.. Melt the baking chips in the microwave in  a medium bowl.
3. Stir in the frosting, salt, extract, and nuts until well  combined.
4. Scrape into the prepared pan and refrigerate for at least 1/2  hour or 
until firm. Cut it into squares to serve. 

Baker’s notes: Your  baking chips need to be of the finest quality. You may 
substitute wafers. Try  these suggested combinations: Chocolate Walnut 
Mint, Butterscotch Vanilla Pecan,  and Chocolate Macadamia Cream Cheese.

Macaroni Salad

2 cups uncooked elbow macaroni
3 hard  cooked  eggs, peeled and chopped
1 small onion, chopped
3 celery  ribs,  chopped
1 small red bell pepper, seeded and chopped
2 TB dill  pickle  relish
2 cups creamy Miracle Whip salad dressing
3 TB  prepared yellow  mustard
1/2 cup white sugar
2-1/4 tsp. white wine  vinegar
1/4 tsp.  salt
3/4 tsp. celery seed

Bring a pot of  water to a boil. Add  macaroni, and cook for about 8 
minutes. Drain, and  set aside to cool.

In  a large bowl, stir together the eggs, onions,  celery, red pepper, and  
relish.

In a small bowl, stir together the  salad dressing, mustard, white sugar, 
vinegar, salt and celery  seed.

Pour over the vegetables, and  stir in the macaroni until well  blended. 
Cover and chill for at least 1 hour  before  serving.

Hot Dog Macaroni Bake
Servings: 8

2 (14 oz) pkgs dry macaroni  and cheese
1 (1 lb) loaf processed cheese food, cubed
1 (16 oz) pkg hot  dogs, sliced
2 cups frozen green peas, thawed
1 onion, chopped
2 cans  tomato soup
1 can cream of celery soup
1/2 tsp garlic powder
Salt and  pepper, to taste

In a large saucepan, prepare the macaroni and cheese  according to 
instructions 
on package.  Preheat oven to 350  degrees.  Stir in the cubed cheese, hot 
dogs, 
peas, onion, tomato soup  and cream of celery soup.  Season with garlic 
powder, 
salt and  pepper.  Spread into a 13x9-inch baking dish, and cover loosely 
with  
aluminum foil.  Bake in preheated oven for 40 to 45  minutes.

  Some of you may be wondering what Judge Roy Moore has been doing since 
he was removed from the bench for refusing to remove the Ten Commandments 
from his courtroom wall. Please read the poem he wrote. It's below his 
picture.





  The following is a poem written by Judge Roy Moore from Alabama .. 
Judge Moore was sued by the ACLU for displaying the Ten Commandments in his 
courtroom foyer. He has been stripped of his judgeship and now they are 
trying to strip his right to practice law in Alabama ! The judge's poem sums 
it up quite well.

light and fluffy. Add more skim milk if too thick. Use as frosting on

Wishing everyone a very happy and joyous Easter.  Hope you are 
spending it with a good friend or family.  No mattter where you are 
hope your day is a great one.
Mike and I are having his two 80 plus aunts and an elderly uncle 
over.  I have barbecued ribs cooking in the crockpot, asparagus in a 
pot ready to be cooked, baked beans in a casserole in the microwave 
waiting to be heated, cabbage salad in the fridge and pineapple 
upsidedown cake with homemade whipped cream for dessert.  Not sure 
what the relatives are bringing if anything, but no big deal if they 
come empty-handed.  It is a time for sharing with others and that is 
what we are doing.  it is nice to have the house with enough space 
that we can have company over to enjoy a meal.  The aunts live alone 
and the uncle is in a nursing home so it's a treat for all of them to be here.
We are also blessed to have our retired guide dogs here until the 
20th.  Since they will be twelve-years-old this May and June it could 
be there last visit.
Tuesday my current guide dog goes to the vet for esxtensive x-rays of 
her elbow, back, shoulder and hips to see why she can't curve her 
back, put pressure on her right front leg and is having other 
physical problems.  If it is able to be helped with medication I'll 
go that route.  However it looks like it is more serious and she'll 
have to take an early retirement.  Not sure what I'll do with her if 
that is the case, but will cross that road if and when it happens.
Anyway, we are just going to enjoy the day with the family and with 
our four-legged friends.  Hope you all will be doing the same.

Sugar-Free Brownies 
This recipe uses brown rice syrup instead of sugar. An added bonus to
using brown rice syrup is that it reduces the amount of calories in a
recipe. You can also substitute brown rice flour for the wheat flour. 
1/2 cup brown rice syrup 
2 Tbsp unsalted butter 
3 oz. unsweetened baking chocolate 
1 tsp vanilla 
2 eggs 
1/2 cup sifted all-purpose flour 
1/2 cup chopped pecans 
Preheat oven to 350°F (175°C). 
In a medium saucepan, melt butter and chocolate on low heat. Stir in
brown rice syrup. Remove from heat. Blend in eggs one at a time. Add
vanilla. Stir in flour and pecans. 
Spread in a greased 8x8-inch (20x20cm) baking pan. Bake for 30 minutes.
Cool and cut into squares.

2 c. flour 
1/4 c. granulated fructose 
1/4 c. granulated Splenda 
1 tsp. baking soda 
dash salt 
3/4 c. margarine 
1 c. water 
1/3 c. unsweetened baking cocoa 
2 eggs 
1/2 c. buttermilk 
2 tsp. vanilla 
Combine the first 5 ingredients in a mixing bowl. In a saucepan over
medium heat, combine margarine, water and cocoa. Stirring constantly,
bring to a boil. Remove from heat. Pour chocolate mixture into flour
mixture. Beat until thoroughly blended. Add eggs, buttermilk and
vanilla; beat for 1 minute. 
In a greased and floured 15-in. x 10-in. jelly roll pan; spread batter
evenly on the bottom. Bake at 350-F for 25 minutes or until a toothpick
inserted near the center comes out clean. Cut into 50 brownies.

1/2 cup sour cream 
1 cup shredded peeled tart apple 
2 eggs 
1 tsp. maple flavoring 
1/2 tsp. vanilla extract 
2 cups all-purpose flour 
Artificial brown sugar sweetener equivalent to 1/3 cup brown sugar 
1/2 tsp. baking soda 
1/2 tsp. baking powder 
Preheat oven to 375° F and coat baking sheets with cooking spray.
In a mixing bowl, combine margarine, sour cream, apple, eggs, maple
flavoring, and vanilla. 
Combine flour, sweetener, baking soda, and baking powder; add to apple
mixture and mix well. 
Drop by heaping Tablespoonfuls onto baking sheets coated with nonstick
cooking spray. Bake at 375 degrees F. for 9-10 minutes or until lightly
browned. Cool on wire racks. Store in airtight container. Yield: 42
cookies. 
Nutritional Analysis: One cookie equals 44 calories, 51mg sodium, 11mg
cholesterol, 5gm carbohydrate, 1gm protein, 2gm fat. Diabetic Exchanges:

Sugar-Free Raisin Bars 
Yield 16 bars 
Exchange: 1 starch, 1/2 fat 
1 cup raisins 
1/2 cup water 
1/4 cup margarine 
1 tsp. ground cinnamon 
1/4 tsp. ground nutmeg 
1 cup all-purpose flour 
1 egg, slightly beaten 
3/4 cup unsweetened applesauce 
1 Tbsp. sugar substitute 
1 tsp. baking soda 
1/4 tsp. vanilla extract 
Preheat oven to 350° F and spray an 8 square baking dish with cooking
spray.
In a saucepan over medium heat cook raisins, water, margarine, cinnamon,
and nutmeg until margarine is melted; continue cooking for 3 minutes.
Add all remaining ingredients. Spread into prepared baking dish.
Bake for 25-30 minutes or until lightly browned.

tsp. vanilla  1/4 cup finely chopped nutsCombine ingredients in the
order given. Beat well. Drop by teaspoons onto  lightly oiled baking
sheets. Bake at 375 for 10 minutes.Makes 40 small cookies.

Fettuccine Primavera (Diabetic) 
Makes 2 (1 cup servings) 
Olive oil flavored cooking spray 
1/2 cup broccoli florets 
1/2 cup cauliflower florets 
2 tsp. minced garlic 
1/2 cup very thinly sliced zucchini 
1/2 cup very thinly sliced sweet red pepper 
1/2 cup fresh snow pea pods 
1/4 cup very thinly sliced carrot 
1/4 cup fat-free, reduced-sodium chicken broth 
2 tbsp. dry white wine 
4 oz. fettucine, uncooked 
2 tbsp. freshly shredded Romano cheese 
Coat a med. nonstick skillet with cooking spray; place over med.-high
heat until hot. Add broccoli, cauliflower, and garlic; saute 2 min. Add
zucchini and nest 3 ingredients; saute 2 min. or until crisp-tender. 
Combine broth and wine; add to vegetables in skillet. Cover, reduce
heat, and simmer 2 min. 
Cook pasta according to pkg. directions, omitting salt and fat; drain.
Add vegetable mixture and cheese to pasta., and toss. Serve immediately. 
Per serving: cal 265, pro 10.7g, fat 2.2g, carb 51.0g, fiber 4.9g, chol
2mg, sod 133mg

Makes 2 (1 cup) servings 
1/4 cup crumbled feta cheese 
1 tbsp. shredded fresh basil 
2 tsp. red wine vinegar 
Olive-oil flavored cooking spray 
2 tbsp. chopped onion 
1 1/2 tsp. minced garlic 
1 cup peeled, cubed eggplant 
1/2 cup peeled, seeded, and chopped tomato 
1/2 cup fat-free, reduced-sodium chicken broth 
1/4 cup no-salt added tomato sauce 
1/8 tsp. dried thyme 
1/8 tsp. salt 
1/8 tsp. pepper 
2 oz. thin mostaccioli, uncooked 
Combine first 3 ingredients; set aside. 
Coat a small nonstick skillet with cooking spray; place over med.-high
heat until hot. Add onion and garlic; saute 2 min. or until tender. Add
eggplant and next 6 ingredients; cook, uncovered, over med. heat, 10
min., stirring often. Remove from heat and keep warm. 
Cook pasta according to pkg. directions, omitting salt and fat; drain. 
Add eggplant mixture and cheese mixture to pasta, and toss. Serve warm.

stores were named A  P - the first supermarkets. 

2) Electric refrigerators were first sold to American housewives in
1916, at a cost of $900. 

3) Housewives were afraid they would blow up the stoves and themselves! 

4) In 1967 Wisconsin repealed its law forbidding the sale of yellow
margarine. Until then, margarine could only be sold with a separate
coloring 'pellet' in the plastic pouch of white (its natural color)
margarine, which had to be kneaded into the margarine by the consumer to
color it to look the same as butter. As in many other states, the dairy
industry was able to force the continuation of a special tax on
margarine. 

5) The researchers perfected a process to remove the caffeine from the
saltwater soaked coffee beans, and invented Sanka Coffee - a contraction
